Kapoon sometimes spelled Khao poon (ເຂົ້າປຸ້ນ), khao poun, or khao pun, is a spicy rice vermicelli soup that is also known as Lao laksa. It is a very popular Laos soup. @flavorsofbaesia great job on this awesome soup. I've had a lot of soup in my time and never tasted the flavors I did in this soup. Ladies I look forward to your next dish. #kapoon #khaopoon #laos #sanjose #sj (at San Jose, California) https://www.instagram.com/p/CF8VSDmju2cJ1xBYmbJA1smrm92Z0sHTood7YE0/?igshid=1bljc8k7ogqmt

I said, "Daddy, I wanna eat kapoon." He said, "Say less, I got you." And badabang badaboom! Now I'm not the favorite but being first on his call list has its perks. 😁 #DaddysGirl #FoodComa #Blessed https://www.instagram.com/p/CZU57cRvNKn/?utm_medium=tumblr

Which asian food stains the worst? (My mom says it’s kimchi lol)
That’s easy. For me, it’s Khao Poon (we call it Kapoon):
Pretty much any type of noodle, soup, or curry dish will easily stain because of all the sauces, spices, and ingredients involved lol

A Recap of Thailand:
April 9, 2018
What a wonderful country. However, either due to stark contrast in culture shock and amount of westernization or the nature of the program I was involved in, I didn’t feel as immersed in the culture. But there were still great people to be met. My roommates, Hannah and Daisy, along with other program pals, Karla, Marie, Will, and Brent. Of course I connected with some people more than others, but I generally enjoyed everyone.
From the beginning, I found it a bit difficult to live in the moment instead of missing my time and friends in Sri Lanka. The heat was much more intense here as well. It was more touristy than I would have hoped for. I got a weird heat rash. Elephant poop (probably) smeared on my face. Major homesickness at some points. I felt a little aggravated with some for not adjusting to the culture, when in reality, I probably took the same amount of time while in Sri Lanka. Spent a bit, not much, more money than I expected to. Was bitten by a monkey. But that’s the majority of issues I had, and the positive, as always, far outweighed these fleeting road blocks.
I was able to reconnect with international friends. Visit the Unicorn Cafe. eat delicious, authentic Thai food. And even better, drink loads of Thai tea-- seventeen to be exact. My first hospital experience. Most wouldn’t list this in a pros column, but it wasn’t serious, only cost me seventeen dollars and an hour of my life. Plus it’s a hilarious memory. Elephants. Dogs. Waterfalls. Mom’s visit. More Thai food. Two massive storms. Snorkeling. Kayaking. New friends. More Thai and German vocabulary. Children. Pristine beaches with only minor sunburns. Air conditioned buses. A western cowboy bar. Meeting the Mafia… not really. A (temporary) tattoo that I managed to convince everyone back home that it was real. A culture week, elephant sanctuary, temple school, Hua Hin, and the fishing village.
Many memories, good and bad, in a short five weeks. Overall, I still love Thai people, Thai food, Thai humor, and now my memories from Thailand.
I could see myself living there or staying for a longer period of time in the future, but I can now choose a new country to cross off my bucket list. Probably Germany. But for now, Nepal lies ahead.

Recipe: Quick Kapoon (Lao Chicken and Coconut Soup)
Recipe: Quick Kapoon (Lao Chicken and Coconut Soup)
Quick Kapoon. Quick Kapoon is thanks to some member quotes on the Lao and Asian Kitchen Cooking Facebook group; I faithfully followed the House of X Tia recipe but realized I could get almost the same result with some dramatic shortcuts. For those not familiar, Kapoon is similar to the Thai soup called Tom Ka Ga. It’s a beloved taste of home for Lao people; any mention or picture online produces…

Day 16
Hello! I was not able to write my day 15 yesterday since it was a pretty busy day yesterday, so instead I’ll have to write it today on the same day I post my day 16 sharing. Anyways, day 15 was really busy for me! I went to sleep pretty late the day before, so I woke up around 12 yesterday. However, I was not expecting any guests, especially my nieces and nephews! Okay, I kid, I knew they were coming. However, it was a pleasant surprise to wake up to their loud entrance. They came over mainly because their mom bought cake at St. Paul. So the whole day that day, I spent time playing with my nieces and nephews. I also played games on Jackbox with them! The classic favorites for our family. It was a really fun and exiting time, but I also needed some time for myself here and there the whole day.
Jackbox Party Pack: $24.99 Jackbox Party Pack 7: $29.99
We also had cake that day. It was a lot of cake eating that day because there were two cakes: one for my sister and one for my brother’s wife. It was her birthday (or it was), so we decided to surprise her by getting a cake and wishing her happy birthday. The cake was a tres leches cake, so it was very good, but the cake also had a lot of whip cream. It was a bit too much for me though so I had a hard time eating it...
This was the cake! It was pink and had a lot of fruits, as decorations and flavor. I wasn’t able to take the whole picture since I came late however.
I also consumed Kapoon again! It is the red curry noodle soup that many of my family likes, so we eat it quite a lot. This time I was able to help though! Because there was already so many people helping, I was only able to help a little bit though. I helped rinse the mint and by the time everything was done, I was useless again. However, I didn’t sneeze this time! Though, it was really hot like always.
A bowl of Kapoon!
