Looking for Ukrainian, Russian, and Eastern European comfort food? Grandma’s Deli has a wide range of prepared food, including various salads (beets, eggplant, couscous, kasha, cucumber, potato), stuffed cabbage, meatballs, fried fish, piroshky, pierogi, beef stroganoff, stuffed peppers, soups, and more. And they have a separate case of desserts – mostly cakes. Most of the items in the case are labeled (in English) though I didn’t see any prices. The prepared food is sold by weight. I’m not sure if they can heat anything up for you but most people take the food to go.
Eggplant & walnut salad: Big chunks of roasted eggplant, a bit of walnuts, very nice, lots of eggplant flavor
Buckwheat kasha: didn’t love the texture (a little mealy) but the flavor was fine
Beef meatballs in sour cream sauce: Really good. Tender, juicy, large meatballs in a sauce that was like a beef gravy but creamier. Lots of sauce. I put the sauce on my kasha.
Pierogi: Big pierogi with the classic mashed potato filling, sauteed with onions. I was looking for other fillings but they only had potato pierogi. Comforting.
Stuffed cabbage rolls: stuffed with rice and ground chicken in a light tomato sauce, not too salty, tender cabbage, lots of stuffing
The food was better than what you get at most delis. I think it was reasonably priced too, but I’m not sure how much anything was per pound. Grandma’s also has a small selection of groceries, including Ukrainian/Russian style cured meat, cheese, fresh produce, candies, frozen pelmeni, teas, etc. Grandma’s Deli is in a strip mall with parking.

Gołąbki mięsne na dwa sposoby: z ryżem i kaszą gryczaną

Są tak samo nasze, jak Ukraińców, Rosjan, Czechów, Węgrów, Niemców, a nawet Szwedów. Gołąbki nie są rdzennie polskim daniem, choć zawijanie kaszy z warzywami w liście kapusty wywodzi się z naszego kręgu kulturowego.
Przez wiele stuleci farsz gołąbków stanowiły kasze i ziemniaki, dopiero w XIX wieku zaczęto dodawać do nich mięso, a kasze wymieniać na ryż. W Rosji, na Białorusi i Kresach Wschodnich znane były gołąbki zawijane w liście kapusty kiszonej. Takie jada się tam po dziś dzień. Podczas wigilii podawane są z kaszą gryczaną i grzybami, zaś w ciągu roku z mięsem mielonym i kaszą gryczaną lub ryżem. Nie gotuje się ich w sosie pomidorowym, lecz piecze.
Zawsze frapowała mnie nazwa tej potrawy. Dlaczego właśnie taka i skąd się wywodzi? Franciszek Sławski w “Słowniku etymologicznym języka polskiego” (1952–1982) wyjaśnia, iż nazwa “gołąbki” (zdrobnienie od gołąb) - oznaczająca potrawę z kaszy i siekanego mięsa zawijaną w liście kapusty - jest prawdopodobnie zapożyczona z ukraińskiego “hołubci” (stanowi kalkę językową) i znana jest w polszczyźnie od XIX wieku.
Występuje również w podobnej formie w innych językach, por. ruskie “hołubci” (Aleksander Brückner “Słownik etymologiczny języka polskiego”) i rosyjskie “gołubcý”. Podobne formy nazywają także inne potrawy, np. serbskie i chorwackie dialektalne “golubići” (rodzaj klusek) i bułgarskie “gъlъbnik” (rodzaj obrzędowego chleba).
Sławski nadmienia jednocześnie, że nazwy zwierząt i ptaków są w językach słowiańskich nierzadko wykorzystywane do nazywania pieczywa i potraw, zwłaszcza obrzędowych (por. “byczek” kukiełka wypiekana na wesela, “gąska” rodzaj ciasta i in.).
Trafiłam też na informację, że onegdaj na dworach jadano faszerowane gołębie, zawinięte w liście kapusty. Stąd miałaby wywodzić się ich nazwa. Niższe warstwy społeczeństwa zadowolić się musiały kaszą z ziemniakami, zamiast ptactwa, w kapuście...
Nieczęsto przygotowuję to danie, bo nie jestem jego wielką fanką. Mam jednak w domu amatorów gołąbków, a czego się nie robi dla najbliższych? Najczęściej robię je tak, jak moja Mama - obgotowane liście białej kapusty wypełniam mieloną wieprzowiną z ryżem lub kaszą gryczaną i duszę we własnej roboty sosie pomidorowym.

