Summary: this oneshot explores a relationship between J and a reader who is determined to lose weight, and become healthier, and change her constant habit of turning to food for comfort.
Warnings: mentions of sex and some language; reader is unhappy with her body and wants to lose weight- if this concept is triggering for any of you, don’t read it! I’m not your mama.
A/N: I wrote this to cope with some angsty emotions I have been feeling. I am a firm believer of “journaling as therapy,” so I just kind of indulged myself as the thoughts and ideas came. I might add more if I fancy it, I might not. If you enjoy reading this, cheers! Eating healthy food is very important to me, and it is something that is obviously something that I worked into the oneshot.

"Jesus Christ!" you groaned at your reflection in the mirror.
That was it. Things had to change.
Why you still chose to comfort eat was beyond you.
No more I wish I didn't eat all of that food.
You were going to simply quit turning to food for comfort.
You were going to introduce a little Control into your Life.
Control, meet Life. Life, meet Control.
I hope you two can become properly acquainted with each other, you bitterly thought to yourself.
As much as you would like to think that you ate a healthy and organic diet, you knew that in the midst of it all, food represented a comfort to you. Actually, you could trace that pretty far back into your childhood.
Growing up, your mother had always used food as positive reinforcement, as a reward. Soda, junk food, restaurant food, fast food, she bought it all for you and frequently looked for reasons to “celebrate” with food.
But at 23 years old, you were an adult and no longer a child.
You had more in your life than to continue seeking that kindred and warm feeling in food.
Simply put, eating two desserts after dinner was excessive. Christ, where had your standards gone? Had you chucked them out the window?
J was out and about taking care of some business, and God only knew when he might return.
For now, you were stuck staring at your uncouth reflection in the mirror.
Your sad eyes took in the bloated stomach, the splayed thighs, and the too-rotund face.
Deep down, you knew it was the laziness that you despised most about yourself.
The fat deposits on your body were only a physical manifestation of the lazy, slothful attitude inside.
Not going for that 7 mile run, opting for pasta for dinner instead of that kale salad for dinner, sleeping in when you could have been cleaning the house, or doing the washing, or even working out… all of the self-criticisms seemed to come at you full-force. Heck, even meal prepping for J who Lord knew didn't eat consistently enough to sustain his quick-paced criminal lifestyle.
Deep down, you knew it was all unchecked laziness.
You resolved in your mind that you weren't going to let it go any further.
Although you didn't want to, you stepped on the scale and forced yourself to write down the number that you saw.
130 lbs.
Cringe!
On your 5'4" frame, that was simply too much fat and mass. You had to burn some of it off.
You knew that you wanted to be 20-35 pounds lighter than that.
You made a promise to yourself that you were going to lose the weight, and you were going to check in with yourself each day, to make sure that you were hitting your goals.
You needed discipline, and you needed to lay off turning to food for comfort.
Sex, you thought. Sex burns calories. A smile crept upon your face as this thought crossed your mind.
J couldn't complain with you asking for more, when it was usually him nudging up against your body under the covers or bounding after you in the shower.
Well hey, it would be like getting another workout in during the day, with as hard as J liked to go. You didn't know how it was possible, but sometimes it seemed as though he could go on for hours. His appetite was insatiable and consuming.
The way he would grab onto your hips and just thrust and grind, it was like he could go on forever. The ecstasy would build, and build, until it would become too much, and you two would both collapse in a hot and exhausted heap on top of each other.
Your gaze returned to the mirror, and reality dawned upon you. Why would J ever want to fuck you? You were… dare you say it?
Fat.
You had grown up with a mother who struggled with her own weight, and who probably hovered at or around 200 pounds for as long as you could remember. You had memories of her lifting up her shirt in the mirror with tears in her eyes, mourning the rolls on her stomach, and you knew.
You didn't want that to be you when you got older.
If it was something you had learned in the past, if you didn't have a set goal, you would never get where you wanted to go.
You resolved to weigh 119 at the end of the week. Today was Monday, so by Friday, you resolved to weigh 11 pounds less than what you currently did, which also included water weight.
Happy and set on meeting your goal, you set about cleaning the living space that J shared with you. Crikey, you thought. Things could sure get messy when you weren't paying attention.
