i've basically forgotten what i did today. except i made a mess of my table twice and had to clear a space by swiping my arm across it and taking everything with it. that was honestly really funny.
i managed to clear some junk out of my backpack, and i got to organize my box a little better, and i even had some protein today. it was just a mess most of the day.
i did get to put some new pins on my backpack - i now have the human realm squad, king, and eda pins on my bag. i've got connected teatime huntlow pins and a jumbo flapjack, and now the rest are on and the pocket is all owl house. i like it. it's uneven, but if i can find a camila pin and a clover pin, i'll be all set.
after work i headed to the bank to pick up some cash for nancy - we split the first checks i was able to get, which was plenty anyway, so since the deposits were finalized today, i was able to grab that and also reload my starbucks card.
i went and worked with the kids, going over spelling with one, multiples of six and penmanship with the other, and then nutrition with their mom. lots to do, lots got done. i also made sure the baby stopped crying. he's a hefty chonker who can move. and by god does he have a set of lungs on him. sheesh. it's a wonder nancy has any brain cells ever with all the noise and chaos.
after that i went and got dinner with kristen at margaritas. she's been dealing with a lot and i'm always happy to both lend an ear and eat mexican food, so it was nice to spend time with her. we also got ice cream and we talked about random things. it was nice.
then i came back to joel's and sat down and started cutting out stickers because joel had to do something for work starting at 9pm? i was so confused. but i spent a while cutting and trimming and i discovered im damn good at making round things consistent, in that i cut four and they're within less than half of a millimeter in diameter from one another.
eventually i decided it was time for bed and i packed my stuff up, stickers to be applied and others to be trimmed at a later time, so i went to bed, but i had to fix the sheets first. i didn't want the fitted sheet to roll me up in my sleep. it's done that before.
but the good news is joel came upstairs not long after that. now he's curled the other way in bed and he's probably halfway asleep.
also in my writing i have discovered that my writing block happens because i'm trying to force an idea that doesn't want to be written. now that i'm following the scenes in my head, it flows much easier and it's so much better than it was before. i never could figure out what writers mean when they say they're not the ones writing the story, that they're not making up stories about characters, but that the characters write the stories themselves and that it's not a voluntary thing, almost. but i get it. holly and fuchsia have their own plan. i'm just a witness. and honestly it's cool. now that i'm kinda just following them, i'm definitely more inclined to follow their path for a little longer before saying goodbye, but only surgery will tell me if that's feasible.

Chocolate nut raw protein bars
OK here's today's line up AND the at-home version.
No LIDL version available, sadly for my wallet. They do have a cocoa orange nakd knock off but I don't like those so there you go.
All are GF but none are soy free.
Clockwise from top right we have:

