A delicious recipe for chewy oatmeal raisin cookies that are slightly crispy on the outside and packed with the wholesome goodness of oats and sweet raisins on the inside.

Ingredients: 1 cup rolled oats. 3/4 cup all-purpose flour. 1/2 teaspoon baking soda. 1/2 teaspoon ground cinnamon. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1/2 cup packed brown sugar. 1/4 cup granulated sugar. 1 large egg. 1 teaspoon vanilla extract. 1 cup raisins.

Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Mix the oats, flour, baking soda, cinnamon, and salt together in a bowl using a whisk. In a different large bowl, mix the softened butter, brown sugar, and white sugar together until the mixture is creamy. To the butter and sugar mix, add the egg and vanilla extract. Beat the mixture until it is smooth. Slowly add the dry ingredients to the wet ones, mixing only until everything is well combined. Add the raisins and mix them in. Using a spoon or cookie scoop, place round tablespoons of dough about 2 inches apart on the baking sheet that has been prepared. After the oven is hot, bake the cookies for 10 to 12 minutes, or until the edges are golden and the middle is still a little soft. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way. With milk or your favorite drink, these oatmeal raisin cookies are a great treat.

OATMEAL COOKIE Experiment Time! To make a basic healthy oatmeal cookie, simply combine a mashed ripe banana, 1 cup of oats, and about 2 tsp cinnamon. Form into cookies and bake at 350 F (180 C) for 30-40 minutes. They're a good high-protein nutritious treat, but I was curious to see what add-ons could make them taste even better. I ran an experiment. Here are the results: · Oatmeal + Raisin = Very Good. The fitting sweetness of raisins makes them definitely worth the add. · Oatmeal + Raisin & Walnuts = Very Good. Adds a bit more texture and variety. · Oatmeal + Mango = Excellent! I didn't know fresh mango chunks could make an oatmeal cookie taste so yummy. · All of the above = Wow!