119 was just enough to get you motivated to lose more, to eventually get down to 110 and eventually 105. you were excited just thinking about the possibilities, sure, J enjoyed fucking you now, but when you were 20 pounds less? He wouldn't be able to keep his hands off of you. You would be tantalizing. A delicacy he couldn't resist.
You fantasized about running longer distances and being so much more light on your feet without so much weight weighing you down. You were so excited to meet your goals. You knew that you could do it, you just knew that it would take a lot of hard work and determination.
Of course, by being diligent and losing weight, you would be proving yourself a dedicated and goal-oriented person. Someone that J would be proud of! Although he never divulged details with you, you knew that he pored over his plans and perfected them to a T, so that they would go off without a hitch.
Yes, you loved food, and it brought comfort, but you reminded yourself that it was for fuel, nothing more.
As you were thinking about your new weight-loss endeavours, you made your way into the kitchen to take a quick inventory of what was in stock.
Hmm. You would have to make another trip to the store to buy some fresh things. You knew that J really needed proper fuel, and so you thought of all of the delicious meals you could make him, while making salads for yourself. You prided yourself on your healthy but tasty and delicious cooking.
You knew that he liked practically anything you made, that he wasn't picky.
You checked the time. It was 1 in the afternoon. Hmm. If you started now, you would have time to finish cleaning the apartment and get everything else done. Maybe later in the evening you would even get to the online coursework that you had.
You poured yourself some more coffee (magic get 'er done fuel, as you liked to think of it), and set to work.

You checked the clock. 6:14 pm. Perfect. You set to preparing J's dinner and chopping up the ingredients for your salad.
You set the surround stereo system in the kitchen to play your favourite 90s music. You didn’t hear the door open as you were singing along to yourself with the Gin Blossoms about Mrs. Rita.
J loved sneaking up on you and scaring you half to death.
"Gotcha!" he said suddenly as he came up behind you, seizing your arms.
You were temporarily taken off guard, although not frightened, by his antics.
"J! I have a knife!" you protested, as you wielded the stainless-steel IKEA knife you reserved for chopping your salads.
"Do you really wanna threaten me with that, sweet cheeks?" J asked you suggestively, his voice suddenly going all throaty.
Damn, why did he have to go on arousing you, here, in the kitchen? You were making a freaking salad, for Christ's sakes! A kale salad!
"J, just hold on, not now, okay? I am making you dinner."
J looked temporarily put out, but then perked up at the prospect of eating a homecooked dinner you had made him.
"I was wondering what smelled so good," he wondered aloud, as he peered over your shoulder to see the pasta that was in the skillet on the stove.
"Can't have my favourite raccoon starving, now can I?"
"What? Did. You. Just. Call. Me."
A giggle escaped your throat.
"Nothing, nothing, not a thing…."
Truth was, you thought that J looked a bit like a petulant raccoon with his kohl eyes and white face when he was in full costume. He could be a bit melo-dramatic sometimes. It just made him more endearing to you.
J blinked, and then conceded, "Aw babe, you have no idea. I've been starving, for you. All. Day."
The words made you blush, and you felt a kindred warmth grow in your abdomen, but you set to finishing his and your dinner.
You started to plate his food, and the temptation to pour yourself a glass of wine was very strong, but you remembered your resolution earlier today, and stuck with water. How a beverage that was so fermented managed to have so much sugar was beyond you, but you remained steadfast in your prior determination to lose 11 pounds by the end of the week.
You handed J his food, and saw his eyes widen in anticipation.
He didn't even sit down, he just started eating it standing up right after you gave it to him. Such was his appetite.
He had already plowed halfway through the giant plate of pasta you gave him, by the time you sat down to eat your plate of kale salad with flaxseed crackers.
"Babe, I don't know how you do it, but your food is always perfect," J stated, between mouthfuls of vegetable pasta.
"Aww gee thanks, I am flustered," you blushed.
"How far did you go today?" J asked you, his eyes taking in your running clothes and flushed face.
Ever so observant.
"8 miles," you replied, actually slightly disappointed you hadn’t gone further. Tomorrow, you would go farther, you promised yourself. Tomorrow, you would make it 10 miles.
He glanced at the contents on your plate, once again looked at your sweaty running attire, but said nothing.
