Microwave S'mores Mug Brownie

An easy treat with minimal clean up; in the microwave.

4 tablespoons flour

3 tablespoons sugar

1 tablespoon cocoa powder

1/2 tablespoon baking powder

3 tablespoons milk

1 tablespoon vegetable oil

1 teaspoon vanilla

2 tablespoons chocolate chips

1 graham cracker, crushed

1 large marshmallow

Directions

Mix all ingredients except the marshmallow in a 12-oz mug. Press marshmallow into center of batter and microwave for 1 1/2 minutes.

It’s hot and we’ve been busy... and I’ve been dealing with a lot of guilt. Rather than heating up the house, we’ve been buying goodies for men’s prayer night and because of this, there are rarely any “leftovers” for my love and he’s been jonesing for something sweet. And then I remembered something - when I was young girl, I would bake @jiffymixes cake mixes in the microwave for my dad. I wondered if I could do the same with the box brownie mix I had on hand. Yes. Yes you can. In 6 minutes I had the most delicious brownies. Soft. Chewy. Amazing!! I don’t use “jiffy” these days, but maybe I’ll try using a “Betty” or “Duncan” boxed cake mix for men’s prayer. Delicious microwave protein brownie! Who says eating clean has to taste bad! Ingredients: 1scoop of protein powder ( I use chocolate muscle milk) 1 egg ( or you can use the egg whites only, I do it both ways) 1/2 tsp of baking powder 1 tbs coconut flour ( I use organic) 1/4 cup of almond milk ( I use vanilla, some days I just use 1/4 c of water) Mix the egg and milk together wisk it till well mixed. Mix the rest of the ingredients in. I do this in a bowl. Less mess to clean up. You can add dark chocolate chips to it that's optional. Put in microwave And let it cook for 1 minute , different microwaves I notice required different timing I've done it one minute one microwave and had to do 1 min. And thirty seconds in another.
