Ah the joys of leftovers! Went a bit overboard with the portions last night - the inlaws were staying so I automatically went into dinner party mode. 🍚This was inspired by a large container of white rice from the local Chinese restaurant that was leftover. Remember that enormous shoulder of @langholancs organic lamb I cooked in middle eastern spices earlier in the week? And the Harissa chops? Well, it didn't all get eaten so here's a remodel with the leftovers... Moroccan lamb pie. I sautéed red onion in butter and added cinnamon, cumin, turmeric and allspice. Whilst that was softening I added the lamb to my Ninja blender until it was minced. The lamb went back in the pan with the spices onions, couple of stirs and into a shallow roasting dish sprinkled with carrots and some salt and pepper. For the mash I steamed cauliflower and blended with feta and butter until smooth then spread on top as a 'mash'. Popped into the oven at 200c for 20mins whilst I steamed some broccoli and peas. Easy peasy revamp meal. Well THAT was fun and exciting. Leftovers for lunch. {again, and I'm not complaining either 😉} I warmed grass-fed butter with lemon, garlic, green onion, and crushed red pepper. I used that as a dressing to make a lovely 'pasta' salad with zucchini spirals and also as a dipping sauce for fresh crab that was leftover from moms party. 😋😋😋 #leftoversRoCk

Leftovers for lunch. God I love leftovers. I purposefully make too much food in the evening so my lunch is sorted the next day 🙈😂 Last night we had a BBQ in the sunshine for Edward's birthday. @theholliesfarmshop gluten free sausages, @bearfaceduk #grassfed beef mince for home made burgers, @ocadouk @wholegood #aubergine oven roasted with crispy onions and feta, carrot salad fresh from the local field by @groobarbswildfarm alongside their peppers and courgettes and superb tomatoes roasted in the oven. Yum scrum. If you don't like prepping or don't have time then just make more for dinner and set aside a portion for the following lunch.