His eyes roamed over to the skillet on the stove, obviously hoping for more pasta. You were going to plate yourself some, but thought better of it. You would make do with your kale salad and flax crackers. Heck, you might even treat yourself to an orange for dessert. Lord knew the metabolism of the man seated in front of you never stopped and was going miles per minute. He simply required lots of fuel to keep going.
You took his plate and refilled it with what was left on the stove, returned it, and sat back down.
You actually weren't hungry after running, but you knew that if you didn't refuel now, you would be hungry in the middle of the night. You also knew the importance of eating plenty of fiber to keep a flat stomach.
You asked him questions about his day, and as per usual, he responded with vague one-word answers. You didn’t press for more information, although you knew that it most likely included “criminal activity.”
J's eyes still continued to roam the kitchen, and you realized that he was still hungry. Boy, to say that he had an appetite to rival your own was an understatement. You had boiled a whole box of quinoa-brown rice spaghetti! And he ate it all! And still wanted more!
You walked over to the counter and plated him some of the leftover salad and toasted some sprouted gluten free bread, and you set to preparing him some fruit. Part of their Heritage series, Von Ebert releases Alma and The Quality of Silence in bottles and on draft.
Tomorrow, August 28th, Von Ebert Brewing invites you to indulge in two new beers from their Heritage bottled beer program. Named Alma and The Quality of Silence, these two beers represent another step forward for this award-winning, independently owned brewery.

For head brewer Sean Burke, of Von Ebert’s Glendoveer location, Alma starts with peaches.
I was looking for high quality, organic peaches to use in the beer… My internet searching led me to Alma Gaeta from Peachwood Orchard in Hood River, Oregon. During my discussions with her, I explained I was looking for a blend of peach varieties. I wanted one that had a high level of classic ‘peach flavor’ and another that was more acid forward. In the end, she helped us settle on three different varieties.
Aged in the traditional foeder-style, Burke starts Alma’s journey not in oak barrels but first, as a Farmhouse Ale in stainless steel fermenters. Early in the morning starting under modified wind malt, called Gateway, Venora (a localized version of Vienne malt), plus Einkorn and Emmer Faro, Alma takes a long soak. Ready for a rinse, they transfer the wort into the next boil kettle, where joined by Styrian Hops. Later on, once it has soaked long enough, the beer is transferred and fermented in a stainless steel vessel, where it rests until the next phase of fermentation.
Ready for the next leg of its journey, they deposit Alma into one of four large Oak foeders, where it ferments away with the help of a wild yeast called brettanomyces.
That foeder was one of four built for Von Ebert by Foeder Crafters of America in St. Louis, Missouri, and has been designated by the Von Ebert team to only contain brettanomyces and a “clean” base to feed it with. No lactic acid bacteria touches the foeder. For this beer, the Von Ebert team chose a number of different brett strains and brett blends to pair with the base farmhouse ale.
Before long the beer is deemed “stable” (based on its sugar content and desired flavors), and (a portion is) transferred, this time in California Zinfandel barrels that were used to make Gin. There, aging further along, the Alma continues its travels, fermenting with the Gin and Zinfandel soaked staves to keep it company. On the last part of its journey, the beer returns to steel fermenters and accompanied by 1,000 pounds of peaches.
Finally deemed ready, when all the fruit has fermented out, they package the beer in bottles with a moderate amount of carbonation, which avoids causing the beer to be “sharp or lose the subtle nuances from all the previous steps”.
But the beer still needed a name and well.
“After my conversations with Alma, it seemed only natural to name the beer after her,” Burke mentioned. “Her passion for what she does and her story are inspiring to me as a craftsperson.”
At 6% ABV, Alma is a remarkable beer with notes of stone fruit, accompanied by notes of botanical and funk.

A blend of a “single puncheon” beer and one of Von Ebert’s beers fermented in open-top foeders, The Quality of Silence, celebrates the area's bounty of Rainier Cherries.
Starting with a base beer, comprising of European pilsner malt and North American, un-malted white what; The Quality of Silence ferments away, in stainless steel fermenters, along with a house farmhouse ale string. Eventually moved into a puncheon, the beer received a lively wake up from a mixed-culture yeast blend.
For the mixed-culture, the Von Ebert brewing team propped up the brett blend that was used in the making of Bouquet Blanc earlier this year, and also cultured microflora off Glenora grapes from the backyard of head brewer, Sean Burke.
