From my zoom class for the @newcanaan_ymca: roasted bell pepper soup. So — dinner tonight! Herpes the recipe: ROASTED RED PEPPER SOUP 5-6 sweet red, orange and/or yellow bell peppers 2 tablespoons olive oil 1 small onion, chopped 1 carrot, chopped 1 stalk celery, chopped 1 tablespoon freshly minced parsley plus more for garnish if desired 1/3 cup raw white rice 5 cups vegetable stock (or chicken stock) 1-1/2 teaspoon salt or to taste freshly ground black pepper Preheat the broiler. Place the peppers under the broiler, about 4-6" away from the heat. Broil for 2-3 minutes, until the skin has blistered. Turn the peppers and repeat this process until the entire surface is blistered and lightly charred. Remove the peppers and place them in a paper bag. Let rest at least 10 minutes. Remove the peppers from the bag, peel off the skin and discard the stem and the seeds. Cut the peppers into pieces. Heat the olive oil in a large saucepan over medium heat. Add the onion, carrot, celery and parsley. Cook, stirring occasionally for 3-4 minutes or until the vegetables have softened. Stir in the rice. Add the peppers and stock. Season to taste with salt and pepper. Bring the mixture to a boil, lower the heat and cook at a simmer for 25 minutes. Puree in a food processor or blender. Yesterday I demonstrated this grain-and-chicken salad for the @newcanaan_ymca ForeverWell Program for Active Older Adults. Double recipe and there was not a morsel left! It’s an interesting salad and amazingly versatile (change the meat, use fish (salmon would be great) or make it vegetarian, use any grain — I used brown rice - experiment with different seasonings). Here’s the basic recipe: Chicken Grain Salad with Mango, Dates and Nuts 1 cup wholegrain such as freekeh, farro, rice, oat groats, barley 2 cups diced, cooked chicken 8 medjool dates, chopped 3/4 cup chopped nuts (almonds, cashews, pistachios) 1/2 cup raisins 1 ripe mango, peeled and diced (or use peach, nectarine or halved grapes) 4 chopped scallions 1/4 cup minced fresh parsley, preferably flat leaf 2 tablespoons chopped fresh mint 6 tablespoons extra virgin olive oil 3 tablespoons white wine vinegar 3 tablespoon mango juice or orange juice 2 tablespoons lemon juice Salt and freshly ground black pepper to taste Cook the grain according to package directions until the they are tender but still somewhat firm and all the liquid has been absorbed. Remove from the heat and set aside to cool. Place the grain in a bowl. Add the chicken, dates, pistachio nuts, raisins, mango, scallions, parsley and mint. Toss ingredients gently to distribute them evenly. Combine the olive oil, white wine vinegar, mango/orange juice and lemon juice and whisk vigorously. Pour the dressing over the salad. Toss the salad and season to taste with salt and pepper. Let rest for about 10-15 minutes before serving. Yesterday’s food demo for special needs young adults at the @newcanaan_ymca was a lot of fun. Best of all, so many of the kids participated and really enjoyed measuring and mixing and then eating the blueberry muffins and grilled cheese sandwiches we made. It was a delicious day in every way. What should we make next time??? Here’s the recipe for blueberry muffins we made BLUEBERRY MUFFINS 4 tablespoons butter 1-3/4 cups all-purpose flour 1/4 cup sugar 1-1/2 teaspoons baking powder 3/4 teaspoon salt 1/2 teaspoon baking soda 1 cup buttermilk 1 large egg 1 tablespoon grated fresh orange peel 1/2 teaspoon vanilla extract 1 cup fresh blueberries Preheat the oven to 400 degrees. Grease a muffin tin. Melt the butter and set it aside. In a bowl mix the flour, sugar, baking powder, salt and baking soda. In a second bowl, mix the buttermilk, egg, orange peel and vanilla extract. Pour the liquid ingredients into the flour mixture and stir only to blend ingredients (do not mix vigorously). Fold in the berries. Drop the batter in equal amounts into the prepared muffin tin cups (the number will depend on the size of the muffins) to about 2/3 filled. Bake for 22-26 minutes, depending on size, or until a cake tester inserted into the center comes out clean.
