From My Tuscan Kitchen, I am celebrating seasonal Sicilian cherry tomatoes. I love this dish because of its simplicity and flavor: Slice bread, drizzle with olive oil and toast in the oven until golden. Mince tomatoes, add basil, salt to taste and a drizzle of olive oil. Remove crostini (toasted bread) from the oven, scrape with a clove of fresh garlic and spoon tomato mix onto crostini. I usually finish with a drizzle of olive oil before serving. And, that’s it. It felt surreal to watch Stefano dress cinghiale the first time. After 11 years, it still takes a little getting used to. This little piggy was quartered and shared. From My Tuscan Kitchen, I immersed the cinghiale in a white wine and herbed brine for four days. I prepared a sofritto (celery, onions, carrots and garlic). I browned the piggy. The ingredients went into a pot and stewed for three hours. Dinner is served Stewed Cinghiale on Polenta. It is Fall in Tuscany. Stefano brought home a bouquet of flowers, in a beer batter they went. From My Tuscan Kitchen, I couldn’t resist Fried Zucchini Flowers. I used Extra Virgin Italian Olive Oil that imparted the flavorful nutty, greenness of the oil. It was a birthday month of bar-b-que and salads. From My Tuscan Kitchen, we had cowboy steaks on the grill and a classic Caesar Salad. It is impossible to find bottled dressing in Italy and made the Caesar from scratch. I tweaked the recipe and it is perfection. When we were in Sicily a few years back, I was on the quest for the most scrumptious cannolo. In my humble opinion, Donna Fugata in Ragusa had the BEST tasting! I finally decided to make these Sicilian sweets (slightly deviating from the traditional recipe) and highlighting seasonal flavors. From My Tuscan Kitchen, I prepared my summer inspired Lemon Mascarpone Cannoli for dessert. They were delightfully light, delicate and lemony fresh. I will certainly be making these again. The flavor variations are endless! I have been making my own Tahini and freezing the unused portions until needed for a recipe. For our Christmas meal, I wanted great flavors, a simple dish and to incorporate Tahini into my menu. So, I decided to do Asian. From My Tuscan Kitchen, I prepared Ginger Garlic Chicken Meatballs served with Tahini dressing and finished with my Sweet and Spicy Chili Sauce. As an appetizer, I served it as it. The following day, I reheated the leftover meatballs and served them on garlic fried rice, finished with Tahini dressing and Chili Sauce.
