Rhubarb Mint Margarita
Say cheers with a Rhubarb Mint Margarita! Give margaritas a springtime twist with a simple syrup made with rhubarb and mint!
Every morning the birds have been chirping me awake – and not the alarm on my iPhone (which, funny enough, is the ringtone I use to wake up!) – but the ones outside my window, which are apparently very busy and chatty at around 5:30 am. Their springtime chatter makes me feel like Snow White each morning, waking to their early chirps, and if there wasn’t a screen on the window, I’m convinced they would fly in and perch on my bed for a conversation!
It’s spring, my friends, and to make it feel more official, I spotted my first bunch of rhubarb from the market! And this spring week is extra special since we are celebrating my husband’s birthday. I plan on making his favorite rhubarb cake, but we really need to toast with something special, so that calls for a Rhubarb Mint Margarita.
Margaritas are one of my favorite cocktails, and I love how adding a simple rhubarb mint syrup elevates the drink and adds that sweet and sour tang which makes so much sense in a margarita!
How can you go wrong with rhubarb, mint, and tequila? I can’t think of a better way to celebrate spring…and spring birthdays!

Rhubarb Mint Margarita
3 oz Tequila
1 oz Rhubarb Mint Syrup see recipe below
1 oz lime juice
1 teaspoon Cointreau
1 wheel of lime
1 rhubarb ribbon (thinly sliced rhubarb)
Rhubarb Mint Syrup
1/2 pound rhubarb cut into 1/4-inch pieces
1 1/2 cups water
1 cup granulated sugar
1 sprig mint
Rhubarb Mint Syrup
Place the rhubarb and water in a saucepan over medium heat and bring to a low boil. Lower heat and simmer for 5 minutes or until the rhubarb is tender.
Puree in a food processor or using an immersion blender and strain through a fine strainer or cheesecloth, discarding solids. Return the rhubarb to the saucepan, along with the sugar. Simmer for about 5 minutes.
Remove from heat, drop in mint, and completely cool.
Strain and store in a glass container in the refrigerator until ready to use.

Calamondin Margaritas
This is my favorite time of year for so many reasons. The days are longer, it's starting to warm up, and summer parties are just around the corner!
It's also the time of year when my very talented blogger friend (and fellow Ramos!), Kate, rounds up a group of food and cocktail bloggers from all over the country (possibly even world?) and has us join in for a very fun margarita & tequila-themed week of blog posts!
In previous years, I shared recipes for Fresh Ginger Margaritas and Rosemary & Fresh Watermelon Margaritas.
This year? I'm going super tart (and kinda niche) with fresh Calamondin Margaritas!
If you've never heard of calamondin, get excited!
Also known as calamansi or kalamansi lime, these tiny little tart citrus fruits are a cross between mandarins and kumquats. They look like key limes when young, but as they ripen, the skin becomes bright orange. The skin is thin like a kumquat, but full of super tart and slightly floral juice that you can instantly release with just a gentle squeeze between two fingers.
It's an incredible flavor and if you can get your hands on fresh ones, don't hesitate to try and play around with them! They make wonderful homemade marmalade and pickles, and the juice is excellent for using in marinades.
The trees are actually quite easy to grow in a sunny home (I have a few friends who grow them even here in NYC) and will produce fruit all year long. Some grocery stores occasionally carry fresh fruit (I've found them at Whole Foods and Fresh Direct at different times of year, as well at some street fruit stands.)
If you can't get your hands on the fresh fruit, a lot of Asian (especially Filipino) markets sell frozen juice, which is pretty great, too, and perfect for cocktails.
When it comes to cocktails I'm all about two things--spice and acidity. I like my drinks super tart with a hint of spice, and calamondin juice lends itself well to both those things. Instead of a traditional salt rim, I use my DIY Spicy Citrus Cocktail Salt, which adds the perfect little extra kick to take these over the top!
These calamondin margaritas would be a welcome accompaniment to all kinds of summer meals, from tacos to pork roasts.

Calamondin Margaritas (Calamansi Margaritas) Serves 4
Ingredients 1 cup reposado tequila 1 cup calamondin juice (freshly squeezed or thawed frozen juice will work) 1/2 cup Cointreau Ice, kosher salt for garnish (or use my DIY Spicy Citrus Salt)
Directions Combine the tequila, calamondin juice, and Cointreau in a large pitcher and stir well to combine.
Rub the rim of four high ball glasses with calamondin juice (or use fresh lime), and dip in kosher salt. Fill glasses to the top with ice and divide margarita among the glasses.
Serve immediately.

This Fresh Fig Margarita is made with a homemade fig simple syrup, along with honey and a dash of orange juice for the perfect amount of sweetness.
It’s fig season and also almost Cinco de Mayo so obviously these fresh fig margaritas HAD to happen. Well, had for me, HAVE TO for you. It’s also #margaritaweek, so be sure to check out that hashtag on Instagram!
Confession: I’m not hooked on figs the way a lot of people are. I like them, but I still like a lot of other fruit better. However, I’ve seen and drank a lot of margaritas, so I wanted to create something unique that would most definitely catch my attention if I were to see it at a restaurant. Enter: a fresh fig margarita.
Actually, let’s back it up.
Margaritas are my drink of choice these days, so on nights when I go out, I typically start out with a margarita or two before switching over to wine because…. #variety. ANYWAY, what I’m trying to say is that I can easily spot a good margarita from a bad one, and this my friends is a good one. Also I’m completely biased since it’s my own recipe, but that’s beside the point.
This fresh fig margarita recipe is made by creating a simple syrup made of—you guessed it—fresh figs, and then adding honey and a little orange juice. The end result is seriously delightful and just the right amount of sweet.
So even if you weren’t planning on it, please tell me that you’re now considering celebrating Cinco de Mayo? Or at least margarita week aka drinking a margarita every day leading up to Cinco de Mayo. Is that too much? No, I didn’t think so. Bring on all the tacos and margs!!
Fresh Fig Margarita

Ingredients
¼ cup fig syrup (see below)
⅓ cup orange juice
2 tbsp honey
2 oz. tequila
1 oz. triple sec
Club soda
For the fig syrup:
12 fresh figs
1 cup water
½ cup sugar
Instructions
Start by making the fig syrup: combine figs, water and sugar in a saucepan and bring to a boil. Then, reduce heat to a simmer and simmer for 15-20 minutes, allowing the figs to break down.
Pour syrup through a fine mesh strainer and into a jar; store in the refrigerator.
To make the margaritas: add fig syrup, orange juice, honey, tequila, and triple sec to a cocktail shaker and shake until combined.
Pour into two glasses filled with ice, then top them off with club soda.
Enjoy!
