A la rencontre de Hervé, L’Etiquette, Paris 4ème  Hervé, un caviste passionné et non conventionnel, a ouvert en juin 2012 sa cave à vins sur l’île Saint Louis, L’Etiquette, nommée ainsi pour « l’Éthique », et propose 7 jours sur 7 des vins bio, biodynamiques, et natures. La devise de @letiquette.paris est « Boire bien et boire sain ».  . J’ai travaillé 10 ans dans la restauration, 5 ans en France puis 5 ans en Angleterre. Quand je suis rentré d’Angleterre, en octobre 1994, j’ai travaillé dans une cave. En août 1995, je suis parti avec ma voiture et mon vélo à la découverte des vignobles pour essayer de mieux comprendre l’univers du vin et j’ai continué tous les ans. Après quelques années, j’ai décidé d’ouvrir mon propre commerce.