For the other half of this unique, blended ale, the brewery took two different foeder-aged beers, paired with a “clean” Saison (aged in stainless steel fermenters). Combined, they rested the beer in an open-top (or removable top) foeder, before the brewery crew began the arduous process of de-pitting 350 pounds of Rainier cherries from Evans Fruit Company.
Rainier cherries aren’t a very flavor forward cherry, but have a nice acid to sugar ratio.
As part of the macerating, the crew took some 28 pounds of pits and put them in a foeder to add additional flavor.
Recalling the next steps, head brewer Sean Burke recalls a gathering of the brewing staff.
“The goal was to get all the brewers familiar with what we had in the oak, but also to try to create a few blends that we could use in the future. One of the advantages to using more people than just our Glendoveer brewing staff for the blending process is that we get a broader palate spectrum and therefore, more complex blends to work with.”
Through this exercise, a majority of the brewery came upon a blend that eventually developed into The Quality of Silence. The blend of puncheon beer with the open-top fermented beer, reduced the notes or Rainier cherries, creating a beer that is dynamic and interesting.
Blended, packaged, and further conditioned, the beer wasn’t ready until the brewery gave it a name. Again, here’s Burke with his thoughts.
“The name comes from a piece I was listening to where astronomers were talking about the different types of silence in the universe and how they pertain to whether there may or may not be other life forms out there… They concluded that if there aren’t, the fate of the universe could be in the hands of humanity. It’s a thought provoking notion.”
At 5.9%, The Quality of Silence will inspire thoughts of old fashioned cocktails, crushed almonds, with just a whisper of cherry.

Rachel stood in the middle of the distillery’s reception area with a frown on her face. She looked around the empty, quiet room and reached in her pocket for her phone. She read William’s text again. Tuesday, 10am, first tour at the Fraser distillery.
Her first day at work - or something close to that. After Mrs. FitzGibbons’ formal mail informing her she’d been hired - which she’d read three times to make sure she really got the job and then let out a celebratory scream - her phone had pinged with a message from William, congratulating her and asking her to meet him at the distillery to show her around.
Now she was there, on time, and he was nowhere to be found. She started texting him but deleted the message - better wait for him for a few more minutes. The reception area was large but it gave her a warm feeling, similar to the one she’d had in the reception room before entering Jamie Fraser’s office. There were no framed pictures of the family here, hanging one next to the other in chronological order, but a large painting adorned the fireplace, one that seemed inspired by a group picture. There were more people than she could count, smiling in front of an estate that seemed at least three hundred years old.
Lallybroch, Rachel realized.
On the wall next to the painting was a beautiful collage with distillery pictures and newspaper snippets about the history of whisky. If Rachel hadn’t been absorbed in reading about the deep roots of whisky in Scotland’s life and economy, she would have heard the door open and then swing shut again.
“Oh! You’re here,” William said instead of a greeting, moving his sunglasses to the top of his head to reveal two slanted blue eyes shyly looking at her. “The coffee machine hasn’t arrived yet, so I went to the coffee shop on the corner, to buy us some coffee.” He flashed her a wide smile and gave her a paper cup. “It’s black, but I got extra sugar and milk, in case -”
“Black is fine,” Rachel said, smiling politely. “Thank you, William.”
He nodded, satisfied by her answer. “So what do you think?”
“The reception area looks nice! I like the bar in the back.” She pointed towards the side of the room with her paper cup, the bar still empty, but its dark wood stools inviting people for a whisky tasting.
“Da says the place doesn’t feel right, yet. He says the smell is wrong.”
Rachel frowned and sniffed twice, unable to detect the scent that might trouble Jamie Fraser.
“It smells of paint, new furniture, and new equipment,” William explained. “No barley, peat, or fermentation. It doesn’t smell like a distillery yet,” he winked at her and took a careful sip of his still very warm coffee.
“So everything is brand new here?” Rachel asked, tentatively trying hers.
“Aye, it is! Ready to see it?”
The distillery was impressive. The malting house very big, it’s floor patiently waiting to be covered with barley, to start the magical procedure of making whisky. Rachel listened to William intently while he explained how things would work, and tried to imagine herself working there, checking the process, seeing a plain crop transform into something complicated, enticing.
They were past the mashing room and heading to the washbacks used for wort fermentation when William’s phone rang. “Sorry,” he said with a grimace, “I have to take it.” William walked back towards the reception area with fast, wide strides, leaving Rachel alone.
