That it tastes like a grandmother cooked it. Mine. Your's, someone else's. I present #Ofadarice and sauce with #dodo, #friedplantain. The rice is locally grown in the West of Nigeria. This particular one comes from Ogun state. It's a short grain rice that's is streaked with brown/ red like those coloured beans - it isn't completely stripped of its hull. The stew, sauce also known as #ayamase or #designerstew is where the 'grandmother' comes in. It has 'native'/ 'local' flavour. Cooked with palm oil and spiced with fermented #locustbeans aka #iru in Yoruba or #une in Igarra, my language. The Locust beans add such #umami to the tomato and pepper sauce. And pungency. This sauce can't hide itself. No matter, we love it. The meat in it is bite-sized. Fried. Deep-fried, I suspect. I don't eat this everyday. Don't worry. Locust beans vary in sauces. In this, it is a chewable entity. And I love it. Often it dissolves into the soup or sauce but here..... its like rice and beans. #ilove. The plantains are a nice accompaniment, diced. Oh dinner.
