As a test, I made Garcia’s recipe with warm tap water (about 100°F), with the hottest tap water I could get (around 130°F), and with water just off the boil (around 200°F). With the tap waters, the dough took longer to come together and had some snapback when I rolled it out, and thus stayed a touch thicker. The tortillas also had a little more chew.
But with the almost boiling water? The dough is immediately soft, supple, and smooth. It rolls out thin like a champ, browns beautifully on the griddle, and stays soft when it cools. In truth, it feels like cheating.
Perhaps my tortillas have a little less complexity, texture-wise, than those of Sonoran-style perfectionists. But now I can make really good flour tortillas fast enough at home that I can have them ANYTIME I WANT—which, naturally, is always.

QUEZON CITY, April 10 (PIA)--The local government of Las Pinas initiated the distribution of nutribuns in addition to the food packs being distributed to its residents affected by the Luzonwide enhanced community quarantine due to COVID-19 pandemic.
In an interview over Radyo Pilipinas Friday, Mayor Imelda Aguilar said the city government has received flour donations which they use, through a partner bakeshop to produce the nutribuns.
Aguilar said, they were able to produce 5000 pieces of nutribuns from the 10 sacks of flour donated to the city government.
The mayor said, they will continue producing nutribuns since they notice adults and children alike appreciate the nutritous bread aside from the fact that it's a ready to eat staple.
Moreover, Aguilar said they also distribute nutribuns to frontliners who tirelessly work to combat the crisis brought by COVID-19.
Aguilar applealed to her constituents to be more patient in waiting for the Social Amelioration Package and assured tham that whoever are eligible to receive the SAP will get it after thorough evaluation being done by the Department of Social Welfare & Development (DSWD). (PIA-NCR)

Delicious & Light Breakfast Muffins for the Summer
There’s something amazing about the aroma of freshly baked muffins and tea-cakes. Store-bought muffins can be made with refined flour and loaded with sugar. It’s best to bake these at home, with wholesome ingredients. Get baking with these decadent muffin recipes:
• Rocket, Feta & Olives Muffins
Start with mixing oats flour, fresh rocket leaves, butter, sea salt, eggs, chopped black olives, lemon juice, zest, thyme leaves, and feta cheese. Fill a muffin tray with batter and bake at 350 degrees for 20 minutes. Allow the muffins to cool. This savory muffin is a great treat for a summer luncheon.
• Pina Colada Muffins
This muffin is made with fiber-rich chia seeds and seasonal tropical fruits. To make the batter, mix oats flour, chia seeds, pineapple slices, grated coconut, coconut oil, and coconut sugar. Fill muffin molds with batter. Top with toasted coconut flakes and bake at 350 for 15 minutes. These muffins are a perfect breakfast treat
• Blueberry Muffins
Start with mixing almond flour, thyme leaves, blueberries, chia egg, coconut sugar, butter, and a pinch of salt. Pour into a greased muffin tray. Bake at 350 degrees for 15 minutes and serve warm.
• Apple Crunch Muffins
In a large mixing bowl, add oat flour, coconut sugar, ground allspice, eggs, melted butter, a pinch of salt, applesauce, cinnamon, crushed walnuts, and dried cranberries. Scoop the mixture into a greased muffin tray. Bake at 350 degrees for 20 minutes, until cooked. Serve warm with a chai tea latte.
• Chocolate & Orange Muffins
To make the batter, mix almond flour, cocoa powder, dark chocolate chips, orange juice, zest, coconut sugar, eggs, and butter. Get the best chocolates online from Choko La in Delhi NCR. Pour in a muffin tray. Bake at 350 degrees for 20 minutes. Cool the muffins before serving.
• Fig & Goat Cheese Muffins
Add fresh chopped figs, crumbled goat cheese, thyme leaves to standard muffin batter. Pour the batter in a lined muffin tray. Bake at 350 degrees for 20 minutes until its golden. These delicious savory muffins are best served with a side of green leafy salad.
These muffins are so delicious that you should bake a big batch at a time. Make these muffins for the nest Sunday brunch and you’ll have guests coming back for more. You can also put them in fancy wraps and add to a homemade gift hamper. Consider adding some summer teas, preserves, cookies along with these muffins.

Colours to be defined. _______ Soil/ furniture a la pina bausch. Dragged and moved about. _______ I worry that its pretentious it might look stupid. I feel it needs some absurdity, some element of surprise in the presentation. Humour.

