2nd batch of sourdough! Lots better than the first, actually got some crumb structure this time (bc the starter is finally ready for bread)
#it's 70% hydration 20% starter and 16h bulk fermentation & 6h of proofing#I think I like the 70% hydration for now#it's still enough moisture to get that open structure but easy to work with#(hydration is the thing that makes the crumb structure open&tender so kind of the higher hydration dough u have the better the bread but th#problem with high-hydration dough is that it's real hard to work with so gotta build some skills before can move onto those#like some professionals even make 100% hydration doughs)#(the percentage is like how much water you have in comparison to the flour: 100% is like if u have 500g of flour you also have add 500g of#water or like 70%: 500g flour and 350g of water)#this is just a 250g of flour one tho bc I live alone and don't want waste/my freezer full of bread#idk if these interest anyone but idc it's my blog I'm going to be posting abt sourdough#should make up a tag for these#elvis bread#it's that one ^^ for now until (if) I can come up with a better one bc my starter is named Elvis#sourdough#april 2024#2024

posting a lot this hour but in my defense i made the worst taco soup this planet has ever seen. made doubly bad by the fact that the grocery store only had vegan sour cream and i was like well it's probably the same, vegan food has made a lot of advances NO BC IT WAS COCONUT AND CASHEW. HAVE YOU EVER EATEN COCONUT AND CASHEW FLAVOR WITH TACO SEASONING. NOT GOOD. the worst part of all is it was in a crock pot so now i have one million days of bad taco soup to eat
#and the recipe was like freeze it. but i don't have freezer bags#and it was bad can i just say. eating it did not spark joy#and i know we are not put on this earth to suffer by eating bad taco soup#but the chicken was really expensive :/#going to have to ponder how to fix this one...i feel like lime might be the move. i should not have trusted the recipe when they said#6 cups of chicken stock. that's so much#but i mean a lot of this might have been the vegan sour cream#like coconut has many uses for many things but i was not really loving it with taco seasoning man#fresno oilers.txt

#they should invent a grad school thats not fucking insane#i'm hanging in there but im the most unwell i've been in AWhile#this week was just horrible#there was already the freezer food incident but it also started off with a very severe pain episode thats putting me in constant woe#even mundane motion has been agonizing which is McAwesome bc we had a lab inspection which involved moving hundreds of pounds of equipment#during which we found a blackwidow and rats which we had to deal with and was a whole thing psychologically on top of the physical toll#the new class fiasco is still popping off and i had to respond to at this point over 400 emails in the fleeting moments outside of lab#AND A STUDENT TRIED TO FINANCIALLY BRIBE THEIR WAY INTO THE CLASS ? ?? ?? ?????#then the instructor wanted to use me as a guinea pig and i had to test new circuit boards but I wasnt given any time to do so properly#i had to test them plus get them operational and deal with my incoming students all in a frantic 10 minute window#im in charge of running our meetings too but the instructor was interrupting and having side conversations that made it really hard-#to train the other people on the new equipment in a smooth manner#which meant that a bunch of people had to keep me after to ask questions which made me late for my drs appointment#where i found out i cant get the new covid vaccine bc my heart and blood levels arnt stable enough#and joanns lost an expensive+critical fabric order of mine+i had to give a big presentation this week on my research that was stressful#and my inbox is still blowing up from being needed all over the place between teaching lab and classes and yall i am. so so tired.#im in so much pain and so stressed out#debating the ethics of turning into a pile of lint to escape my responsibilities and mortal frame

On the topic of refrigerators the fact that nearly every single option has a drawer bottom freezer by default is the worst
The people there were like “oh you’ll want it down there because it’s less frequently used! So putting the freezer at the bottom brings the perishable items up to eye level to reduce food waste!”
Sure, I get it I suppose.
But *I* use the freezer just as much as my fridge and need to get in to it often for my dogs’ food. And *I* on a daily basis experience piercing pain to my cranium for bending my head over below heart level.
I can easily put fridge items I need to use on the higher shelves to avoid that problem with the prior design of the freezer being on top. Putting the freezer below makes all freezer access painful for me.
I ended up finding one that has pressure locking drawers in the bottom freezer so when you pull it out there’s a really shallow drawer that will keep the items I need as high as possible in the freezer provided there’s some weight in that drawer. But like damn the overall design is so flawed for anyone not completely able bodied
#there were some that had the like bifold door thing on the freezer section#which we heavily considered#and would have gone with tbh but if you get the same brand as a second appliance you save a bunch#so sacrificed on the fridge for the only oven that had safety features my passing out ass needs#French door not bifold#ALSO fuck me if I ever need a service dog to grab refrigerated medication#moving meds sky high making it way more inconvenient for a as to need to grab#just so many issues

I made a really disgusting soup this week because several years ago my mom bought these sliced... beet artichokes? I dunno. anyway#they were forgotten in the basement freezer and when I moved I decided to bring them with me and see if they could be eaten#and you can (usually) make a really nice soup with them and potatoes etc but problem 1 was that they were not properly cleaned#and since they had been frozen I saw no clear way to like. fix them. so I popped them in the pot thinking it would all boil apart anyway#and here comes problem 2 - it's all supposed to be blended with that hand mixer thing you know? but I had forgotten it while moving#so I only had my electric whisk available for like 1 kg of root vegetables and almost 2 l liquid all needing to be crushed together#and I could not do it in the pot because it might damage the glaze or whatever so I stood there scooping everything into a bowl#and then tried to whisk it together into a smooth soup with my little electric whisk. I shall tell you that this was not a good idea.#anyway so I have been eating this lumpy yellow-grey mess with bits of peel in it and while writing this I still have three more days to go#every evening has been me going 'if you eat it you can have something nice after ok? don't look at it just swallow...'#and two weeks before this I made a really lovely fake palak paneer and it was a week of bliss and I suddenly started writing a lot#and after that came this soup#it's fine. it's fine. I would be hard pressed to cook anything worse than this for next week. so it's fine.

very bummed out this Thursday evening, as the black widow my dad caught in the garage who I was really hoping wasn't pregnant so I could keep her as a pet has now spawned an egg sac, so I have to release her
#taking care of a black widow is actually pretty easy UNLESS there are eggs involved#I do not have the skills/knowledge to deal w/ eggs and babies#very sad though bc I've had her for about a month and widows can live upwards 3 or so years in captivity#and I was really enjoying having one to take care of bc they're super cool spiders#the other option to release is humane death by freezer though (she'll probably freeze outside anyhow bc of the uh. Winter--#unless I can find a good place for her to hunker down--but y'know I wanna give her the chance to nest)#mama widows tend to be really aggressive after spawning an egg sac so I can't just steal the eggs and continue keeping her bc I uh#won't be able to safely move her into a new keeper when I need to clean out the keeper-in-use#see before eggs widows are typically super docile for as far as spiders go#I'm just sad bc it's been a bummer year and I was REALLY hoping I could just Enjoy Having A Spider again#will try to find a spot to leave the keeper open outside and hope she makes it through the winter months#maybe not today but sooner rather than later#oracle of lore
