actually the "a mandalorian and a jedi? they'll never see it coming" line is about dinluke. it's literally din talking to luke about how they're gonna be traveling the galaxy together in search of jedi artifacts and force-sensitive children/beings in need of their help. they're gonna be jumping through star systems raising hell (but most importantly raising grogu !!)

Jaster, Tor and Montross
 I have already complained about Star Wars Fact Files’ lack of objectivism in regard to Tor Vizsla, particularly how said source tried to present him as a man taking pleasure from hurting others while ignoring an intended nuance of his character. The other reason why I’m displeased by this attempt is the fact we actually have a Mandalorian who enjoys killing for the pleasure of it and his name is Montross - the former True Mandalorian and comrade of Jaster Mereel and Jango Fett who without remorse abandoned Jaster for death even though the man saved his life a mere moment ago (an act for which Montross was expelled from True Mandalorians)

and who became a Bounty Hunter that “hunts mainly for sport, not money, invariably killing his prey”.
As Montross personally said, he hunts for the thrill alone, for the moment when prey begs for mercy only to take a life:
Montross: Vosa’s here… waiting for one of us to put her out of her misery. It’ll almost be a shame to kill her. Imagine Jango… the power to send thousands of mindless assassins willingly to their death, to plunge the galaxy into anarchy. Jango Fett: Not much money in anarchy. Montross: The money means nothing. The thrill of the hunt drives me. The moment my prey begs for mercy. The moment I take his life.

This is the guy that takes pleasure in inflicting pain on others, not Vizsla. And sure, Tor won’t blink an eye when it comes to killing civilians, including women and children, but the use of violence is more often than not framed as a mean to fulfill Death Watch’s goals (terrorizing Fett family to learn enemy’s whereabouts, killing people of Galidraan to frame True Mandalorians). Killing Jaster Mereel is as much personal as it is pragmatic choice to destabilize the enemy army while the last duel between Vizsla and Fett feels definitely as personal matter - one Tor may actually enjoy, as he wanted to “handle [Jango’s death] personally” however at the same time, the limited narrative does show us the progress in how Tor address his opponent: from “boy”

And mind you, Tor keeps addressing the original leader of True Mandalorians (the enemy) just as Jaster even decades after man’s death, while the attitude toward much younger Fett was changing with the development of events. 
Similarly, Jango Fett: Open Seasons comics stated that Jaster Mereel saw Mandalorians solely as high-paid soldiers (while the “bringing back Mandalorians to honorable ways comes solely from the tie-in source material like History of the Mandalorians or The Complete Star Wars Encyclopedia to name few) thus violence too was just a means to fulfill the goal of getting good paycheck.
Montross on another hand is not motivated by money or any ideology as he hunts for the pleasure of hunting alone and enjoys killing people begging for their life. Something that no other True Mandalorian or Death Watch member was shown to do on the comics pages while Tor and Jango had their “revenge quest” thus killing for personal matters.
In that sense we may say that Tor and Jaster accept violence as part of their life but beyond it there is still a goal to accomplish - be it the alleged conquering the galaxy or reforming Mandalorians (or alternatively, being high-paid soldiers) while Bounty Hunter Montross is living in the moment; once hunt ends, he will seek another, to feel again the thrill of killing.
So if you want to point out the one Mando that gets a great kick out of killing and suffering of others, (Bounty Hunter) Montross is your man, not necessarily Tor Vizsla.

Jango Fett Open Seasons: Retreat vs. fight no matter the cost
Another detail from Jango Fett: Open Seasons that I find very telling about characters is their approach to retreat. I’m specifically want to talk about the  four major Mandalorians - Tor Vizsla, Jaster Mereel, Jango Fett and Montross as they all were at some point in the story put in situation when they needed to decide to continue fight no matter the cost (in theory the ideal Mandalorian warrior mindset) or to prioritizing their people’s life (a choice testifying to good leadership). And yes, those situations weren’t always exactly the same yet similar enough to see the implied(?) similarities in theoretical dissimilar characters.
So we have Jaster Mereel, the original leader of True Mandalorians. During a mission on Korda Six, when Mandalorians came across the enemy's heavy fire (and Jango ordered his people to find cover), Jaster gave an order to regroup at Jango’s location - the safest place and abort the air strike.

And once it became clear, they made a mistake to rely on second-handed intel - but before they learned it was Death Watch's trap - Jaster decided to abort the whole mission. Something quite different from what Jango will teach his son decades later (“Your loyalty, your honor – these are the things that matter. When you accept a mission, when you give your word, it is all that matters.”)

Montross however refused to regroup at Jango's location

and continued the attack, stating "we've never abandoned a mission!"

Montross survived thanks to Jaster who personally came to his aid only to betray his leader and leave him behind once Tor showed up. And while he tried to take command of True Mandalorians, he did order an evacuation, as the "Jaster's last order still stands" argument.

Then we have Tor Vizsla who during Jango’s attack on Death Watch’s ship, ordered everyone to evacuate.

