I've been sitting here wondering why my For You* is crawling with #fitblr all of a sudden when I haven't changed anything about my tumblr activity in regards to fitness content...and then I came across an mlm-looking post about the health benefits of turmeric.
The algorithm wants ME to know about the HEATH BENEFITS of TURMERIC.
It has only been in the last 3 or 4 years that I have been able to find any indication online that anyone else has this allergy because 1) turmeric wasn't a common ingredient in US food until very recently**, so exposure was lower in anglophonic populations and most people with allergies probably just thought they didn't like curry, and 2) searching for "turmeric allergy" has historically brought up 40 pages of results for using turmeric to treat allergies.
So now I'm getting fitblr shit probably because I used an uncommon-in-English word that has a strong association with alternative health practices.
I was so worried a human would be worried reading my post about an anaphylactic-adjacent reaction to turmeric that I put a big I'M OKAY I'M UNDER DOCTOR'S SUPERVISION footnote on the post. But Tumblr's glorified stats program got a hold of it and went, "This person is interested in herbal supplements!!" Because machines have to be taught the difference between giraffes and ladders, and if no human with access to the training model thinks of giraffes and ladders as things that can be confused for one another, the machines will never be taught that difference.
We HAVE to keep educated, informed humans in the loop. And I have to blacklist some hashtags.
* I actually appreciate having For You as a *separate option*. Sometimes I do want to see what's happening outside my curated circle! But I want to have the *choice* to intentionally engage that way *sometimes*. So...well done, Tumblr. Thank you.
** I do very much wonder about the incidence of turmeric allergies in cultures where it is a staple seasoning. It is clearly an allergy that has gotten worse for me the more I am exposed to it, and probably not something I could have developed a tolerance for if my mother cooked with it every day.
...and now I'm craving paneer saag, dammit. It's going to be at least a couple more months before I'm going to trust the damn Pringles are out of my system enough to risk Indian takeaway. Maybe I can just have papdi chaat...

In this article, I have discussed garam masala in detail from its meaning, usage, recipe, and taste to its health benefits. Garam masala is a perfectly balanced spice, and using it in your everyday cooking will definitely pep up your meal.
Garam Masala, the hot spice blend, is considered the most iconic part of Indian food. Though the name is a little deceptive, as 'garam' means 'hot' in English, people generally think that garam masala is a heat-inducing ingredient. But, it is just a myth in our minds, garam masala is not spicy hot, the heat actually refers to the decreasing the heat of the body through warm spices. 
Although garam masala is the classic ingredient everyone must have used in cooking at some point, not all are confident about what actually goes in its making and its usage. Now that I have been cooking for years now, I understand the importance of this delightful aromatic spice blend. This popular ayurvedic spice has a lot more to offer than adding flavour and aroma to the dish. It is also fully loaded with numerous health benefits. 
Now, we shall move ahead and explore all about the goodness of garam masala. 
 What is garam masala?
Garam Masala is a blend of different ground spices that are used widely in Indian cooking. The ground spices are roasted, to instil more aroma and flavours to the mix and then blended to powder form. Generally, garam masala is a mix of spices like cumin, coriander, cardamom, black pepper, cloves and cinnamon. Many times, people also use garam masala as a sprinkler. I love adding garam masala to paneer sabji as it just melts perfectly and blends with the taste of the dish. 
 How do I make it?
Every region, every house of India has a different recipe for making garam masala and many households also add red chilli powder, fennel seeds and nutmeg to the recipe. So there is no specific standard recipe to prepare garam masala. But as stated above, there are some ingredients, which will stay common in preparing garam masala.  
A majority of people in India prefers home-made garam masala. I too, use garam masala made at home, but when needed to buy from outside, I use garam masala only from Vasant Masala. I have tried Vasant Garam Masala and Vasant Rajwadi Garam Masala and both are really good to add aroma and flavour to the dish. And their spices are amazing in terms of quality and are very authentic.