Rachel walked up the remaining part of the corridor to get to the washbacks. She smiled when she saw the large wooden containers instead of the stainless steel ones she’d found on the internet. Fraser continued making his whisky the old way - she liked that. Rachel walked around the containers, thinking them filled with wort and yeast, the wood warm from fermentation, alcohol scenting the room. Biting her lip, she searched for a vantage point to check their washbacks’ depth - she’d read they could get almost twenty feet deep.
“Hi,” came a whisper in her ear, and Rachel jumped, a hand flying over her heart to calm its thunderous beating.
“Oh my God,” she whispered, breathing fast.
“Ye can just call me Ian,” the voice said, and she could hear the smile in his words. His hands took hold of her upper arms, keeping her stable.
“Ian,” she said turning around, and she couldn’t help but smile. Smiling seemed so easy when Ian was close. “What are you doing here?”
His eyes were closer to green today, and she wondered how she hadn’t noticed that in the bar. She had thought them a plain brown, back then, but she was mistaken.
“I came for supplies,” he shrugged. “Whisky for the bar. And you? What are you doing here?” he asked, although he knew exactly what Rachel was doing there. “Should I congratulate you?”
“I guess you should!” she said, grinning broadly. She suddenly felt self-conscious, and she fidgeted with a lock of her hair, before tucking it behind her ear.
“Congratulations, then, Ms. Hunter,” he said and bowed with a flourish. “It is a total delight to have you with us.”
She hadn’t expected such a formal response and wondered if he was being sarcastic. Maybe he didn’t care that she was hired. Deciding to reply in the safest way, she bowed back at him, and said, “The pleasure is all mine, Mr. -” She didn’t know his last name.
“Murray. Ian Fraser Murray,” he helped, the corner of his lips curling up.
“Mr. Murray,” she continued her sentence.
“So, what do you think?” Ian asked her, pointing around. “Pretty cool, ha?”
“Pretty cool,” she laughed at his rapid vocabulary change. “Will you work here, too?” The question was out before she’d realized it, and she bit her lip hard, hoping that her tone didn’t show the hope in her voice.
“Ah no, lass. Just at the bar. Someone has to sell the product, aye?”
“I guess so,” she agreed.
They kept silent for a moment, just looking at each other, enfolded in the quietness of the room. Rachel felt her heart beating hard against her ribcage, but her breaths were slow, calm. She breathed in the wood’s scent and the fresh and peppery smell coming from Ian, and she barely kept herself from inhaling deeply to take more of him in. Ian looked at her with a faint smile on his lips and opened his mouth as if to say something -
“I’m back!” William said, coming through the doorway behind Rachel, and then a barely audible, “Oh.”
“Morning, Willie,” Ian said, adjusting his hair in a bun, and Rachel involuntarily fixed her eyes on his biceps, the lines of his tattoo straining with the motion.
When William came to stand next to Rachel, he told Ian that the whisky he came for was in a white box behind the bar at the reception. Ian dropped his hands in his jeans’ pockets, in a way that said he knew that already.
He chatted briefly with William about the delivery and an upcoming event at the bar, and then turned to leave with a goodbye. When he was at the door, he stopped and looked back, his gaze fixed on Rachel just for a millisecond, enough to make her doubt she saw him looking at her altogether.
“So,” William tried to get her attention back. “Our washbacks.”
It took them more than an hour to finish the tour, and even though Rachel was focused on William and the distillery, for a good fifteen minutes she couldn’t get rid of the lingering question that flashed at the back of her mind.
What was Ian doing at the fermentation room when it was obvious that the whisky he came to pick up was at the reception?
Unable to find a convincing answer and unwilling to let herself hope, Rachel focused her attention on the tour.
She didn’t want to leave the stillhouse, the shiny copper pot stills reminding her of musical instruments waiting for someone to give them life, to start the music. They went back to the reception area, sat in the comfortable leather couch and spent another hour talking about esters and their fruity notes, aldehydes and their vanilla-like scent. Rachel was excited. Her coffee was long gone, and the energy boost she felt had nothing to do with the caffeine consumption. She wanted to start working as soon as possible, to be a part of the team that would produce some of the most extraordinary whisky.