Składniki: główka białej kapusty (ok. 1,2 kg) 1 kg wieprzowiny (łopatka, karczek, szynka) 70 g ryżu 70 g kaszy gryczanej 2 cebule jajko 1 l rosołu 700 g sosu pomidorowego domowej roboty (lub przecieru ze sklepu) przyprawy: liść laurowy, kilka ziaren ziela angielskiego, łyżeczka suszonego oregano, 1/2 łyżeczki tymianku, 1/2 łyżeczki papryki w proszku, sól i czarny pieprz do smaku Wykonanie:     Duży garnek napełnić do 2/3 wysokości wodą i postawić na gazie. Z kapusty usunąć rozchylające się, zabrudzone lub pokaleczone zewnętrzne liście. Ostrym nożem wyciąć głąb. Gdy woda zacznie wrzeć, osolić ją i włożyć kapustę kaczanem do dołu. Gotować przez około 10 minut na małym ogniu. Przewrócić kapustę do góry nogami i gotować jeszcze przez ok. 5 minut. Ważne: im większą kapustę wybierzemy, tym dłuższy czas jej gotowania. Wyjąć kapustę z wrzątku, przestudzić i po kolei zdejmować delikatnie liście, uważając aby ich nie uszkodzić. Z każdego liścia odciąć zgrubienia przy nerwie głównym liścia. Nastawić piekarnik na 180℃. Ryż i kaszę gryczaną ugotować osobno i odstawić do wystygnięcia. Mięso zmielić w maszynce i przełożyć do miski. Cebulę obrać, pokroić w drobną kosteczkę, zeszklić na odrobinie tłuszczu i dodać do mięsa (tłuszcz zachować). Dołożyć całe jajko. Doprawić solą i pieprzem (nie żałować przypraw, mięso nie może być mdłe!). Wszystko dobrze wyrobić dłonią, jak na kotlety. Wtedy podzielić masę na dwie równe części i do jednej dodać ryż, a do drugiej kaszę i ponownie dokładnie wymieszać, już bez wyrabiania. Z obu farszów uformować podłużne kotlety. Na każdym liściu układać kotlet i zawijać, jak krokiet (ściśle). Wykorzystać całe mięso. Zostawić kilka najbrzydszych lub nieforemnych liści do wyłożenia dna naczynia do zapiekania. Dno naczynia do zapiekania, garnka lub żeliwnej brytfanki wyłożyć liśćmi. Na wierzchu ułożyć gołąbki, końcówką liścia do dołu, aby się nie otwierały. Układać jeden obok drugiego, jak najściślej. Między gołąbki włożyć liść laurowy i ziele angielskie. Zalać rosołem, przykryć pokrywką i piec w piekarniku przez około 50-60 minut, aż kapusta będzie miękka. Jeśli wolimy gotować na gazie, włóżmy gołąbki do garnka lub brytfanki (wykładając liśćmi) pamiętając, aby pod spód podłożyć płytkę do gotowania. Gotujemy na małym gazie ok. 60 minut. Pod koniec duszenia wlać na wierzch gotowy sos pomidorowy, wzbogacony przyprawami (lub przecier pomidorowy). Dusić jeszcze ok. 10 minut, już bez przykrycia. Jeśli nie lubicie sosu pomidorowego, zrezygnujcie z niego lub zamieńcie na wywar z suszonych grzybów, zagęszczony śmietaną i mąką. Podawać z pieczywem lub gotowanymi ziemniakami.

