Chocolate Chip Banana Muffins
Made these last night, had three bananas to use so I improvised on a muffin recipe I've used for a long time. When you've done this as long as I have, you learn how much of each ingredient you'll have to adjust to fit what you've got to work with. After awhile, it's just instinct.
These turned out just about exactly what I generally shoot for: a dense but soft crumb, packed with whatever extra ingredient (choc chips, blueberries, etc), golden brown and crispy tops, tender and moist below.
I'll post the recipe later tonight...got kiddo's spring band concert, and I think it's going to be the first one with her playing violin instead of trumpet.
Ingredients:
3/4 cup (stick and a half) salted butter
2 cups granulated sugar
3 over-ripe bananas, mashed
4 eggs
4 1/2 tspns baking powder
2 tspns vanilla
1 tspn cinnamon
1 tspn kosher salt
3 to 3 1/2 cups flour
2 cups chocolate chips
3/4 to 1 cup buttermilk
Sprinkling sugar crystals
PREHEAT OVEN TO 400 DEGREES, Rack in center of oven.
Cream the butter, sugar, baking powder, vanilla, cinnamon and salt until fluffy. Add the eggs, one at a time, beating thoroughly between each. Keep the mixer going and add the mashed bananas and the buttermilk. Beat thoroughly, making sure the ingredients are all incorporated, turn the mixer to lowest speed and slowly add the flour, 1/2 cup at a time, until you have a thick, creamy batter. Add the chocolate chips and mix for a few seconds to distribute. Fill your large muffin cups to the top, and coat the tops with a liberal sprinkling of sprinkling crystals. Bake at 400 for 24-25 minutes, until golden-brown. Cool in pans for 20 minutes, then on a wire cooling rack until totally cooled.
Baker's privilege to have one while steaming hot, fresh out of the oven ;-)
These keep VERY well, thanks to the butter, eggs, and buttermilk. Fine on the countertop under a cake bell for at least 3-4 days, if they last that long!

hiiii my unsolicited advice for baking brownies is u do not want Ur knife to come away clean after the instructed baking time u want them to still be gooey in the middle and when they cool they will then become fudgey and moist 👍 white choc chips thrown in there will also make it taste sauuur good
yep i did read of a couple diff recipes i'll make sure they're moist in the middle, i have the basic recipe down but i'm debating on what i'll do to add some flair, i'm wondering whether i want to add extra chocolate to it, maybe espresso powder, maybe browning the butter before mixing it in etc etc

what kind of cookie texture do you generally like? the choc chip cookie recipe i use ends up with cookies that are preferably large and moist+tender on the inside (still a crisp outside but yeah) rather than a cakey and more fully crisp type of cookie. it's always been a hit when i make it but idk if that's the type of cookie you're looking to make)

How to make homemade Vegan Choc Chip Cookies
Ingredients
½ cup vegan butter (I used Nuttelex buttery)
¼ cup of white sugar
½ cup of brown sugar
1 ½ cups flour
1 teaspoon (2ml) baking soda
1 teaspoon vanilla
1 tablespoon (25ml) water
2 tablespoons vegetable oil
1 cup chocolate (I cut up a block and a half of vegan chocolate (Pico Salted Caramel – 80g per block) but you can use vegan chocolate chips or whatever you want!)
Utensils
Oven
Tray
Baking paper
Mixing bowl
Mixer machine
Measuring cups
Teaspoon size
Tablespoon size
Wooden spoon
Steps – Prior to cooking
Leave blocks of chocolate out to be room temperature
Leave out butter to be room temperature
Steps – Part 1
Preheat oven to 180c
Use mixer machine to beat the butter with white and brown sugar for 1-2 minutes until creamy
Add flour and baking soda and mix
Add water, oil, and vanilla and mix
Tips
The cookie dough should not be crumbly and should look moist and stick together well. If it doesn’t, use some water to get it just right.
Steps – Part 2
Fold in the chocolate bits with a wooden spoon
Start putting spoonful of cookie dough onto baking sheet and tray.
Bake for 12 minutes
Serves roughly 18 cookies. Takes 15 mins prep time, 12 mins cooking time.

