Delightful Rakshabandhan Recipes.
Rakshabandhan is celebrated across India and Nepal and falls on the full moon day of the Shravan month of the Hindu calendar. Raksha means protection and bandhan means means " to tie". On this day, the love between brothers and sisters is celebrated and the sister ties a rakhi (a thread like thing with fancy adornments) around the brother's wrist. The brother in turn vows to protect the sister and showers her with gifts. The sister pampers the brother with lots of sweets and goodies and prays for the well being of the brother. Days before festival, you can find local shops selling colourful rakhis which may be just a simple thread or something more elaborate with embellishments. Rakshabandhan is a day to reaffirm the brother-sister love and a time for the entire extended family to get together and indulge in the festivities surrounding it. It is a day to indulge. We feature here some easy to make recipes for Rakshabandhan by Neha Mathur of Whisk Affair.
AATE KA HALWA /WHOLE WHEAT PUDDING.
INGREDIENTS
Ghee / Clarified butter - 1 cup
Whole wheat flour - 1 cup
Almonds - 10-12 ( Chopped )
Cashew nuts - 10-12 ( Chopped )
Water - 2 cups
Sugar - 1 cup
Cardamom powder - 1 tsp
INSTRUCTIONS
Heat ghee in a heavy bottom pan.
Add whole wheat flour and fry on medium heat for 10 minutes.
Keep stirring continuously.
Add the chopped nuts and fry for another 10-12 minutes, until the color of the flour is changed to dark brown and it starts to emit a nutty aroma.
Keep stirring continuously and do not let the flour burn.
Once the flour is done, add 2 cups of water and cook the water is almost absorbed by the flour.
Add the sugar at this stage and cook the halwa for another 3-4 minutes.
Add cardamom powder and mix well.
Garnish the halwa with slivered almond and Pistachios and silver foil.
Serve warm or cold.
KESAR MALAI PEDA.
INGREDIENTS
Chenna ( home made ) - 250 g
Fresh cream - 100 g
Khoya - 100 g
Cardamom powder - 1 tsp
Saffron - 15-20 strands ( Soaked in 2 tbsp milk )
Sugar - 1 cup
Almond and pistachio slivers for garnishing
Silver foil for garnishing
INSTRUCTIONS
Add Chenna, Khoya and fresh cream in a non stick pan and cook on medium heat till it starts to leave the sides of the pan.
Keep stirring continuously.
Add cardamom powder, saffron soaked in milk and sugar and cook for another 3-4 minutes.
Remove the pan from heat.
Let the mixture cool.
Knead the mixture nicely with the heels of your hands until it is smooth.
Divide the mixture into equal portions and shape them into round pedas.
Make designs on top if you have a design press.
Garnish with almond and pistachio slivers.
Apply silver foil on top.
MASALA MATHRI.
INGREDIENTS
All purpose flour - 2 cups
Refined oil - ¼ cup
Salt - 1 tsp
Ajwain / Carom seeds - 1 tsp
Garam masala powder - ½ tsp
Dry pudina powder - 1 tsp
Red chilli powder - 1 tsp
Kasuri methi - 1 tsp
Black pepper powder - ¼ tsp
Hing - ½ tsp
Ghee - 2 tbsp
Chaat masala - 2 tsp
Oil for frying
INSTRUCTIONS
Add all purpose flour, oil, salt, ajwain, garam masala powder, dry pudina powder, red chilli powder, kasuri methi, black pepper powder and heeng in a bowl.
Mix nicely till crumbly.
Add little water and knead to make a stiff dough.
Cover the dough and keep aside for 30 minutes.
Divide the dough into small balls.
Roll each ball into a 2 inch disk.
Prick the disk with a fork all over to prevent it from puffing up.
Make all the mathri in the same manner.
Heat oil in a pan.
When the oil is slightly hot, add a few mathries and fry on low heat till golden brown.
Do not over crowd the mathries in the pan.
It will take around 12- 15 minutes for each batch to fry.
Keep turning the mathries while frying.
Remove the mathries in a plate and let them cool.
Do not increase the heat otherwise the mathries will be raw from inside and will get burned from outside.
Once cooled, store in an air tight container for up to a month.
Serve with ginger tea or mango pickle.
KESARI SANDESH
INGREDIENTS
Full cream milk - 1 liter
Lemon juice - 1 tbsp
Powdered sugar - 4 tbsp
Milk powder - 2 tbsp
Cardamom powder - 1 tsp
Saffron - A pinch soaked in 1 tbsp milk for a few hours.
Dry fruits for garnishing
INSTRUCTIONS
Boil milk in a heavy bottom pan.
When the milk comes to a boil, add lemon juice.
Simmer the heat and let it cook for a minute.
Line a big bowl with muslin cloth and pour the curdled milk in the cloth.
Let the whey drain.
Hang the cloth on the tap of your sink for an hour to remove all the excess whey.
Take out the chenna on a clean surface.
Add powdered sugar, milk powder and cardamom powder.
Mash with the heels of your hands for a minute.
Take a non stick pan and cook the chenna for a minute, to remove all the excess moisture.
Let it cool for a few minutes.
Take small amount of chenna in your palms and slightly mash it.
Make small rounds and flatten them a little bit.
Make a depression in the center.
Make all the sandesh in the same way.
Brush the sandesh with saffron milk.
Sprinkle dry fruits on top.
They are best eaten the same day although you can store them in an airtight container in refrigerator for 2 days.
MASALA KAJU/CASHEWNUTS IN AIR FRYER.
INGREDIENTS
Cashewnuts - 250 g
Ghee - 1 tsp
Coriander powder - 1 tsp
Red chili powder - 1 tsp
Garam masala powder - ½ tsp
Black pepper powder - ½ tsp
Black salt - 1 tsp
Salt - ½ tsp
Dry mango powder - 2 tsp
INSTRUCTIONS
Add all the ingredients in a bowl and mix well.
Line the cashew nuts in the basket of the air fryer in a single layer.
Set the Air Fryer temperature at 120 degrees C and air fry for 10 - 15 minutes, until crispy and golden brown.
Remove the cashew nuts from the basket and let them cool.
Store in an airtight container for upto 2 weeks.