Here is my short and sweet recipe for making garam masala that we have been using for years in my family. 
 Ingredients:
Coriander seeds - 3 tbsp.
Cumin seeds- 2 tbsp.
Cardamom seeds- 2 tbsp.
Black Peppercorn - 2 tbsp.
Cloves - 2 tbsp. 
Cinnamon Stick - 1 whole stick
Bay leaves - 2
 Method:
Step 1: Toast all the spices on a medium flame. Stir and cook them evenly until they turn dark and give you a rich aroma. 
Step 2: After the spices cool, grind them into a blender to get a powder form. 
Step 3: Garam masala is ready but before using make sure to store it in an airtight container. 
 How does it taste?
Garam masala adds warmth and sweetness along with a little spiciness to the food. It definitely adds magic to the dish: pepper adds heat, cinnamon adds sweetness, coriander seeds add a slight hot lemony feel and texture, and cumin seeds add warmth. All these spices mix up well together and make the recipe sweet and savoury. 
What are the health benefits?
In Ayurveda, Garam masala is a warm spice that increases the body's metabolism. The components of garam masala have different health benefits associated with each of them. Let us look at some of those health benefits: 
 Improves Digestion: The most primary health benefit of garam masala is that it improves digestion and prevents toxins build up in the body. It is also helpful to increases metabolism. 
Cholesterol: The presence of spices like cardamom, pepper, cinnamon helps improve poor cholesterol levels in the body. 
Diabetes: Cinnamon has various health benefits, and one of those benefits is lowering blood sugar levels. So it helps prevent diabetes and betters the insulin levels of the body. 
Good for teeth: Cloves are great antioxidants and are known to cure tooth problems in Ayurveda as it decreases toothache and decay.

Thai curry is used in both types of dishes, which are made in Thai cuisine from various kinds of curry paste, and for the pastes. Thai curry dishes are made of curry paste, coconut milk or water, beef, fish, fruits or vegetables, and herbs. Curries in Thailand often diverge in their use of ingredients such as herbs and herbal leaves with a blend of spices from the curries in Indian cuisine. Thai curries often come with a curry paste. The curry in south-east Asia is universal. It’s commonly believed that Indians made curry first, using ginger, turmeric, and garlic.
Origin
The first proof of this was later discovered there, dating back to about 2500 B.C. The word “curry” is an anglicized kind of the Tamil word “Kari.” As colonizers and merchants came to India from Japan, China, Portugal, and France, they dispersed curry recipes throughout Southeast Asia, including Thailand. In Thai, the word ‘curry’ is called gaeng . In English, it means “any wet savory dish bolstered and thickened with paste.” Thailand has many curry varieties, much like other countries in Southeast Asia.
Ingredients:
Almost all Thai curry pastes use the same base of local spices and ingredients like shrimp paste, garlic, parsley, lemongrass, peppercorns, kaffir limes, and cumin seeds. But are categorized by the added chilies and their texture. The Kapi, shrimp paste, is an essential element for Thai curry. It’s made of tiny shrimp (or krill) salted and left in the sun and ferment to dryness. The Kapi dates were used since the eighth century; because it can be preserved and used for months without freezing, it was an ultimate ingredient in a time when fresh food quickly went sour.
Chilly agriculture in Thailand began with Christopher Columbus, who first discovered and carried chilies back to Western Europe in the Caribbean and South America. Chilean peppers rapidly became the “spice of choice” in Europe, as the outmoded black pepper used to spice up food had become an exclusive luxury thing. Portuguese merchants then carried chilies to their Asian colonies. The existence of Portugal in Thailand was transitory, but the chili pepper persisted even after they left.
Additional ingredients for the paste can contain spices such as cardamom pods and cumin, turmeric, pepper, coriander seed, or some extra ingredients such as boiled, fermented fish, and ginger root the texture or type of curry.