Chocolate Chip Muffins
Ingredients
1 1/2 cups plain flour - spoon & leveled
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 tsp ground cinnamon
1/16 tsp ground nutmeg - optional
40g unsalted butter - melted and slightly cooled
1/6 cup (40ml) vegetable oil
1/2 cup granulated sugar
1 large egg - room temperature
1/6 cup (40g) yogurt - room temperature
1/2 cup milk - room temperature
1/2 tsp vanilla extract
200g chocolate chips
Coarse sugar - for sprinkling
Notes for next time
- This recipe made 12 muffins.
- Vegetable oil, canola oil, or melted coconut oil work best in this recipe.
- Full fat sour cream or full fat or low fat plain yogurt is recommended.
- Buttermilk or whole milk works best because either adds moisture and flavor. You can use any milk, dairy or nondairy, but the lower fat milk you use, the less flavorful and moist your muffins will taste.
- You can also use chocolate chunks or milk chocolate chips.
- All refrigerated items should be at room temperature so the batter mixes together easily and evenly.
- I definitely used way too many choc chips but it is what it is.

I'll throw my recipe in the ring if we're sharing. I underbake it so that it's a bit gooey but I think it's typically a pretty solid brownie
3/4 cup melted butter
1 cup of sugar (original recipe only called for white but I do about 1/3 brown and the rest white
2 eggs
1 tbsp vanilla
3/4 cup cocoa powder
1/2 cup flour
Uh 2 medium handfuls choc chips
I bake at 350 for 30 minutes then let sit in the oven to cool for ~10 to get my prefered level of moist. I think if you go for a full 40 minutes that would make more crispy. Also I'm in a pretty humid place so note that and I think if you left them on the counter to cool completely that would help. I typically put them in tupperware as soon as I can to trap moisture

My theory about why choco chips banana muffins don’t really carry the taste of banana is bc they get baked in the oven with the chocolate chips
Bananas are there to make the muffins moist and really soft and then the chocolate comes in and enhances the flavours there and it turns into this delicious taste that can’t be put into words

ya! I googled how to make them BIG and MOIST and everywhere said make sure your butter is COLD and use cornflour/cornstarch so this is KEY. . this is just a cobble of multiple tips i found lol, i will try to find an actual legit recipe somewhere.. but this is what I ended up with. also this in grams cos i am british and just do not understand cups :(
this makes 4! but could easily just be doubled or more if you need lots of cookies. -64g unsalted COLD butter - cube it quite small cos otherwise it will just not mix and will instead fly out the bowl.... -32g normal granulated sugar -48 grams soft brown sugar -1 large egg -1/4tsp salt -112g regular flour -0.5tsp cornflour/cornstarch -ok this step is weird but pour 64grams of regular flour out and take 1tbsp away, then replace the 1tsp with cornflour/starch. i’m sure there’s an easier way in grams to do this but i just didn’t work it out at the time. add this in with just the regular 112g you already have. i’m sorry i am very chaotic at baking. -1tsp vanilla extract OR if you’re feeling very sweet caramel extract was good too -0.5tsp bicarb soda - i just bought a bag of cooking chocolate chips from the store and dumped them all in there. tbh they pretty much take to anything! i baked some with biscoff and nutella inside. some with pecans. one with just a full reeses cup. Stuff whatever you like in there, honestly. it seems to work fine! even raspberries.. 1. cream butter/sugar/egg together. I did it for about 4 minutes with a handmixer. I don’t think it’ll work with just a regular whisk because of how hard the butter is (but i haven’t tried with soft butter, they may turn out alright just flatter!) 2. add in the egg and beat it in 3. add the cornflour, bicarb of soda, salt, flour and then the weird cornflour/flour combo loool and just mix it again! it turns into a dough pretty quick! 4. Add your chocolate chips and whatever else you want! with choc chips each cookie weighed around 115g! 5. don’t roll into a ball just kinda pick it up and let it be a rough shape. like a ball.... but not smooth... :). just doesn’t flatten as much when cooking and that’s good. put on a baking tray. they don’t spread a lot so it can be 4 to a tray. i didn’t measure the gap just kinda placed one just a little bit away from each corner. use greaseproof paper on grease your tray! i forgot once and... hm. 6. I cooked mine for 11 minutes on 190c. you will have to convert that on google to f! you want them to be a tiny bit golden on the edges! anymore than that and i’ve found the inside goes more cake-y. but if you find the perfect time with your oven they’re gooey and great! start checking them at maybe 10? I know some peoples ovens run hotter. i leave mine to cool for like.. 7 minutes because i like eating them warm when all the chocolate is melty still. but if you leave them half an hour they’ll still be soft and fine (defo less fragile when you pick them up) but.. we love the warmth.

