CHILLI PANEER
I am back with a starter recipe this time . Hope u guys are enjoying recipes from my previous blogs . This recipe is for the vegetarians out there . I am sure you guys would love this dish .
Chilly panner is a perfect blend of spices , texture, and taste . It's a fusion of Indian and Chineese flavours . This recipe will leave you craving for more!
Serves - 2 nos
Cooking time - 20 minutes
Difficulty level - Moderate
INGREDIENTS
Panner - 200gm
Chili powder - 1 tsp
Pepper powder - 1/2 tsp
Garlic paste -3/4 tsp
Tomato sauce - 1 dessert spoon
Chilly sauce - 1/2 dessert spoon
Soya sauce -1 tsp
Salt to taste
Oil as required
METHOD OF PREPARATION
Marinate the paneer with chilly powder , pepper powder , garlic paste , tomato sauce , chilly sauce and soya sauce for 1hr.
Cook on a tawa with sprinkling of oil until its golden brown and slightly charred .
Saute onions and capsicum with soya sauce and tomato sauce and add to the paneer .
Lastly , garnish with sesame seeds and spring onions .
Enjoy as starter before any meal!

Ingredients required to make masala of panner:
Whole red chili - 3 Whole Coriander - 1 tbsp. Cumin - 1 tbsp.
Dhaba Style Paneer Masala Recipe in 12 easy steps:
To make Paneer Masala, first of all keep the paneer cut into medium/small pieces in a bowl.
Now add 2 spoons of curd, a little red chili, turmeric, coriander powder and salt and mix it well.
Let the paneer marinate with these spices for 15 to 20 minutes.
While it is my night, dry roast all the proof spices lightly in a pan and prepare the masala in the mixer grinder.
Now heat oil in a pan and lightly fry the paneer pieces in it and keep them aside.
After this add a little more oil as per the need in the pan and fry the big cardamom and small cardamom a little.
Now add ginger garlic paste, red chili powder, coriander powder and turmeric and fry it, now add tomato and onion and fry it.
Along with this, also add green chilies cut lengthwise.
Add some water to it and cook its poverty in medium femme.
After the poori is cooked, put paneer pieces in it and mix it.
Now add garam masala and prepared masala to this poori and mix well.
Add kasoori methi and garnish with green coriander and serve with roti, naan or paratha.