Recipe:
Conventionally, grains were grounded with a mortar and pestle, but as new technology was inherited, they are now grounded with a food processor’s help. The paste is first stir-fried in cooking oil with some curries beforehand, other ingredients are added to the platter. This benefits the production of certain aromas in the spices and other paste elements that cannot be kept at a lower temperature of hot water. There are few spices as distinctive and delectable as curry when it comes to adding something unique to your plates. But for people who are only starting to try, the sheer number of curries can seem daunting. Every Thai curry type holds its significance in different Thai curry dishes.
In Thailand, the most famous types of Thai curries are green, red, yellow, massaman, and last but not least, panang. Here’s a brief about different types of Thai curries:
Green curry:
The most common Thai curry used in Thai dishes is green curry. It is the most common and loved among all the types of Thai curries. It’s like whenever you think about that curry, green Thai curry comes in mind in the first place. That name is for Thai green curry is “gaeng kiow wahn.” It is made from green chilies and coconut milk and appears to have a more decadent taste than other Thai curries. Additional ingredients contain shallots, garlic, and cumin and lemongrass seeds. Nowadays, most of these ingredients is available in ready-made Thai green curry paste too. In most Thai curries, coconut milk is the main ingredient, but others are made with rice. In Thailand, the most popular type of water-based curry is sour curry. It is prepared by adding loads of seafood and shrimp paste. Coconut milk has traditionally substituted ghee (clarified butter) used in Indian curries. For the green curry, it is essential to add it because the coconut milk’s sweet flavor will help reduce the chilies’ hotness and balance the taste.
Red Curry:
Red curry is made with giant red chili’s, which are not as hot as their green counterpart but still packing significant heat. Green curry tends to lean toward a sweeter flavor, while red explore the savory side. It is the spiciest among all the types of Thai curries. Over time, Red Thai curry paste has persisted more similar for classic Thai chefs. They add up to 20 red chilies to give red Thai curry the eminent red color and spicy flavor. However, some modern cooks tend to minimize the number of chilies in return for chili powder and often tomato sauce, which have the added advantage of improving the red color and providing a deeper taste. Red curry paste is the most prevalent of the type of Thai curries paste. It is used in a wide-ranging variation of sauces, from Thai red curry with chicken to Thai red curry sauce with baked salmon. These recipes include coconut milk and curry paste in the sauce, which contains paste of garlic, cloves, galangal, shrimp, and red chilies.
Yellow Curry:
Owing to roasted spices and a turmeric infusion, yellow curry is intensely aromatic and vividly colored and is served along with the fish or poultry. The yellow Thai curry has a delicious, bold flavor, sweet with faint spice hints, and is very hot without being overpowering. Yellow curry originates from the southern parts of Thailand and is usually prepared with adding yellow peppers. Yellow curry paste has a reasonably sweet savor with a specific flavor. Curry powder is crushed in accumulation to the turmeric, coriander, cumin, lemongrass, galangal seeds or ginger, garlic, and yellow or red chili. A famous yellow Thai curry dish is Thai yellow curry chicken, and the paste is also assorted along with coconut milk and used in fish stews.
Masaman Curry:
Masaman curry is the sweetest of all the different types of Thai curries and is an excellent shrimp or chicken combination. A rich, authentic taste, traditionally with tangy tamarind hints, this slightly hot curry is Indian-influenced and is a classic favorite. A decent introduction to curry if you’re nervous to try something too spicy.
Pasang Curry:
Panang Curry contains much of the same ingredients and is somewhat similar to Red Curry in color, except with a much sweeter flavor, and on the palate, it is much less spicy. It is highly flavourful when made with vegetarian or stir-fries dishes.
Sour curry paste consists of just five ingredients, making it the most straightforward curry to produce. It has a slacker evenness than the supplementary curries and is naturally made with fish or pork, similar to this Goan curry. Tamarind, sour pineapple or other sour fruit contributes to a different sour taste to the curry.

