Tästä currysta tuli oikein kelpo arkiruoka. Joskus kyllä aion vielä opetella tekemään aitoja intialaisia curryja, mutta siihen asti nämä helpot arkiset karvalakkiversiot saavat kelvata.

HELPPO LINSSICURRY

4 annosta

1 ½ dl kuivia vihreitä linssejä

1 sipuli

2 valkosipulinkynttä

1 rkl inkivääriä raastettuna

1 porkkana

250 g miniluumutomaatteja

2-3 rkl rypsiöljyä

2 tl curryjauhetta

1 tl garam masalaa

1 tl jauhettua korianteria

1 tl sipulijauhetta

suolaa

chilihiutaleita maun mukaan

400 ml kookosmaitoa

1 limen mehu

tuoretta korianteria

riisiä tarjoiluun

Huuhtele linssit ja laita ne kiehumaan suolalla maustettuun veteen. Keitä linssit niin, että ne jäävät aavistuksen raaoiksi ja valuta vesi pois.

Silppua sipuli ja valkosipulinkynnet. Raasta inkivääri. Kuori porkkana ja paloittele se pieneksi. Halkaise miniluumutomaatit.

Kuumenna paistinpannussa öljy. Lisää mausteet ja kuullota hetki. Lisää sitten sipulit, porkkana ja inkivääriraaste. Kuullota, kunnes sipuli alkaa pehmetä. Lisää pannulle sitten miniluumutomaatit ja jatka kuullottamista muutaman minuutin ajan. Kaada sitten kookosmaito pannulle.

Lisää pannulle vielä linssit ja jatka keittämistä miedohkolla lämmöllä, kunnes neste on hieman haihtunut ja linssit ovat aivan kypsiä (noin 5 minuuttia). Mausta lopuksi limen mehulla.

Silppua curryn joukkoon reilusti tuoretta korianteria ja syö curry riisin kanssa.

Huomioita reseptistä

Voit halutessasi korvata kuivat linssit tölkkilinsseillä. Suunnilleen vastaava määrä on reilu tölkillinen (noin 300 g) valmiiksi keitettyjä linssejä.

Riisin tilalle voit keittää lisukkeeksi myös kvinoaa.

Curryn joukkoon sopii mainiosti muutkin kasvikset, kuten kukkakaali ja kesäkurpitsa.

Meetwurstipizza

Tämä herkullinen meetwurstipizza sopii hyvin pizzaperjantain herkuksi. Pohja on tehty pääasiassa kukkakaalesta. Täytteinä tässä on käytetty ultrakevyttä meetwurstia, tonnikalaa ja paprikaa. Lisukkeena on vielä hieman salaattia ja tomaattia. Bon apetit!

KUKKAKAALIRIISI (sokeriton, vhh, gluteeniton, maidoton, munaton, vegaaninen)

Alkuperäinen ohje täältä (minimalistbaker.com, luettu 4.10.2017).

Ainekset: kukkakaalia haluamaasi öljyä paistamiseen Ohje:

1. Pese kukkakaali ja raasta sitä raastinraudan isoilla rei’illä haluamasi määrä.

2. Painele halutessasi talouspaperilla nestettä pois raastetuista hipuista (tarttuvat herkästi paperiin, siksi jätän yleensä tämän väliin).

3. Paista paistinpannulla keskilämmöllä muutama minuutti, kunnes ”riisissä” on pikkuisen ruskeaa pintaa.

4. Käytä riisinkorvikkeena vaikka kanan kanssa. Loppuhöpinät:

Ei ihan riisin makuista, mutta ei erityisesti kukkakaalinkaan makuista, kun tätä käyttää jonkin ruoan lisukkeena. ”Riisiä” voi maustaa oman maun mukaan, vaikka currylla tai pippureilla.
