Masal Vadai made in Vancouver.

When you make masal vadai make the vadais and keep them in a plate while the oil is getting heated. You can make the vadais all in one size and it is easy to drop in the oil quickly and they get cooked uniformly.Repeat the process when one batch is getting fried. Proportion: 1 cup- split peas 1/2 cup-chana dhal(Bengal gram) 4-red chillies 4-green chillies 1 tsp- fennel seeds salt as needed For adding in the dough: 1/4 cup finely chopped shallots 1 tsp finely chopped ginger A few torn curry leaves.

No nonsense Masaal Vadai- Mixed Lentils Spicy Donut

Try my masal vadai recipe, which is crispy outside and soft and flavourful inside.
Ingredients:
1 cup -split pea yellow lentils
1/2 cup- chana /gram lentils(small chick peas)
2 tsp- fennel seeds
4- red chillies
1-green chilli
1 tsp finely chopped ginger
1 tbsp- finely chopped cilantro
a pinch of asafoetida(perungayam)
1/2 cup finely chopped onion 
salt to taste
oil to deep fry.
If you like, add a tsp of garam masala powder.
Steps:
Soak the lentils for 2 hours. Drain water and grind coarsely with  chillies, fennel seeds, onion and salt. Add the cilantro. Mix well. Heat oil in medium flame. Do not fill more than half. Take a small ball of the batter , flatten , by placing the ball in your left palm and and pressing with your right hand fingers in a gentle patting motion. Drop a tiny ball into the oil and if floats to the surface the oil is heated enough. Drop vadais just to cover a surface and do not over crowd them. Flip when they turn golden brown and remove and drain when both sides are done.
Simple , yet so tasty and flavorful.