Vocabulary: Korean Cuisine (한식)
Hey everyone! This week I have another vocab list to share with you -- one all about popular Korean dishes! 한식 is the Korean word for “Korean food”! I’ve made a vocab list in the past about food and drink, but I thought it’d be useful to learn about some Korean cuisine! Whether you want to support your local Korean restaurant during this difficult time or are planning on visiting Korea in the future, this list can help you learn more about some popular Korean dishes! Let’s start!
The main sources I used for this list are Wikipedia and this CNN article here! (Clearly there are many more popular Korean dishes than just the ones I listed here, but I think that these are the most popular ones from that CNN article!)
Bibimbap = 비빔밥
비빔밥 is a popular “salad of rice, mixed vegetables, rice, beef, and egg, with sesame oil and a dollop of chili paste for seasoning,” according to CNN.
Bingsu = 빙수
빙수 is a shaved ice dessert usually topped with red beans (known as 팥빙수), but can also be topped with things like condensed milk, fruit, ect. according to Wikipedia.
Bulgogi = 불고기
불고기, literally meaning “fire meat” is “thin, marinated slices of beef or pork grilled on a barbecue or on a stove-top griddle,” according to Wikipedia.
Galbi = 갈비
갈비, which means “ribs,” can refer to meat like chicken or pork, but it generally refers to “thick slabs of meat marinated in a mixture of soy sauce, chopped garlic, and sugar and grilled over a proper fire,” according to CNN.
Gimbap = 김밥
김밥 resembles sushi, but is made of “sauteed vegetables, ground beef, sweet pickled radish, and rice, rolled and tightly wrapped in a sheet of laver seaweed,” according to CNN.
Gopchang = 곱창
곱창, according to CNN, refers to the “small intestines from pork or cattle, which, chopped into rounded sections, can be cooked into soups, stir-fried, or grilled.”
Haemul Pajeon = 해물파전
해물파전 is a seafood pancake. It is typically made with shellfish, cuttlefish, and other kinds of seafood according to CNN.
Hero’s Soup (hangover soup) = 해장국
Made with “beef broth, with cabbage, bean sprouts, radish and chunks of congealed ox blood,” as CNN states, 해장국 is perfect for treating a hangover! This is a must especially considering Korea’s prominent drinking culture.
Japchae = 잡채
잡채 is a  side dish (반찬 means side dish in Korean) consisting of cellophane noodles, vegetables, and pork all sauteed in soy sauce.
Jjajangmyeon = 짜장면
Originally a Chinese dish, 짜장면 is noodles topped with a sauce called 짜장, which is made with 춘장 (aka Tienanmen sauce), soy sauce, meat, seafood, and vegetables.
Kimchi = 김치
김치 is a staple -- it’s a popular traditional and slightly spicy 반찬 made with fermented vegetables, namely napa cabbage. 
Kimchi stew = 김치찌개
김치찌개 is made with, of course, 김치, tofu, meat or seafood, cellophane noodles, and vegetables.
Naengmyeon = 냉면
냉면, sometimes called “cold noodles,” are buckwheat noodles served in a meat or kimchi broth, and “topped with slivers of radish, cucumber, and egg, and seasoned with vinegar and Korean mustard (겨자)” according to CNN.
Ramyeon (instant noodles) = 라면
라면, or instant noodles, are pretty much self-explanatory and perfect for a quick meal!
Samgyeopsal = 삼겹살
삼겹살 means “grilled pork belly” and is usually wrapped in vegetable leaves and topped with 쌈장, a thick spicy paste. It is eaten in one mouthful and commonly followed by a shot of soju (소주), a popular alcoholic drink.
Samgyetang = 삼계탕
삼계탕 is soup that is made with a whole chicken and according to Wikipedia is “filled with garlic, rice, jujube, and ginseng.”
Sundae = 순대 
순대 is a kind of sausage. It’s pig intestine stuffed with cellophane noodles, meat, and vegetables.
Tteokbokki = 떡볶이
떡볶이 are spicy rice cakes. They are soft and cylindrical in shape.

Hfththf, I’ve had the BEST IDEA of doing a food blogging project of a series of meals inspired by each of Guy Gavriel Kay’s novels, using a mixture of actual historical recipes from the locations they were inspired by and new fantasy-ish ones. It’ll take me two or three years probably because i want to rehearse the recipes first, but i’ve been doing a lot of research and it would essentially be cosplaying with food, klkdjkl.