Today, I’m here to talk about pulses.Most people only know about bengal gram, black gram, green gram and toor dal.But, there are lots of other pulses people that don’t use regularly. Today, I’ll try to share some information about some pulses that are not very commonly used. Let’s see what we call these pulses in hindi, telugu and english. In the end, we will see how to boil them, store them and their uses. I’m sure some of you recognize some or all of these pulses.
1.Minumulu or Black Gram
These pulses are used in making dosa batter, idli batter, etc.These are called as black gram, lentil, whole urad dal, etc.These are split urad dal. As the name suggests these are black gram without skin split into two.This split black gram could be used to make sununda (laddoo).These are also used to make breakfasts, in tempering and so many other things.Black gram are very easy to boil also. They can easily be boiled in pressure cooker
2. Pesarlu or Green Gram
Next we’ll see ‘pesarlu’.These are called moong beans, green gram. These are split green gram, next is skinless green gram.We make pesarattu breakfast with these pesarlu, sprouts, curry could be made with them, moong dal halva, moong dal vada, kichidi and it is also used in various other curries.To use the whole green gram as it is, they need to be soaked first.Green gram also can be easily boiled in a pressure cooker
3.Kandulu or Toor Dal

Next, these are called ‘bobbarlu’.They are called lobiya in hindi and black eyed peas in english.There are two types here. Black ones and red ones.Black eyed peas could be used to make curry, dal, papad, fritters or just boiled and fried.These are very healthy.Soaking them for 1-2 hours before cooking will make the cooking process faster
9.Rajma or Red Kidney Beans
Lets see ‘rajma’ now.They are called red kidney beans.These are available in a variety of colours and sizes Kidney beans are filled with proteins.Lots of recipes use kidney beans as its main ingredient.They can be used to make pulav, salads, curries, etc
10.Soya Beans
Now, these are soya beans.Soya beans could be used to make soya paneer, soya milk, soya masala curry, soya dal, etc.
11.Ulavalu
These are called ‘ulavalu’.They are called kulthi dal in hindi.Recipes like dal, chutneys, ulava charu are made with it.Ulavalu are available in three colours – red, green and white.
12.Double Beans
Next are double beans They are used to make curries, masala curries, etc.Fibre content is more in these beans. They make out skin glow and improve digestion.It also gives an energy boost
13.Anumulu
Lets learn about anumulu now.They are called vaal in hindi and field beans in english. Field beans could be just boiled and fried. They are very tasty and full of protein

History of the taco: A dish that evolved across borders
You can eat one with carne asada and corn tortillas in East Los Angeles, or one with flour and pit-grilled pork known as al pastor in Dallas. Travelers can pick a few up outside of Berlin’s Schonefeld Airport before boarding a flight, or grab one with albondigas and collard greens in Memphis, Tennessee.
In each place, you can taste the social and global evolution of the taco, according to Josş R Ralat.
Some tacos incorporate the influence of Asian or Jewish cuisine. Others do their best to stay true to traditional taco orthodoxy — although no one can agree on what that is.
Ralat, the new Taco Editor at Texas Monthly (yes, that’s his title) has written a new book exploring how this simple dish with Mexican origins has spread and been transformed, from San Antonio to Tokyo, gaining fans and sparking some outrage among purists.
A lifelong project, American Tacos — A History and Guide (University of Texas Press) comes from Ralat’s travels throughout the United States and examines a dish that has come to transcend borders, barriers and bullets.
“No one owns the taco,” Ralat said in an interview. “It’s a living food, and I wanted to see how it is changing as we change.”
Born in what is now Mexico, the taco is a creation of ‘the encounter’ — the meeting of Spanish and indigenous peoples in the Americas. That meeting eventually led to the corn tortilla coming together with meats, beans and greens.
