Ca’ del Bajo Barbaresco Vallegrande Riserva Viti Vecchie 2018 🐎🍷🌟 • • • • Presentato alla @laciaudeltornavento in grande stile ecco il nuovo nato di @cadelbaio dal vigneto omonimo , solo nebbiolo michet, dal tannino ricchissimo e sfaccettato grazie all’ annata classica. Un vino molto piemontese e dalla fitta matrice tannica, rugosa ma caratteriale. sorso profondo e ricco, in cui si avverte il 20% di grappolo intero , vispo ed enormemente festoso nei profumi di viole, more, rabarbaro e incenso , molto più serioso nella espressione. La Ciau del Tornavento

Dinner at Michelin-starred La Ciau del Tornavento was one of the culinary highlights of my trip to the Langhe region! As soon as the door opened I was immediately enchanted by beguiling aromas of white truffles (swipe left)! Better still, the incredible wine cellar, which I was able to tour after dinner (pics 8-10), is arguably the best in all of Italy! . Based on a helpful suggestion from @wineignorant I had been eyeing Roberto Voerzio wines and they had a great selection!With enthusiastic encouragement from the sommelier, I selected the single-vineyard Cerequio Barolo from the outstanding 2001 vintage. The wine did not disappoint! Aromatically, it was similar to Bruno Giacosa Barolo in that it had lots of earthy notes. After an hour in the decanter, it opened up beautifully and reminded me of an excellent Burgundy! . As for the cuisine, there were numerous truffle courses that caught my attention. Following a couple starters, I had my daily fix of Tajarin pasta with white truffle. This amazing dish instantly became one of my all-time favorites and I had it every day of the trip! . Before I could experience post-Tajarin depression, the cheese trolley swaggered over to the table. In addition to my usual favorites (Epoisses and Roquefort-style cheeses), I chose a Gorgonzola cheese that was later buried in a pile of shaved white truffle! The fresh honey served straight from the honeycomb (pic 6) perfectly complemented the cheese (as did a glass of Sauternes). To complete the truffle trifecta, I finished the night with ice cream with white truffles. While there was not as much synergy between the truffle and ice cream, it was fun to try and each ingredient was outstanding! .