Vegetarian Diet

The vegetarian diet involves abstaining from eating meat, fish, and poultry. People often adopt a vegetarian diet for religious or personal reasons, as well as ethical issues, such as animal rights. Others decide to become vegetarian for environmental reasons, as livestock production increases greenhouse gas emissions, contributes to climate change, and requires large amounts of water, energy and natural resources.
The most common types of a vegetarian diet include:
Lacto-ovo-vegetarian diet: Eliminates meat, fish, and poultry but allows eggs and dairy products.
Lacto-vegetarian diet: Eliminates meat, fish, poultry, and eggs but allows dairy products.
Ovo-vegetarian diet: Eliminates meat, fish, poultry, and dairy products but allows eggs.
Pescatarian diet: Eliminates meat and poultry but allows fish and sometimes eggs and dairy products.
Vegan diet: Eliminates meat, fish, poultry, eggs, and dairy products, as well as other animal-derived products, such as honey.
Flexitarian diet: A mostly vegetarian diet that incorporates occasional meat, fish, or poultry.
Health Benefits
Vegetarian diets are associated with several health benefits.
Studies show that vegetarians tend to have better diet quality than meat-eaters and a higher intake of important nutrients like fiber, vitamin C, vitamin E, and magnesium.
 May Enhance Weight Loss
 Switching to a vegetarian diet can be an effective strategy if you’re looking to lose weight. One review of 12 studies noted that vegetarians, on average, experienced 4.5 more pounds (2 kg) of weight loss over 18 weeks than non-vegetarians. Similarly, a six-month study in 74 people with type 2 diabetes demonstrated that vegetarian diets were nearly twice as effective at reducing body weight as low-calorie diets. Plus, a study in nearly 61,000 adults showed that vegetarians tend to have a lower body mass index (BMI) than omnivores — BMI being a measurement of body fat based on height and weight.
 May Reduce Cancer Risk
 Some research suggests that a vegetarian diet may be linked to a lower risk of cancer including those of the breast, colon, rectum, and stomach. However, current research is limited to observational studies, which cannot prove a cause-and-effect relationship. Keep in mind that some studies have turned up inconsistent findings. Therefore, more research is needed to understand how vegetarianism may impact cancer risk.
 May Stabilize Blood Sugar
Several studies indicate that vegetarian diets may help maintain healthy blood sugar levels. For instance, one review of six studies linked vegetarianism to improved blood sugar control in people with type 2 diabetes. Vegetarian diets may also prevent diabetes by stabilizing blood sugar levels in the long term. According to one study in 2,918 people, switching from a non-vegetarian to a vegetarian diet was associated with a 53% reduced risk of diabetes over an average of five years.
 Promotes Heart Health
Vegetarian diets reduce several heart disease risk factors to help keep your heart healthy and strong. In a recent study, 118 people found that a low-calorie vegetarian diet was more effective at reducing “bad” LDL cholesterol than a Mediterranean diet. Other research indicates that vegetarianism may be associated with lower blood pressure levels. High blood pressure is another key risk factor for heart disease .
Foods to Eat
A vegetarian diet should include a diverse mix of fruits, vegetables, grains, healthy fats, and proteins. To replace the protein provided by meat in your diet, include a variety of protein-rich plant foods like nuts, seeds, legumes, tempeh, tofu, and seitan. If you follow a lacto-ovo-vegetarian diet, eggs and dairy can also boost your protein intake. Eating nutrient-dense whole foods like fruits, vegetables, and whole grains will supply a range of important vitamins and minerals to fill in any nutritional gaps in your diet.
A few healthy foods to eat on a vegetarian diet are:
Fruits: Apples, bananas, berries, oranges, melons, pears, peaches
Vegetables: Leafy greens, asparagus, broccoli, tomatoes, carrots
Grains: Quinoa, barley, buckwheat, rice, oats
Legumes: Lentils, beans, peas, chickpeas.
Nuts: Almonds, walnuts, cashews, chestnuts
Seeds: Flaxseeds, chia, and hemp seeds
Healthy fats: Coconut oil, olive oil, avocados
Proteins: Tempeh, tofu, seitan, natto, nutritional yeast, spirulina, eggs, dairy products
Foods to Avoid
Lacto-Ovo vegetarianism, the most common type of vegetarian diet, involves eliminating all meat, poultry, and fish. Other types of vegetarians may also avoid foods like eggs and dairy. A vegan diet is the most restrictive form of vegetarianism because it bars meat, poultry, fish, eggs, dairy, and any other animal products.
Depending on your needs and preferences, you may have to avoid the following foods on a vegetarian diet:
Meat: Beef, veal, and pork
Poultry: Chicken and turkey
Fish and shellfish: This restriction does not apply to pescatarians.
Meat-based ingredients: Gelatin, lard, carmine, isinglass, oleic acid, and suet
Eggs: This restriction applies to vegans and lacto-vegetarians.
Dairy products: This restriction on milk, yogurt, and cheese applies to vegans and ovo-vegetarians.
Other animal products: Vegans may choose to avoid honey, beeswax, and pollen.