After the US-Mexico War of 1848, the United States grabbed nearly a third of Mexico’s northern territory, turning some ethnic Mexicans into Mexican Americans and creating a new southwestern border. The taco north of the line was now on its own, evolving for generations based on the available resources of its consumers.
Center of attention
As Los Angeles Times writer Gustavo Arellano outlined in his 2012 book, Taco USA- How Mexican Food Conquered America, Mexican Americans in Texas were forced to use yellow cheese, giving birth to what we call Tex-Mex. Isolated New Mexico used red and green chillies in their tacos. California’s ever-changing diverse population added its own flavors.
The history is what fascinated Nuyorican-raised Ralat when he began to explore how demographic upheaval and mass migration have changed the taco. He found Indo-Mex, or Desi-Tex, tacos in Houston, with restaurants using aloo tikki, saag paneer and curries. In Oregon and Florida, he stumbled upon K-Mex tacos, which use Asian fusion to introduce Korean fried chicken or bigeye tuna sashimi.
Ralat found kosher tacos in Los Angeles and Brooklyn made with peppery barbecue brisket pastrami charred with green salsa. “Deli-Mex” is what some called it, Ralat writes. But of course, Ralat found the heart of Mexican Americana holding true to and defending taco orthodoxy.
“San Antonio does its best to remain what it calls authentic,” Ralat said. “And one could argue, that’s also needed.”
On social media, taco fans debate. Ralat brushes that aside, however, as a sign of limited experience. “I always hear people say, ‘well, that’s not the way my grandmother made them’,” Ralat said. “You know what? Maybe your grandmother was a bad cook.”
Steven Alvarez, an English professor at St. John’s University in Queens, New York, and creator of a “Taco Literacy” course, said Ralat’s book comes as more Latinos are living across the US, from Massachusetts to Idaho. “To understand a people, you have to understand the food,” Alvarez said. “More people are coming together and so is the food.”
The food is a vehicle to make sense of new encounters. “If you are searching for the most authentic taco, you will soon find out it is a fruitless search,” Alvarez said. “You’ll never find it.”
Instead, you will discover that the taco has moved on, Ralat said.
Today, you can enjoy an English fusion taco in London’s Latino-dominated Elephant and Castle area while listening to UK soul singer Dayo Bello belt out a love ballad. You can enjoy tacos at the Pine Ridge Indian Reservation in South Dakota, where members of the Oglala Lakota Nation playfully tell visitors they are bringing the taco back to its indigenous roots. You can savor a Central American-influenced taco in East Boston with Brazilian immigrants.
“The taco is Mexico’s gift to the world,” Ralat said. “And the world is responding.”

Scotch Eggs, the quintessential English dish from the heart of London has taken over the British Palate. A perfectly cooked hardboiled egg wrapped in sausages, bread crumbs and deep fried, this delicacy is an invention of The Fortnum & Mason, a famous departmental store of London in 1738. The dish has its origin in the erstwhile British colony, India. The Indian version of Scotch Eggs is a popular Mughlai dish Nargisi Kofta (Narcissus Meatballs). Since then, it has grown into a signature English dish which finds its place in every supermarket and family picnic.

  This has led to the development of various indigenous versions like the Manchester Eggs and Worcester Egg. The Manchester version of the Scotch egg, that is, the Manchester Egg is a pickled egg cooked wrapped in pork sausages coated in a black pudding and then deep fried until golden brown. This adds a necessary sweet taste which balances the savoury flavour. Ben Holden, a local pub owner in the Manchester city came up with this brilliant idea. You can further innovate with the idea by improvising of spices and the ingredients. The Worcester Egg, on the other hand, uses a white pudding coating and a mixture of different type of local meats for wrapping up the pickled eggs. Then they are deep fried until golden brown. All these different delicacies are improvised versions of the same dish.

