Form the mixture into small meatballs or patties. Heat olive oil in a pan or grill over medium heat and cook the meatballs until browned and cooked through (about 4-5 minutes per side). Moroccan-style meatballs
Moroccan-style meatballs with rice, braised peas, and cauliflower on Tuesday 7 November 2023
It was my parents' wedding anniversary, so we had a meat dinner to celebrate. My aunt and uncle came, too, and we had a lovely evening.
Traditionally, there would be no breadcrumbs or egg in a Moroccan-style kefta. I needed to make the meat that I had go further, so I added some. If you need to serve fewer people or have more meat available, you can omit the breadcrumbs and egg.
The recipe is a cross between one in Paula Wolfert's The Food of Morocco and that on the Taste of Maroc website.
For the meatballs - serves 5
450 grams minced lamb
1 crust bread, toasted, cooled, and ground into crumbs
1 egg
1 small onion, grated
3 tablespoons chopped fresh coriander
3 tablespoons chopped fresh parsley (no tough stems)
1 teaspoon paprika
1 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon turmric
1/4 teaspoon cinnamon
Grinding black pepper
Pinch ginger
Grating nutmeg
For the sauce
1 medium onion, chopped
4 cloves garlic, minced
400 grams chopped tomatoes, passata, or grated fresh tomatoes
200 millilitres stock (chicken or vegetable)
2 tablespoons tomato purée
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh coriander
1 1/2 teaspoons paprika
3/4 teaspoon cumin
1/4 teaspoon sugar
Salt and pepper
For the meatballs, mix together all of the ingredients, but don't overwork it or you will have tough meatballs. Use wetted hands to shape them into between 24 and 30 tiny meatballs. Put them on a plate, cover them, and refrigerate for at least 30 minutes.
To make the sauce, heat the onion, oil, and the garlic in a casserole with about 80 millilitres of water. Cook for about 10 minutes on a low-medium heat until the water has evaporated.
Stir through the tomato purée followed by the spices, tomatoes, the stock, the sugar, salt, and pepper. Bring to the boil and then reduce to a simmer.
Cook for at least ten minutes so that the sauce thickens and becomes more rich. Stir through the herbs.
Drop the meatballs into the sauce and carefully cover each with a spoonful of sauce.
Put the lid on the pan and let the meatballs simmer for about 30 minutes, until they are cooked through. Remove the lid and cook uncovered for five or ten minutes to get the sauce saucy. Serve immediately. We had ours with rice, plain cauliflower, and braised peas.

i also took great joy in how moroccan an experience it was. watching a film in darija with french subtitles that were half cut off by the shitty projection of the cinema where everyone was on their phone the entire time, about daily life in morocco with people visiting hammams and cooking kefta blbayd and spinning thread in the street and drinking atay bn3na3, and spending the entire film trying to figure out where it was shot only to be like OH IT'S SALE approximately two seconds before a shot revealing the Iconic Sale Location, and having to hike to find a taxi that would take us home in the middle of the night. I love this place so much.
i'm so exhausted i am gonna barely make it through the classes i have to teach today but i gotta say, the experience of a midnight showing of a beautiful queer movie which makes you and your friends cry your eyes out is so fucking worth the sleep deprivation

KEFTA - MOROCCAN MINCED MEAT RECIPE
INGREDIENTS
450 gr minced beef and/or lamb
1 medium onion, grated
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh coriander
Leaves of 4 mint sprigs, chopped
2 teaspoons paprika
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon ground black pepper
pinch cayenne pepper
METHOD
• In a large bowl, combine all the ingredients together. Use your hands or a large spoon to incorporate the meat, the onion, the herbs and the spices together.
• Add salt according to your taste.
• Shape and cook as desired.
Notes
• Minced meat should be 10 to 20 % fat.