80p per 35g bar, 4g protein. Good moisture to bite ratio and strong, rich almost coffee like chocolate taste, with a treacle note that is coming from the raisins in the mix. Density managed via chicory fibre which seems to be the go-to for a lot of things. A slightly more attractive product to look at than the Nakd bar but that is not a high bar. Addition of peanuts and actual chocolate chips makes this much tastier and interesting than the nakd bar it is a copy cat of, but gram for gram it is actually pricier.
TREK PROTEIN
£1 per 45g bar, 7g protein. The answer to "what if we made nutella miserable?" A chonky literal brick of a product with substantial heft and 0 joy. Paler than the M&S version as it has more nuts and no raisins. Peanut flour and chicory fibre make up almost 20% of this and it shows. I have a lot of time for nakd as they were the only vegan treat in town for a while but this thing is a sad dry lump. Eating it is an experience in dutiful chewing and leaves your jaw sore. Honestly you are better off just eating nuts. I pity the hazelnuts in this product.
TRIBE PROTEIN
£1 per 38g bar, 5g protein. The objectively tastiest of them all, basically a layer of soft date paste on a slightly crunchy chocolate flapjack-esque base (probably cold pressed but could be baked not 100% sure) then topped with nuts making it feel like the fanciest. Protein comes from "soya protein crispies" which sounds like a terrible breakfast product. Addition of oats makes it not-like-the-other-ones but it sits in the same taste zone so I included it. Different textures make it interesting and it is my current fave for with afternoon coffee.
THE AT HOME VERSION
Goals here were to keep the chocolate goodness, make it soy free and improve on the cold-pressed bars by making them moist and softer. Getting the hard texture that the packet versions have probably involves a level of dehydration that I have no interest in.
I included oats as chicory fibre isn't particularly available and I needed a dry binding agent. I had jumbo oats in and they needed a bit of crumbling to make them finer but I refuse to keep multiple grades of oat in the house as my flat is small and I am not quite that obsessed.
I added a chopped chocolate and peanut top because it makes the final thing look nicer as well as giving it variety in texture. Initial versions I mixed these in like the M&S bar but I prefer it with them on top.
I didn't bother with hazelnuts and stuck with peanuts but obviously you can substitute.
Final texture is akin to a chocolate brownie - it has that gooey chew.
Makes approx 12 40g bars at 16p each - price will flex depending on how cheap you can get your dates, I am blessed with a large turkish store on the corner.
200g chopped stoned dates (buy cheap ones this is not the time for fancy medjool)
100g peanut butter - I had smooth but crunchy will work
100g GF oats
15g cocoa
Vanilla essence
Pinch salt
15g chopped dark chocolate (LIDL)
15g chopped roasted peanuts (I used salted, YMMV)
* soak dates in boiling water (just enough to cover) for 10 mins, drain and smush dry
* blend dates into a pale creamy paste
* add other ingredients except chopped chocolate and peanuts
* stir well to break up oats
* press firmly into a container, mine was 16cm x 9 cm giving a mix height of 2.5cm
* leave in fridge overnight
* next day cut into 12 bars and press chopped nuts and chocolate on top - first version I topped the big block pre slicing then realised this would only be one edge of the bar so don't do that

Cherry and almond flapjack!
On my gap year I worked in a kitchen and developed this recipe from their normal flapjack recipe. It had become one of my standby cake recipes and one of my most requested!
Recipe
250g margarine
170g white sugar
140g golden syrup
330g small porridge oats (do not use jumbo)
50g flaked almonds
Almond extract to taste
As many glacé cherries as you want!
Melt the butter, sugar and golden syrup together then add everything together and bake at 180°c for 15 to 20 minutes or until the top is a nice golden brown. (I like to decoratively sprinkle flaked almonds on top before baking but that is personal preference.)
IMPORTANT - cut the flapjack when it is still hot but leave it in the tin until completely cold and then cut it again. Otherwise it either all falls apart or is impossible to cut.