Hummingbird arrives in Cuba
Two and a half days after slipping lines in Mexico, we arrived in Cayo Largo, Cuba. According to the local marina master, Cayo Largo was a favourite of Fidel himself, though he also told us that we shouldn’t go swimming in the marina on account of the crocodile, so it’s maybe best to take everything with a pinch of salt here.
The last few hours of the passage were spent looking out for trees dotted along the islands which form the archipelago south of the main land, directing us to our destination. We made our way in through reefs and mangroves, and through crystal-clear water, into the palm tree decorated marina about mid-afternoon.
After some celebratory Mojitos and Pina Collada in the marina bar, followed by a meal in the local restaurant where we were serenaded by a quartet of Cuban musicians with “happy traditional” tunes and songs about Che Guevara, the crew were all ready for a decent night sleep alongside. Without any danger of being called up to put in a reef or take the Yankee down and back up again, and with no rolling beds to deal with, everyone slept beautifully, ready for the next adventure.
Today has been spent ashore on the Playa Serena, which is one of the top ten beaches in the world for sand quality according to Natural Geographic (though again this came from the Marina master). Getting to the beach, we could believe this one to be true however, as the sand was an incredible white, almost as fine as flour, and wasn’t hot underfoot at all. We’ve spent the afternoon in the shade of a palm tree, relaxing ready for the next passage to the Jardines de la Reina – the gardens of the queen.

MANILA – San Miguel Corporation (SMC) has donated over 8,400 sacks of flour to local government units (LGUs) and bakeries in Metro Manila to keep small businesses afloat while ensuring that affordable and nutritious loaves of bread are available to their respective communities.
A 25-kilogram bag of flour can make about 1,600 pieces of pandesal.
SMC president and chief operating officer Ramon Ang said the donation of flour, the main ingredient in making bread, will supplement the local government units’ food rations and provide added nutrition needed to help keep citizens healthy against the Covid-19 pandemic.
“The local government units need all the support they can get in making sure that their citizens do not go hungry and are free from an illness during the Covid-19 pandemic. Aside from our food donations, we’re providing them flour for them to bake bread,” Ang said.
This, he added, will also provide some relief to small bakers struggling to stay afloat.
The flour donations were distributed to Manila, Caloocan, Las Pinas, Makati, Malabon, Mandaluyong, Marikina, Muntinlupa, Navotas, Paranaque, Pasay, Pasig, Quezon City, San Juan, Taguig, Valenzuela, Pateros.
Outside of Metro Manila, SMC has also donated to Batangas, Bulacan and Nueva Ecija as well as to four army camps and two non-government organizations.
Many of the LGUs have started partnering with their local bakeshops to produce pandesal, nutribun and other kinds of bread to be sold at a discount to their constituents. The bread was also produced for distribution to impoverished communities as well as front-liners, including medical workers who are serving at local hospitals.
He cited as examples the cities of Navotas, which has distributed SMC’s flour donations to 32 bakeries in exchange for discounted bread sold to its residents, and Valenzuela, which engaged local bakeries to make bread to be distributed for free to front-liners.
“By engaging the local bakeshops, we are also helping sustain these small businesses that were affected by the lockdown and have experienced a loss of income. We will devise more ways to make sure that food donations will be available to everybody and to those who need it most,” he said.
Apart from Metro Manila, SMC has also started donating flour to cities and barangays in the neighboring provinces of Batangas and Bulacan.
Ang gave assurances that SMC will continue to help the national government and the LGUs in fighting off the Covid-19 pandemic any way it can, and by ensuring a stable supply of food in groceries, supermarkets, wet markets, and other distribution channels.
At the start of the enhanced community quarantine, SMC assured the public that it had sufficient stocks to last for at least six months and that its plants would run 24/7.
On a daily basis, SMC produces 2.11 million kilograms of flour/baked goods (flour, biscuits, pandesal, and nutribuns); 1.96 million kilograms of fresh meats (poultry, beef, and pork); and 524,000 kilograms of processed meats (canned meat, nuggets, and hotdogs).
“Once again, we want to assure our kababayans that food supply is stable and there is no need to hoard. While we are doing this, we are also keeping in mind those who do not have enough money to support themselves and their families,” Ang said.
To date, SMC has donated a total of PHP220-million worth of canned goods, meat products, biscuits, bread, and coffee, for distribution to depressed communities through the LGUs, non-profit organizations, charitable institutions, and church-based groups.
It has also doubled its commitment to donate 500,000 kilos of rice and has so far sourced 1.1 million kilos of rice worth PHP38 million for delivery to beneficiary communities and families. (PR)