Lunch: Burrito bowl with brown rice, beans, avocado,     salsa, and veggies
Dinner: Vegetable paella with a side salad

Summarizing:
A balanced vegetarian diet with nutritious foods like produce, grains, healthy fats and plant-based protein may offer several benefits, but it may increase your risk of nutritional deficiencies if poorly planned.
I tried to put all the basic nutrition needed for a body like vitamins, carbohydrates, protein, fats, iron, and others in my diet plan. My regular diet is very irregular and unhealthy mostly junk and eating at one time sometimes make you happen to eat more which causes weight gain. My usual meals were from outside only like McDonalds, Tim Hortons, Osmos, Wendy’s, Pizza Pizza. So basically all the junk and anytime, meals were never scheduled. Well after following this diet for a week, it was refreshing! I was more energetic at work, also more attentive. I felt good about my body like what I am eating. It was a sufficient meal for a day and there was no overheating. I was not even hungry in between and in each meal I was full. I would for sure continue it and maybe can change after a month or so. It was a great experience.

Nacula Food
Food are grown on huge fields on large farms cared by a number of families that gain free food out of it, animals raised for such purposes, fished out of the sea, or bought from other countries, along with many ingredients. The food which does not go directly to families are sold on markets or brought to grand feasts that are a part in some of the countries many festivals.
Much of the food in Nacula is very spicy, and is noted for the number of side dishes that accompany it's steam-cooked short-grain rice. Salted and fermented vegetables are served at nearly every meal. The meat is often seafod, cattle (cows, sheep, pigs, horses, often crossbred with elephants for size these days, and hens, often crossbred with birds of prey for defense), forest animals (foxdeer, and ravenhare mainly), and snakes. This is usually served with various vegetables and spices (commonly garlic, ginger, chili peppers, red pepper, black pepper, cordifolia, mustard, chinensis, leeks, spring onions, pepper flakes, lime, onions, radish, tomatoes, apples, lotus roots, cabbage, cucumber, potatoes, sweet potatoes, spinach, bean sprouts, scallions, seaweed, zucchini, mushrooms). Other common ingredients in the food are fermented red chili paste, sesame oil, fermented bean paste, a variety of nuts (candlenut, chestnuts, hazelnut, almonds, cashew nuts, gabon nuts, pistachio nuts, walnuts, pine nuts), coconuts, and dragon fruit. Grains are one of the most important staples of their food, with grains such as barley and millet were the main staples and were supplemented by wheat, sorghum, and buckwheat aside from rice.
They also have medicinal food, which is a wide variety of specialty foods prepared and eaten for medicinal purposes, especially during the hottest 30-day period in the lunar calendar. Hot foods consumed are believed to restore energy, as well as sexual and physical stamina lost in the summer heat. Commonly includes chicken, black goat, eel, carp, beef bone soups, and pig kidneys.
Naculian foods can be largely categorized into groups of "main staple foods", "subsidiary dishes", and "dessert". The main dishes are made from grains such as a bowl of rice, porridge, and noodles. Many foods rely on fermentation for flavor and preservation, resulting in a tangy, salty, and spicy taste. Soups are a common part of any Naculian meal, served as part of the main course and as an accompaniment to rice along with other food. Soups are often made with meats, shellfish and vegetables, and can be made into more formal soups as well which often is served as the main dish of the meal. There are a third type too, which is a thicker, heavier seasoned soups or stews. Other dishes are fermented vegetable dishes in an endless variety, served as side dishes or cooked into soups and rice dishes, usually making enough of these to last for the entire winter season. And then there are side dishes, including grilled dishes with meat or fish as a primary ingredient (usually cooked at the center of the table over a charcoal grill, surrounded by various side dishes and individual rice bowls, after which the cooked meat is cut into small pieces and wrapped with fresh lettuce leaves, with rice, thinly sliced garlic, and other seasonings), steamed dishes either made with meat or seafood-based ingredients or made with vegetables stuffed with fillings, raw dishes and raw fish dishes, savory pancakes made from various ingredients (chopped fermented foods or seafood mixed into a wheat flour-based batter and then pan fried, tastes best when dipped in a mixture of soy sauce, vinegar, and red pepper powder), and heated vegetable dishes. There are also special side dishes usually consumed with alcohol.
Usual drinks to food is tea, fruit punch, a sort of non-alcoholic sweet rice drink called sikhye, persimmon punch, honeyed water, and dew liquor, an alcohol made from rice or barley and consumed straight.
Nacula also puts a lot of eight in tea in relaxation and harmony in their fast-paced festival-heavy culture, especially in tea ceremonies, although their approach to tea is an easy and natural coherence, with fewer formal rituals, fewer absolutes, greater freedom for relaxation, and more creativity in enjoying a wider variety of teas, services, and conversation, especially compared to other Atian countries.
A lot of desserts in Nacula are made with grain flour, honey, sugar, fruit, and edible roots. The main sweet type of Nacula is a large variety of rice cakes, but also things like a pastry composed of fine strands of honey and maltose, often with a sweet nut filling, pancakes filled with edible seeds, and fish shaped pastries stuffed with sweetened red bean paste.