Welcome to my new series…food-related of course…I was challenged way back at the beginning of this year by Pete…who suggested that maybe I should use ingredients and cooking methods where the letter used, for example, was the last letter i.e Pizza(A)…
On reflection, I think it was a good idea although how I will fare when I get to some letters I am not sure if it will be doable but I will give it a good go… I am not one to back of if challenged…hehe
Today it starts with Bicarb(B)
Bicarb – Also known as Sodium bicarbonate, aka baking soda…Baking soda tends to be the American name, while in the UK and in Australia we tend to call it bicarbonate of soda (Bicarb).
Bicarb, or baking soda, is an alkali that is used to raise soda bread and full-flavoured cakes such as gingerbread, fruit cake, chocolate cake, and carrot cake. It needs an acid (as well as moisture) to activate it so is often combined with cream of tartar, yogurt, buttermilk, or milk.
Bicarbonate of soda gives off carbon dioxide, which expands in a mixture. Once the mixture is cooked, the carbon dioxide is replaced by air, leaving a light cake or bread.
As with all raising agents, use the amount specified in the recipe. Adding extra bicarbonate of soda can result in a peaked or collapsed cake, a strong unpleasant flavour, and a greenish tinge.
Carob –  I have just learned something I thought carob was another name for cocoa well it isn’t…Carob powder and carob chips are similar to cocoa powder and choc chips in colour, however, carob is less bitter and has a naturally sweet flavour.
It is also caffeine-free and higher in fibre…It can also be used as an alternative to cocoa powder and by adding coffee it will also taste like chocolate.
Carob bean juice can also be used as a safe and effective way to treat diarrhea in children.
Crab – Who doesn’t love a crab sandwich or a crab curry? I know I do … There are thousands of different types of crabs that are divided into over 850 species. Most varieties of crab have a hard outer shell (called an exoskeleton), 3 walking legs on either side of their body, and 2 pinching claws.
Of course, like other foods, there are always the more popular of the species which we love to eat…King crabs are one of the most common and best types of edible crabs due to their large size and delicate taste.
Of the smaller crabs, the one which is very popular here are Blue crabs which are a type of swimming crab that have 2 paddle-like feet to help it swim. In fact, its scientific name literally means ‘beautiful savory swimmer.’
Crumb – a very small piece of bread, cake, or biscuit…which has many uses it can be used to coat meat or fish or as a sprinkling with some cheese on top of an au gratin…
Biscuit or cake crumbs can be used as a fruit topping or toasted and used to top ice cream or as a decoration for a dessert…So whatever you do don’t waste anything like this as it can be made into crumbs…
Corncob – the part of the maize plant on which the grain grows…
A popular and tasty vegetable which can be boiled, baked, BBQ’d…Cut from the cob and made into creamed corn, or eaten as a side or a topping for a jacket potato it is very versatile, plentiful, and tasty…
Curb –delivery (food industry term):      The practice of delivering an order in bulk to the pavement in front of a retail store; or from the tailgate of a truck to an adjacent platform
Herb – A Culinary herb, which is available fresh or dried, include basil, bay leaf, chervil, marjoram, mint, oregano, parsley, rosemary, sage, savory, tarragon and thyme. Used for their aromatic properties, flavour, and texture.
Hobnob- A New World style of wine that is evenly balanced, fruit-forward, with a rich mouthfeel and hints of oak. 5 popular varieties – Pinot Noir, California Chardonnay, Merlot, Red Blend, and Cabernet Sauvignon. …
Hobnob is also a biscuit/cookie …It is the brand name of a commercial biscuit. They are made from rolled oats and jumbo oats, similar to a flapjack-digestive biscuit hybrid, and are among the most popular British biscuits. McVitie’s launched Hobnobs in 1985 and a milk chocolate variant in 1987. Wikipedia
Honeycomb- A honeycomb is a mass of hexagonal prismatic wax cells built by honey bees in their nests to contain their larvae and stores of honey and pollen.
  This is my lovely fresh honeycomb…
Honeycomb is also a lovely sweet which can be covered in chocolate crunchie or used in desserts…
  Made with golden syrup, sugar, and bicarb it is fun to make and although very sweet good to eat as a treat or stir some through your ice cream.
Ingredients:
butter, for greasing
200g caster sugar
5 tbsp golden syrup
2 tsp bicarbonate of soda
Let’s Cook!
Butter a 20cm square tin.
Mix 200g caster sugar and 5 tbsp golden syrup in a deep saucepan and stir over a gentle heat until the sugar has melted. Try not to let the mixture bubble until the sugar grains have disappeared.
Once completely melted, turn up the heat a little and simmer until you have an amber-coloured caramel (this won’t take long), then as quickly as you can turn off the heat, tip in 2 tsp bicarbonate of soda and beat in with a wooden spoon until it has all disappeared and the mixture is foaming. Scrape into the tin immediately but be careful as the mixture will be very hot indeed..be careful…
The mixture will continue bubbling in the tin, simply leave it, and in about 1 hr – 1 hr 30 mins the honeycomb will be hard and ready to crumble or snap into chunks.

