2nd batch of sourdough! Lots better than the first, actually got some crumb structure this time (bc the starter is finally ready for bread)
#it's 70% hydration 20% starter and 16h bulk fermentation & 6h of proofing#I think I like the 70% hydration for now#it's still enough moisture to get that open structure but easy to work with#(hydration is the thing that makes the crumb structure open&tender so kind of the higher hydration dough u have the better the bread but th#problem with high-hydration dough is that it's real hard to work with so gotta build some skills before can move onto those#like some professionals even make 100% hydration doughs)#(the percentage is like how much water you have in comparison to the flour: 100% is like if u have 500g of flour you also have add 500g of#water or like 70%: 500g flour and 350g of water)#this is just a 250g of flour one tho bc I live alone and don't want waste/my freezer full of bread#idk if these interest anyone but idc it's my blog I'm going to be posting abt sourdough#should make up a tag for these#elvis bread#it's that one ^^ for now until (if) I can come up with a better one bc my starter is named Elvis#sourdough#april 2024#2024

#they should invent a grad school thats not fucking insane#i'm hanging in there but im the most unwell i've been in AWhile#this week was just horrible#there was already the freezer food incident but it also started off with a very severe pain episode thats putting me in constant woe#even mundane motion has been agonizing which is McAwesome bc we had a lab inspection which involved moving hundreds of pounds of equipment#during which we found a blackwidow and rats which we had to deal with and was a whole thing psychologically on top of the physical toll#the new class fiasco is still popping off and i had to respond to at this point over 400 emails in the fleeting moments outside of lab#AND A STUDENT TRIED TO FINANCIALLY BRIBE THEIR WAY INTO THE CLASS ? ?? ?? ?????#then the instructor wanted to use me as a guinea pig and i had to test new circuit boards but I wasnt given any time to do so properly#i had to test them plus get them operational and deal with my incoming students all in a frantic 10 minute window#im in charge of running our meetings too but the instructor was interrupting and having side conversations that made it really hard-#to train the other people on the new equipment in a smooth manner#which meant that a bunch of people had to keep me after to ask questions which made me late for my drs appointment#where i found out i cant get the new covid vaccine bc my heart and blood levels arnt stable enough#and joanns lost an expensive+critical fabric order of mine+i had to give a big presentation this week on my research that was stressful#and my inbox is still blowing up from being needed all over the place between teaching lab and classes and yall i am. so so tired.#im in so much pain and so stressed out#debating the ethics of turning into a pile of lint to escape my responsibilities and mortal frame

I made a really disgusting soup this week because several years ago my mom bought these sliced... beet artichokes? I dunno. anyway#they were forgotten in the basement freezer and when I moved I decided to bring them with me and see if they could be eaten#and you can (usually) make a really nice soup with them and potatoes etc but problem 1 was that they were not properly cleaned#and since they had been frozen I saw no clear way to like. fix them. so I popped them in the pot thinking it would all boil apart anyway#and here comes problem 2 - it's all supposed to be blended with that hand mixer thing you know? but I had forgotten it while moving#so I only had my electric whisk available for like 1 kg of root vegetables and almost 2 l liquid all needing to be crushed together#and I could not do it in the pot because it might damage the glaze or whatever so I stood there scooping everything into a bowl#and then tried to whisk it together into a smooth soup with my little electric whisk. I shall tell you that this was not a good idea.#anyway so I have been eating this lumpy yellow-grey mess with bits of peel in it and while writing this I still have three more days to go#every evening has been me going 'if you eat it you can have something nice after ok? don't look at it just swallow...'#and two weeks before this I made a really lovely fake palak paneer and it was a week of bliss and I suddenly started writing a lot#and after that came this soup#it's fine. it's fine. I would be hard pressed to cook anything worse than this for next week. so it's fine.

i keep pingponging between dreading that i won't be able to move/afford rent somewhere else/get accepted in a new rental application and beating myself up over even trying to leave cause it's such an overreaction and actually it's Fine living with roommates even if they do hate me Sometimes but we seem to be okay Now and it probably was my fault anyway and if i leave they'll definitely hate me for betraying them. or something lol
#if and when i actually move i'll probably continue my protestant ass panic for like a month before moving on with my life#and i probably will end up in a happier environment on my own even if it means it's more expensive. but of course there are The Agonies#i wanna talk about me#every time i have a pleasant and friendly interaction with one or more of my roommates since the beginning of the month#ive doubted myself and debated if im really overreacting. and that this is way too drastic a solution to this issue#but. idk. maybe it's not. im not exactly an objective witness to the situation#also the one roommate who seems to have the biggest problem with me is out of town. which may have something to do with things.#idk#im trying to let myself be okay with wanting more than just bare minimum#and accept that a more nice and comfortable (even expensive) place all to myself is not only allowed by good#and im allowed to want it seek it out and enjoy it. im trying#i dont feel like i really deserve it yet. but it would be nice. my own apartment. big windows. a freezer with an ice maker built in#(a freezer i dont have to share in a quarter portion with others...)#maybe it's okay. idk. idk