Borsch is the flagship of Ukrainian cuisine, widely known abroad. It is a vegetable soup with beets at the heart of the dish which give it its characteristic color. It can be served either hot or cold. When hot, it resembles a stew, and it may include some meats. On the other hand, when served cold is a soup that is normally accompanied by sour cream as the perfect seasoning. Being such a well-known dish there are many recipes for making borsch, almost to the point of each household having its own.
Kapusnyak is cabbage soup, and, as the name suggests, cabbage or sauerkraut is the main ingredient. It can be fresh or pickled, depends on the acidity the cook wants in the taste of the dish. It includes several more vegetables and is usually prepared with pork stock.
Rassolnik is a meat or fish soup with pickled cucumbers which give the soup a distinctive tart flavor. This dish can also include offal, cereals or vegetables. Rassolnik is believed to be a great hangover cure.

Varenyky is the name for Ukranian dumplings, and it’s also one of the most popular national dishes next to borsch. You can find dumplings filled with cherries or cheese, or even with potatoes, mushrooms, cabbage or meat. With a sweet filling, they can even become a dessert dish. Varenyky are also a typical Christmas meal in Ukraine.
Baked ham is a typical Easter meal in Ukraine. The whole piece of meat, usually pork hip, is baked with sauce or butter. It goes as a snack or even a separate hearty dish, often served with bread.
Zrazy is a meat roulade. The slices of meat are rolled and stuffed with rice, buckwheat, mashed potatoes, etc. While zrazy is originally a Lithuanian food, Ukraine has its own version of the dish, called potato zrazy. This variant uses a potato mash instead of meat for the outer layer. Therefore, it’s a potato bun filled with vegetables, mushrooms, eggs, etc.

Good drinks in Ukraine are greatly appreciated. Most popular drinks are usually those obtained due to fermentation such as mead (an alcoholic drink made of a fermented mix of honey, water, and yeast), nalyvka (a homemade wine made of fermented cherries and several types of berries) or kefir (fermented milk, similar to yogurt). Uzvar and other compotes are also loved here.
Vodka as a kind of national drink turned out only in the XIV century, but a vast number of tinctures are made using it as a basis, especially several liqueurs made from berries, fruits, even dried fruits. One of the most famous Ukrainian alcoholic drinks based on vodka is Varenukha. It consists of mixing vodka with dried fruits, honey, and spices. It is served hot, after cooking it without bringing it to a boil.

As a fellow stuffed cabbage eater I'm intrigued by your mother's Serbian version! I've yet to branch out from the standard 'rice, ground meat, and bacon' filling cooked in a tomato sauce - one of these years I'll get around to experimenting with buckwheat and wild mushrooms...
