National Crepe Suzette Day! Crepe Suzette is a French dessert consisting of a crepe with beurre Suzette, a sauce of caramelized sugar and butter, tangerine or orange juice, zest, and Grand Marnier or orange Curacao liqueur on top, served flambe. In restaurants, a Crepe Suzette is often prepared on a gueridon (a small, often circular-table top) before the guests. The origin of the dish and its name is disputed. One claim is that it was created from a mistake made by a fourteen year-old assistant waiter Henri Charpentier in 1895 at the Maitre at Monte Carlo’s Cafй de Paris. He was preparing a dessert for the Prince of Wales, the future King Edward VII of the United Kingdom, whose guests included a beautiful French girl named Suzette. The other claim states that the dish was named in honor of French actress Suzanne Reichenberg (1853–1924), who worked professionally under the name Suzette. In 1897, Reichenberg appeared in the Comйdie Franзaise in the role of a maid, during which she served crepes on stage. Monsieur Joseph, owner of Restaurant Marivaux, provided the crepes. He decided to flambe the thin pancakes to attract the audience’s attention and keep the food warm for the actors consuming them. Lo sapevate che oggi in Francia è la Giornata Nazionale delle Crepês? 😋 La tradizione voleva che nel giorno della Candelora, il 02 febbraio, ovvero 40 giorni dopo Natale, i contadini preparassero il tipico dolce francese, tenendo in una mano una moneta d'oro che andava arrotolata all'interno della crêpes stessa. Questa veniva poi posizionata in camera sopra in armadio e lasciata lì per assicurarsi felicità e prosperità per tutta la famiglia. Dopo un anno si recuperava la moneta che veniva donata al primo povero di passaggio. Crepe Suzette Day – There are differing accounts relating to how this dish originated. But the one sure thing is that it is delicious and involves pouring liqueur over a crepe and setting it on fire. A practice that I have never been able to bring myself to try because I'm afraid of setting other things on fire as well. So have a fire extinguisher at the ready, look over the directions that no one ever reads, and don’t be afraid to use it if necessary.