Well, either it's the most moist cake in the universe or it wasn't 100% cooked properly. But it tastes nice and seems fine.
The recipe is very easy to follow even for people like me who can't follow recipes usually, but they are very sparse so you have to already know how to do things like cream butter and sugar or how to test when it's done.

This isn't quite the one I used though because I added 1 cup finely shredded beetroot, a little bit extra baking powde, swapped choc chips for dark chocolate drops, and forgot to slightly increase the flour to try and balance the added moisture from the beetroot. Apparently the recipe as written is very reliable and always moist.
I made a cake, because I am genius!
Or actually just a person that managed to overcome their fear and self-doubt and panic their way through a cake recipe.
Well, actually panic my way through modifying a cake recipe because I'm physically incapable of following instructions as written - even when I've only ever made 4 cakes in my entire life.
Chocolate, raspberry and beetroot.

god cooking is fun but im bad at it but im actually not terrible at baking and desserts--other than breaking eggs, which i still have to ask someone else to do because im a garbage baby
but Y E S ok desserts are, great. i admit i actually like cooking them more than eating them a lot of the time? especially most cake
although i do love strawberry cake,, my local grocery store’s generic bakery does this strawberry cake with whipped cream icing that tastes SO GOOD especially chilled. like idk bro that shit is good
chocolate cake is overrated but not disgusting (if its like Moist And Dense its pretty good especially with the right like, fudgey icing?) and vanilla is fine. better in cupcake form
as for like pie, i like pecan and certain kinds of chocolate pie a lot, i like apple and rhubarb but i might pick out some of the filling like a loser, pumpkin pie and coconut cream i can stand in small amounts bc unique flavor but not great texture. key lime and lemon meringue i ADORE in concept but in practice always seem to fail me. peach and cherry i just dont like im sorry :( i mean cherry is good if i just eat the cherry juice soaked crust like a heathen but pretty sure that doesn’t count

cookies,,, chocolate chip is boring unless very fresh and gooey and a little underdone so its like warm cookie dough but not dangerous, shortbread is great if done right but needs something with it, anything with raisins is trash, sugar cookies are only good if they’re those weird soft lofthouse ones, double choc is fine, white choc macademia nut is fine.... i can’t think of any others rn

uhhhHHHHH im sure im missing so many more desserts i know. some random other ones i’ve tried--churros (had some really good ones at one place and some really bad ones at another), sopapillas (always good but i somehow always make a mess), ice cream in general (strawberry and mint and superman are the best, chocolate sucks, and generally, i like frozen yogurt better. all good with caramel and like, turtle sundae kind of things), brownies (easy to get wrong but if right THE BEST), monkey bread (pretty good), doughnuts (almost all garbage), zeppoli (i liked the strawberry one, surprise surprise), uhhhhhhh im running out of desserts i can think of tbh fuck. uh, fudge, i like a lot of fudge, tbh, but in small amounts. don’t think i’ve had any i straight up hate although the maple nut one was kind of meh. (we used to go to this fudge shop on summer vacation to this same place because of like, family reasons, and we always got fudge so i tried a lot of different fudge. i even made some once!), cheesecake (good! i like it. my mom had a really good recipe for the plain stuff but she hates cooking so i never eat it), those french cream puff things? (nasty, flavorless, weir texture), those little cakes i used to get at my local chinese buffet that i don’t think were actually chinese but were very tasty (very tasty!! they sometimes had these little strawberry ones--I KNOW I KNOW STRAWBERRY LOOK IM A SLUT FOR IT OK), anything banana flavored that isn’t actually a sliced up banana (ew), custard (generally not that good?)..... that’s all i got for now i can’t think of anythng else but if you had any other specific ones in mind hmu (or if theres one i probably haven’t tried but you like you can tell me about it!)