  While you are aware of Scotch Eggs and its variations in around the British Capital. Its Indian counterpart, The Nargisi Kofta isn’t far behind in terms of innovation and variations. It too has undergone a sea change and is regularly improvised by people. Indians have always loved the concept of improvisation and when it comes to cooking we aren’t that far behind. The Nargisi Kofta is one of the few dishes which have an old world regal aura, giving it the mass appeal that it enjoys today. So much so that there is a vegetarian version of this dish. In the vegetarian Nargisi kofta we substitute the egg with the mashed potato and meat wrap with the paneer or soya wrap. Thus the vegetarian Nargisi Kofta is ready!

In the non-vegetarian section, there are 2 types of Nargisi Kofta that are famous – Hyderabadi and Lucknowi. As with most Mughlai dishes, there’s always a tussle between the north and the south – the Nawabs of Hyderabad and the Nawabs of Lucknow. What I bought in India
Everything is exotic in India.
Before I went, I read up on websites recommending what people should buy from India and most people suggested things such as sandalwood carvings, sarees, Ayurveda products, etc. Nope! I knew those weren’t for me. I’ve had too many experiences with similar type of things that I bought from other trips and never ended up using, only to throw it out a year later…
…but I learned and now edit what sort of things that I would buy. But here are 5 (types of) items that I bought while in India that will come to good use:
1. Maggi instant noodles
I don’t remember how, I don’t remember when, but I knew that Maggi is famous in India for their 2-minute noodles. I ended up buying a 6-pack of their normal flavour and 6 packs of their hot mix flavours. It’s not as good as the Asian instant noodles that I usually eat, but I love how ingrained this little pack of noodles is within the Indian culture.
2. Textiles / fabric
You’ve seen the Bollywood movies, you’ve seen the incredibly colorful pictures of Indian women in their Sarees – India is a textile lover’s dream. Not only do they have an incredible range of different textiles and patterns, but the prices are also very reasonable. I wanted a scarf, but I couldn’t find any that I liked. However, this lovely embroidered textile caught my eye almost immediately when I laid my eyes on it and it was only 450 INR per meter. I ended up buying two meters and the guy even threw in some extra fabric and gave me an additional discount. If you want something else and not just a scarf, it’s also incredibly easy to find tailors around shopping areas / bazaars where they sell fabric. You can then choose the fabric that you’d like, go to a tailor and ask them how much it would cost to get something tailor made, ask them for how much fabric they need, go back and get the fabric, and then get the exact piece that you would want within a day’s time. Don’t forget to haggle though!

3. Spices
Indian food wouldn’t be Indian food without their wide use of spices. I’m sure it’s much cheaper in the markets and bazaars, but 1) I couldn’t find the spice areas of the markets and 2) I was rushed in the last day and hence only bought spices from a Big Bazaar (similar to Wal-Mart). Each 100g spice pouch only cost 25 INR, so I grabbed bags of Turmeric, Cardamom, Coriander, Masala Mix, and some premixed pepper chicken spice. I’ve already put them to use and have made some Paneer Curry and Pepper Chicken Masala since coming back (Ave enjoys it and is eating with his hands too).
4. Mango related products
I remember the first time my friend gave me some Mango Bites to try. I fell in love with the tiny candy and finished it up so fast that I even asked for more. So when I went to India, I sought these candy out for myself to bring back. What I found was that India was a mango lover’s paradise and there were so many different mango related products in India (almost like Mexico). Seriously, everyone could benefit from having more mangoes in their lives.
5. Books
India has one of the largest English speaking population in the world! With a population of 1.3bn people and English being the second most common language used from the North to South. Hence it wasn’t surprising that most of the books that I saw were also printed in English. Due to the lower purchasing power parity, books there are also available for cheaper. A normal book in Europe would cost 10.99 – 14.99 EUR. In India though, the same book would be available for 399 INR!!! That’s about half the price for the same book. And it’s not even that hard to stumble upon a bookstore in most shopping areas (the biggest chain of bookstores is called Landmark). Prices are also clearly labelled on the books so no haggling is needed.