“This is Lallybroch,” William confirmed her previous guess, when he saw her gaze fall on the painting over the fireplace. “My sister is an artist, this is her work,” he added with a proud smile.
“Impressive! And these are the distillery’s employees?” she asked and rose to stand in front of the painting, to find the faces she already knew among the strangers. Jamie Fraser was in the middle, his arm around the waist of the same brown-haired woman she’d seen in the pictures in his office. The painting was amazing, the details so close to life that it looked like an edited picture. Next to Fraser on the other side stood a tall, beautiful woman with long red hair, holding hands with a dark, bearded man, with the sweetest smile. William stood next to the woman with the curly hair, his hair a bit shorter, his shoulders squared like his dad’s. Ian -
“No,” William replied, interrupting her thoughts. “This is just family. My aunt Jenny, Da’s sister, has five children and some of them have already children of their own, so you can imagine…”
“And you all work for the distillery?”
“The distillery or the bar. Not all of us, though. My mam is a doctor,” he said and chuckled, hurrying up to continue when he saw Rachel’s puzzled look. “But one could say that she works for the distillery, too. She’s our honorary taster. And da’s inspiration, as he says himself,” he continued, rolling his eyes.
Rachel chuckled and turned to look at the picture again. A big, happy family. A moment later, she spotted Ian. He stood next to the short woman with the black hair Rachel had seen in the pictures in Fraser’s office. He was thinner, the tattooed hand scratching a huge dog’s ear. He seemed different, his hair held loose on the nape of his neck, his smile strained.
“Excuse me?” she said when she realized William was talking to her. “I got distracted.” She shook her head, as if to push the thoughts away, and turned to find William’s blue eyes looking intently on her. Lost in her daydreaming, she half expected to find Ian’s hazel ones.
“I was saying,” William smiled patiently, “That we have an event at the bar on Friday about underestimated blended whiskies. This year we’ll release our first blended whiskies, and we want to promote the idea of something affordable, yet with a great quality. You should come.”
“Of course I will,” she said, not sure if her first thought was to show Jamie Fraser that his decision to hire her was the right one, or to see Ian again.
If William had taken a few more minutes on the phone, Ian might have invited her himself. Maybe this was what he wanted to say before getting interrupted…
Rachel smiled at William who smiled back at her, and reached for her purse. It was time to go. The tour had answered a lot of her questions about the distillery, and had opened much more about Ian.
But Friday was close, and she’d see him again.

Louis Jadot Vosne Romanée 1er Cru Les Suchots is a red Burgundy from the Cote de Nuits. The Vosne Romanée region is situated just to the north of Nuits-Saint-Georges. The two greatest vineyards of Vosne and Flagey-Echezeaux, are entitled to use the Vosne-Romanée appellation. The Vosne Romanée appellation covers a 105 ha surface, 13 ha at Flagey Echezeaux.
Louis Jadot is one of the largest and most famous wine producers and negociants in the Burgundy wine-growing region. The origins of the company date back to 1859 when the business was fouded by Louis Henry Denis Jadot. Over time the company has acquired plots of vines is some of the most prestigious vineyards in the region including Beaune Clos des Ursules, Chambertin Clos de Bèze, and many more. Louis Jadot owns or directly controls 120 ha in the Côte d’Or, including over 90 individual vineyard sites, 84ha in the Beaujolais Crus and 18ha in the Mâconnais primarily in Pouilly Fuissé (they own the fantastic Domaine Ferret). Today the business is headed by Pierre-Henry Gagey, son of André Gagey, who was entrusted with the management of Louis Jadot in 1962 by Madame Jadot following the tragic death of her son.
The Pinot Noir grapes for the Louis Jadot Vosne Romanée 1er Cru “Les Suchots” come from two continuous parcels between Romanée St Vivant and Richebourg on the South side, and “Les Echezeaux” on the North side. The grapes are hand harvested into small wooden crates to ensure that they arrive at the winery in best condition. The grapes are hand sorted and destemmed. The wine is fermented in open top wooden vats and/or stainless steel vats for 3-4 weeks with a twice daily “pigeage”, or punching down of the cap. The wine ithen aged or 18 months in wooden barrels (one third new) from Jadot’s own cooperage.

