mini mushroom & spinach frittata
Ingredients:
2 tablespoons - extra virgin olive oil
1 bulb - garlic (minced)
350 grams - button mushrooms (sliced, mixture of white and brown)
170 grams - baby spinach (rinsed)
salt & pepper (to taste)
parsley flakes
8 eggs
1/3 cup (75 ml) - milk
1/3 cup - parmesan cheese (grated)
cooking spray
Directions:
In skillet, heat oil over medium-high heat; cook and stir garlic until slightly turning brown.
Add in mushrooms, pepper and salt; occasionally stir until no liquid remains.
Stir in spinach. Cook and stir until wilted. Remove from heat. Divide among 10 greased (with cooking spray) muffin tins.
Sprinkle grated parmesan cheese on top of the partially filled muffin tins.
Beat eggs with milk in a large bowl (Tips: Do this while mushrooms are cooking).
Fill egg mixture evenly among muffin tins.
Bake in (preheated to 350 degree F or 180 degree C) oven until puffed and golden about 10 - 15 mins.
Serve warm or Make-ahead (Let cool; refrigerate in airtight container for up to 3 days. Or individually wrap in plastic wrap and freeze for up to 1 month. Reheat to serve.)
