Recipe 🌟1kg of cubed Meat (Beef or Lamb) 🌟Hot water as required (approximately half litre) 🌟Oil desired amount (roughly 2-3 tbsp) 🌟2/3 medium sized onions chopped 🌟4/5 Garlic Cloves grated 🌟1/2 inch Ginger grated (thumb size) 🌟2 chopped Green chillies (optional) 🌟Salt to taste Whole spices 🌟4 Green Cardamom Pods 🌟3 Cassia Bark broken chips 🌟2-4 medium sized Bay Leaves 🌟2 Black Pepper corns or 2 Black Cloves Ground spices 🌟1 tsp curry powder 🌟1 tsp coriander powder 🌟1/2 tsp cumin (zeera) powder 🌟1/2 tsp tumeric power 🌟2 tsp of hot chilli powder Method Heat the oil in a large saucepan (big enough to hold all the meat) add in all the whole spices followed by onion, ginger garlic as well as the meat cover and cook with the lid on over a medium heat for about 15/20 minutes. . Check back after 20 minutes add a dash of hot water if required and give it a stir cover and leave for a further 15/20 minutes. . Having cooked the meat for another further 20 mintues at this stage add in the ground spices and mix well, cook for a further 15/20 mintues stirring in between (at this stage you can add in a spoonful of Mr Naga). . How do you like your steak. Hubby and I had this steak at @goldencorral last night for dinner. ▫️ It’s only been recent that I have started asking for medium well. Yesterday they gave me a medium rare (I think) instead of a medium well, but I did not notice until I sat down. I gave it a try and liked and ate most of it. @littlespain is an awesome spot in @hudsonyards but unfortunately La Leña overcooked this @mindfulmeats 8yr old Holstein "Vaca Vieja" rib eye. It had a grainy texture, likely because it was so lean in addition to being overcooked. Pro-tip: lean beef - especially when dry-aged - cooks fast, so err on the side of undercooking.