And now, let’s talk about Jango Fett who started very much minded like Jaster, what was the best visible on Korda Six. The mission was his first official role as Squad Commander but he didn’t allow pride or desire to make Jaster proud to take over common sense. When it became clear his men were under too strong enemy’s fire, he ordered them to get into trenches / find cover.

However on Galidraan, as a leader of True Mandalorians, when he already knew they walked again into Death Watch’s trap, instead of  de-escalate threat of the Jedi by at least trying calm down the situation and presenting what is going on behind the scene- and mind you, the Jedi did not have all facts but Fett already met Vizla at Governor's residence and as he wore helmet at that time, most likely had recorded this, not to mention all Mandalorians could present what they were doing and where they were via the recording from helmets - Fett ordered to open fire. And the Jedi naturally responded as such.

(And really, if Fett was smarter he could at least try to turn Jedi against Death Watch).
This is even more surprising choice as Jango's first reaction upon seeing Republic shuttles before even meeting eye to eye with Jedi was to call his second-in-command to order an evacuation.

Which is pretty ironic, that both Jaster and Tor, despite their ideological differences, were at some point shown to prioritizing their men’s safety by ordering retreat / evacuation, while Jango started as similar minded (Korda Six and upon seeing Republic shuttles on Galidraan) but once Jedi showed up, his attitude changed into “no running, fight whatever the cost�� which not only led to great tragedy but made him more like Montross.

The way she watched me as I worked, her soft gaze tracing the way I moved over the weapons I was cleaning, the way she would leave clothes around the ship, and the way she listened to even the most gruesome stories I have.
It was somewhere between those times that I fell in love with her.
“Are we going?” She’d ask me excitedly, ready for any adventure. 
I did everything in my power not to give into her. 
She moved as if there was a flame beneath her. Wild, sprinting, flailing, yelling, and laughing.
She was a fighter. Brutal. Vicious. 
But when it was just us.... She was softer than anything I had ever known.
But I can't sleep next to a body
Even harmless in death
Plus, I'm pretty sure I'd miss you
And faking sleep to count your breath
The endless nightmares where she’d wake up screaming and find her self on a different part of the ship than the bunk she slept in, those screams broke me in ways I never knew anything could. 
Her innocence stripped with one heinous, tortured, scream. 
I’d always find her and walk her back to bed, careful not to touch her or linger too long. I knew I'd ask if she wanted me to stay with her if I did... God, did I want to stay with her. Hold her in my arms and protect her from the evils of the galaxy.
The way she gently cleaned my wounds, even be them just grazes to soft flesh, made my heart ache. 
Can the killer in me
Tame the fire in you?
Or is there nothin' left to do for us?
There were nights that I thought nothing would come of the small touches we shared, or the time that had elapsed since we started traveling together. 
The night of the fire.
I had went back to Peli for a repair before a fire broke out in the ship yard. I had never been terrified before this... not of the flames, but of finding her.
We stayed the night in a small, dingy hotel with a smell of mold that hung in the warm air. 
I sat on the end of the single bed with my head in my hands, scared of what was to become of my ship.
Her small hands reached to touch one of my armor clad shoulders, a sign of reassurance that only sent waves of electricity through my body.
I couldn’t help but think of the concern that washed over her face all the way to the hotel, never breaking the stare that she held against me. 
I watched her face as the innkeeper said he only had availability for one bed rooms. She just nodded in compliance. I was expecting a grimace. 
There was nothing in the world I wanted more than to touch her and to hold her against me. I wanted to feel her soft hands on my bare face, telling me everything was going to be alright.
I knew that would never happen for me. I was loyal to the creed even if it broke my heart.
I am sick of the chase
But I'm hungry for blood
And there's nothin' I can do
The only way that I knew to show my devotion and love for her was through protecting her... even if she could do it herself, it felt good to keep her safe. Keep her with me.
As I sat on the bed, she sat next to me, close enough so I could feel the heat radiating from her body.
“Are you hurt?” I asked. 
“No.” She answered too quickly. 
“Youre lying, let me see.”
She seemed too exhausted to fight with me and complied by lifting the back of her shirt over her shoulders and letting me examine the cracked, fire burnt, angry red skin of her back.
“Cyar’ika...”. The word tumbled out of my mouth and I could only hope that she didn’t know its meaning. I felt vulnerable, as if all of my armor had been stripped.
She winced as I spread the blue bacta across her back. It took a few minutes but I could feel the muscles in her back relax under my touch.
“Thank you... Din.” She whispered. The way she said my name made me want to cry.
“You can have the bed... you’re in pain” I said solemnly, making my way to the floor next to her. 
“Would you mind staying with me tonight?”
Her soft whisper wrapped its way around my throat and It made me unable to speak. I just laid beside her.
She traced the lines of my helmet and she was shaking.
“Youre safe now...” I whispered, scared to put my hands on her in fear of hurting her and breaking my own heart. I knew I couldn’t have her... even if I could, how could someone like her look into the eyes of a vicious killer like myself? Someone who constantly put her in danger and couldn't even kiss her?
“I know.” She answered back, making me smile softly even if she couldn’t see it.