Prep time: 20 mins Cook time: 40 mins Number of servings: 4-5 persons Ingredients Spinach - 1 bunch Radish - 2 Red pumpkin - 150 gms Brinjal - 4 Sweet potato - 2 Potato - 2 Green chili - 4 Turmeric powder - ½ tsp Red chili powder - 1 tsp Cumin seeds - ½ tsp Fenugreek seeds - ¼ tsp Aniseeds - 5 Mustard seeds - ½ tsp Nigella seeds - ½ tsp Bay leaf - 1 Sugar - 1 tsp Mustard oil Ghee Salt Method 1. Wash and peel the vegetables. Cut into 2 inch sized pieces 2. Blanch the spinach leaves and keep them aside 3. Heat oil and fry the brinjals and keep it aside 4. Heat oil till smoking point and temper with the whole spices (cumin seeds, fenugreek seeds, aniseeds, mustard seeds, nigella seeds, bay leaf) 5. Add green chilies, turmeric powder and chili powder 6. Add all the vegetables except the spinach and saute them 7. Add salt, sprinkle some water, cover and cook 8. When the vegetables are almost done, add the fried brinjals and the blanched spinach leaves 9. Add sugar and ghee and cook everything together 10. Adjust seasoning and serve hot with phulkas. To Make Phulka Prep time: 20 mins Cook time: 20 mins Number of Servings: 4-5 persons Ingredients 2 cups - wheat flour Warm water for kneading Salt Method 1. Firstly in a mixing bowl, add the wheat flour, salt and mix it well 2. Add warm water gradually and knead it to get a soft dough or give good punches to the dough. 3. Cover the dough with a muslin cloth and rest it aside for about 15 minutes. 4. Once the dough is rested, knead it again 5. Divide the dough into small equal sized portions. Take each portion and make round balls out of it. 6. Use a rolling pin and board. Onto the board dust some wheat flour. Take a round portion of the dough and place it on the flour dusted area. 7. Start rolling out the dough until we get a round or circular disc like shaped roti. The size of the phulka should not be too thick or thin. 8. Heat the tawa/skillet. Place the roti on the tawa. 9. Cook the bottom side for few seconds on medium flame. 10. When slight air bubbles appear at the top flip the roti and cook the other side very well. 11. Lift the phulka roti with the help of pair of tongs, flip it and place the roti directly on the flame. The side which was cooked for few seconds should be facing the flame. 12. Once the roti is placed on the flame, it begins to puff up. Immediately take the roti on a plate. 13. Apply ghee/butter. Serve hot. FOR SUJI BALLS:
▢1 cup rava / suji / semolina, coarse
▢3 tsp oil
▢1 chili, finely chopped
▢1-inch ginger, finely chopped
▢2½ cup of water
▢½ tsp salt
▢¼ cup coconut, grated
FOR TEMPERING:
▢3 tsp oil
▢1 tsp mustard
▢½ tsp cumin/jeera
▢½ tsp urad dal
▢½ tsp chana dal
▢5 cashew / Kaju, halves
▢few curry leaves
▢1 dried red chili
▢¼ tsp turmeric
▢¼ tsp Kashmiri red chili powder
▢¼ tsp salt
▢2 tbsp coriander, finely chopped
▢2 tsp lemon juice
INSTRUCTIONS:
Heat 3tsp of oil in a heavy-bottomed pan, and saute one chili along with an inch of ginger.
Now add 2 1/2 cups of water into the pan
To this water add coconut, salt and mix well
When the water is boiling add semolina slowly into it and keep stirring to avoid any lumps
While it is done knead it into small balls and allow it to steam for about 10 minutes
Now make the tempering and add these steamed sooji balls to it and enjoy your healthy guilt-free snack.
SEMOLINA PANCAKES(SAVOURY):
INGREDIENTS:
For Breakfast Mix
▢1/2 cup semolina/rava/sooji
▢2 Green Chillies
▢1 tbsp Ginger
▢1 sprig of curry leaves
▢2 tbsp coriander leaves/cilantro
▢1/2 tsp Salt
▢2 1tbsp Cooking Oil
▢1/2 tsp Mustard Seeds
▢1/2 tsp Cumin Seeds
▢1 tsp Bengal gram /chana daal
▢1 tsp White Lentils
▢1/4 tsp Asafoetida / Hing powder
For Pancakes
▢100 gm Paneer or cottage cheese
▢1 cup milk
▢Salt to taste
▢1 green chili chopped
▢1/4 cup Onion chopped
▢1/3 cup oats instant oats
▢1/4 cup Tomatoes chopped
▢2 tbsp Cooking Oil
▢1 tsp baking powder
INSTRUCTIONS:
Heat oil on a pan and add mustard seeds, cumin seeds, hing, and the dals into the pan and roast them till golden brown.
To this add chilies and ginger
Throw in some curry leaves, cilantro and roast them till they turn dry
Now, add semolina to the pan and cook it until it turns aromatic
Take a bowl of oats and grind them
To this oats add panner semolina mix and grind until it turns into pancake batter
To this batter add the vegetables you want and cook like regular pancakes.
SHEERA:
INGREDIENTS:
1/2 cup Semolina (Sooji/Rava) fine
▢1/4 cup Ghee
▢1/3 cup sugar can be increased to 1/2 cup depending on taste
▢1/2 cup Milk
▢1 1/2 cup Water
▢1/8 tbsp Cardamom powder (Elaichi)
▢Saffron (Kesar) few strings
▢1/4 cup Mixed nuts chopped, divided (cashews, almonds, pistachios, raisins)
INSTRUCTIONS:
In a heavy-bottomed pot add milk, water, sugar and let it boil for a while
To this boiling mixture add the semolina and let it cook till it comes together
Remove the pan from the heat and add ghee and roasted nuts.
LADOO:
INGREDIENTS:
1 cup rava/suji/semolina/cream of wheat (fine variety)
¾ cup granulated sugar
8 to 10 green cardamoms (or ½ tsp ground cardamom powder)
5 tablespoons ghee/clarified butter (Or more if needed)
2 tablespoons chopped cashew nuts
2 tablespoon raisins
¼ cup to 1/3 cup milk
OPTIONAL:
¼ to 1/3 cup grated coconut (fresh, frozen, or even dry desiccated)
INSTRUCTIONS:
Roast semolina in a pan with ghee and cook until it turns aromatic and golden brown
Now grind this sooji along with sugar
To this ground, mixture add ghee, milk, roasted dry fruits and mix thoroughly
Grease your palms and make them into small ladoo shapes
Roll these ladoos in grated coconut until fully covered