The makings of raw sauerkraut
Cabbages - Look for sweet new cabbage, recently picked—a day or two out of the patch. Big heads are ok, but two or three-pounders are more delightful to work with. Look for heads that are solid and ready to crack open. Older cabbage may be dried out, and you might end up adding some water. If you are concerned about insecticides or other contaminants, wash the cabbage in a mild solution of vinegar water or hydrogen peroxide. Washing will remove or neutralize most of “whatever” might have been used to get the fresh vegetable to your home. I use the cabbage as it comes—with a little caution.
Salt - I use the salt that is readily available at home. I like to keep my ingredients as simple and close to authentic sauerkraut recipes. Sea salt or pickling salt is good. But if you were to choose between rock salt and iodized salt, go with rock salt.
Water - As much as possible, I stay away from treated water. Certain chemicals are added to the water to make it safe to drink like chlorine, chloramine, and fluoride. If you are near a spring, you can try to use it for fermenting. If not, distilled water should be enough. You won't need much anyway.
Essential equipment when making sauerkraut
Chopping board - I like using my trusty old wood chopping board. You don't have to be picky. Any good board should do the job. Knife - A sharp knife for finely slicing the cabbages that we will use on our raw sauerkraut Wooden Vegetable Masher - I like using this when I ferment my cabbages. I use it to pound the vegetables and get the water out. Mashing Container - you place your finely sliced cabbages inside. Just make sure that it is sturdy enough to withstand the mashing of the vegetables. A thin, clean cloth used as a cover when we are fermenting our vegetables Weights to keep the cabbage from floating - I like to use a plastic bag with water in it. You can use whatever you have in your home.
How to Make Sauerkraut?
1. Cut the cabbages into quarters. Use the core too—it adds flavor. Now slice it into thin slices. I like mine about as thick as a quarter and nice long pieces—it looks pretty that way. You can place it into a vegetable chopper, but that is too much work.
2. After finely chopping the cabbages. Put it inside the container that you will be using. Any crock, jar or stainless steel pot will do. Wal-Mart sells a nice stainless steel pot that will hold about 2 gallon—they are cheap too. Any stainless steel cooking pan will serve for this task. Don’t use aluminum.
3. Mix the salt with the cabbage. This is low-salt sauerkraut: use about one teaspoon for each medium head of cabbage. A medium head of cabbage will weigh about two or three pounds. Use a tablespoon of salt for every 5 pounds—you do not want to pickle the “kraut.” You want it to ferment—don’t use too much salt.
Mix each layer of cabbage with salt. Start by placing a minimal amount of water and a pinch of salt in the bottom. This will help assure you that there is salt in the first layer. Now add a couple of inches of shredded cabbage, mix the amount of salt that you think that layer should have and tamp it down. Add a couple more inches of cabbage and mix in the salt. Again, tamp it down firmly. Pack it in layers that are about 2 inches thick, mixing some salt before tamping it down.
Soon you will see the liquid come through. Don’t fill it all the way to the top. Allow a few inches so it won’t bubble over.
4. Hold the cabbage under the brine. Cover the chopped cabbage with a thin cloth. The sauerkraut likes to float and must be held under the brine. My favorite “weight” is a plastic bag with some water in it. If you use this method, put some salt in the water—just in case it leaks.
Another method is to find a dish that fits into the vessel—turn it upside down and weight it down with a jar of water or any heavy item. Now cover the victim with a clean cloth to keep unwanted things out.
5. Now you can let it ferment. Some people ask where the best place to ferment sauerkraut is? As for me, this can remain on the table at room temperature or just set it in the corner. Don’t refrigerate until after it is all done fermenting. It will keep all summer in the refrigerator.
How long to ferment sauerkraut?
The fermentation takes about 28 days and goes through three fermentation stages. Each one takes nearly a week. You will notice a ceasing of bubbles before each phase changes.
The fun is watching it ferment. That is why a transparent glass or good clear plastic container is the most fun to watch. When the cute little bubbles stop floating up the task is done.
Can you freeze sauerkraut and how long can you keep it?
Yes, You can freeze it in freezer bags, jars or whatever containers you like. And if packed correctly, you can keep it for a year. You can also put it in the refrigerator where it will keep for several months. Homemade sauerkraut makes good food for camping trips as it will travel well at desert temperatures.
Homemade sauerkraut is a health food that doesn’t need cooked, seasoned or adulterated in any manner. Of course, you can do all kinds of nice things to this humble food.