INGREDIENTS:
4 Whole Wheat Brown Bread
1/2 cup Sooji (Semolina/ Rava)
1/2 cup Curd (Dahi / Yogurt)
1 Green Chilli, finely chopped
1/2 cup Onion, finely chopped
1/2 cup Green bell peppers, finely chopped
1 tablespoon Coriander (Dhania) Leaves, finely chopped
Salt and Pepper, to taste
Butter, or oil for cooking
INSTRUCTIONS:
To start making the Semolina French Toast Recipe, mix all the above ingredients besides bread and make a semi-thick batter.
Take a spoon full of the batter and flattened it on each slice of bread to coat well. Do this for only one side of each slice.
Heat a skillet with a teaspoon of butter or oil. Lay the pieces of bread slices delicately with the coated side facing the skillet.
Now coat the other side of the bread with the same batter.
Roast the toasts, until the bottom side, becomes crisp and lightly browned.
Flip and toast and cook until golden brown on either side.

Spices are the foundation of Indian cuisine. They can transform a bald dish into a tasty meal but, if not used properly, they can even ruin the whole dish. Some people are intimated by the thought of cooking Indian food because of the complexity of Indian spices and how they work. Keep the spices dry in order to sustain the flavor and color for a longer period of time.
Store the spices in an opaque container to avoid exposure to light as it can fade the color, affect the flavor of the spices, and make them age quicker.
Heat and light both have an adverse effect on the flavor of spice and let it lose its effectiveness fast hence, it is advisable to keep the spices away from it.
It is also highly advisable to keep checking the spices regularly as it can prevent the spices from getting rotten, and wastage of spices can be prevented to a great extent.
Some spices like Asafoetida have a strong and potent smell, and it can be infused in other spices so, these spices should be stored in separate containers.

Always store whole and freshly ground spices in separate containers
Dried fenugreek leaves and Asafoetida have a strong pungent smell, and so they must be kept in an airtight container.

Paneer Tikka | Paneer Tikka without oven Recipe
Ingredients
1 cup Hung curd
Red Chilli Powder
Turmeric powder
Coriander Powder
Ginger & Garlic Paste
Salt to taste
Ajwain
Lemon Juice
Mustard Oil
200 gms Paneer
1 Tomato Cubes
1 Onion cubes
1 Capsicum Cubes
Vegetable Oil
Skewers
Roti griller
Method:
For Marinating:
In a bowl add Hung curd 1 cup, Red chili powder 1tsp, Turmeric powder ¼ tsp, Coriander powder ½ tsp, Ginger & garlic paste 1tsp, Salt ½ tsp, Ajwain seeds ½ tsp, Lemon juice 1tsp, Mustard oil 1tsp.
Beat the mixture until all ingredients mix well with curd and there should not be any lumps.
Add Cottage cheese (Panner), Onion petals, Tomato petals, Capsicum petals into the bowl and mix well in marinate.
Leave the marinated cottage cheese for 30-45 mins.
Final Preparation:
Arrange capsicum, tomato, onion petals and paneer in an order on skewer.
Place a Roti griller on the gas on low flame. Put the skewer on Roti griller.
Grill each side of skewer for 20-30 seconds on low flame.
Keep flipping the skewer and brush with oil on each side.
After 5-6 mins brush the paneer with leftover marinate each side, it will give a good taste to Paneer Tikkas.
When paneer seems crispy from top and it get started burning from the sides it indicates its ready for serve.