Kebab- I love a good homemade kebab either formed around a skewer and then cooked on the BBQ or if I am making chicken kebabs then I use lemongrass as my skewers and then they impart a lovely lemon flavour. or marinate your meat and skewer it with onions and peppers and pop on the barbie…
or make your own kebab meat like I did the other week and make your own pitta with love green chilli peppers.
Lamb- A meat I cannot always get here and to my way of thinking lamb, if it is lovely spring lamb, is best eaten with jersey royal potatoes and fresh peas and beans…
Rhubarb –A perennial plant with thick red stalks and large green leaves that are poisonous. The stalks have a tart flavor and are often used in pies and tarts. My favourite rhubarb pie and custard.
They do have absolutely glorious looking leaves but never ever be tempted as they are poisonous to eat…
Scab – Causes rough scabby patches on the potato skin and the flesh underneath. It is unsightly and can affect storage potential. Any potatoes with scab should be used quickly.
Shrub – An old-fashioned sweetened fruit drink, sometimes spiked with liquor which seems to be having a revival over recent years. All you have to do is make a flavoured vinegar for wonderful drinks with soda and ice or with cocktails…
Sparerib – The long cut of meat from the lower breast bone of the hog. Spareribs are best cooked slowly so that their fat can be rendered and they can become tender.
These were absolutely delicious…finger bowls required and a bib…
Squab –  is a young domestic pigeon, typically under four weeks old, or its meat. The meat is widely described as tasting like dark chicken.
Syllabub – An English dessert comprised mainly of whipped cream sweetened with sugar and flavoured with sherry, brandy, or Cointreau. Lemon zest, fruit preserves or puree may also be swirled into the cream.

Fudgy Flapjacks
I must apologise upfront if you came here looking for pancakes!  I'm not talking about that kind of flapjack!  Here in the UK, on the Isle of Mann, in Ireland and yes, surprisingly . . .  Newfoundland, a flapjack is a oaty bar, baked in a flat tin in the oven and then cut into squares or rectangles. 
Typically it is made from four basic ingredients.  Oats, butter, golden syrup and sugar.  This results in a dryer version of a flapjack.  Today's version has the inclusion of sweetened condensed milk, which will give you a fudgier, less crumbly version.
Both are delicious.  Both are simple to make.  You can find my recipe for the regular ones here . . .  four perfect ingredients.
Flapjacks are quite sweet . . . but glorious.  I suppose this is why they are so enjoyed with a hot cup of tea or a cold glass of milk.  Children absolutely love them! 
No surprise there!
The addition of sweetened condensed milk (NOT evaporated milk) results in a chewier flapjack, not quite so dry as the other ones . . .  an attribute which I quite enjoy. 
I can remember the first time I saw a flapjack here in the UK.  I wasn't quite sure what to make of them.  I wasn't sure that I was actually going to like them  . . .
I was actually quite, quite surprised.  It was love at first bite!
This is the kind of treat I dreamt about all those years ago when I was devouring Enid Blyton books and wondering about Tuck Boxes  . . .
These are great keepers and perfect for the Tuck Box! 
They also freeze very well  . . .
Perfect for tucking into lunch boxes and picnic baskets  . . . .
Perfect for enjoying as a sneaky mid-morning or mid-afternoon snack  . . .
In short, pretty perfect no matter how you wish to enjoy them, and I guarantee you will enjoy them!

Fudgy Flapjacks
prep time: 10 minscook time: 30 minstotal time: 40 mins
Using condensed milk helps to create a dense fudgy flapjack.  Flapjacks are oaty bars here in the UK.  Perfect for enjoying with a hot cuppa or a cold glass of milk.
ingredients:
125g butter (1/2 cup)
100g golden syrup (generous 1/4 cup,  3.5 oz)
90g  caster sugar (1/2 cup fine granulated sugar)
280g porridge oats (3 1/2 cups)
half to a full tin  (397g) sweetened condensed milk (14 oz tin)
2 tsp vanilla extract
instructions:
Preheat the oven to 180*C/350*F gas mark 4.  Line an 8 inch square baking tin with greaseproof paper.  Set side
Melt the butter, sugar and golden syrup together in a large saucepan over low heat, stirring often.  Do not allow to boil.  Add the condensed milk and vanilla (1/2 of the tin).  Cook, stirring for a further 5 minutes until the mixture turns a shade darker.
Remove the pan from the heat and gradually stir in the porridge oats.  You may need some extra oats, depending on whether your oats are  jumbo oats or not. You want a mixture which is well filled with oats, but not stiff.
Pour the mixture into the prepared baking tin, smooth out and flatten in the tin.
Bake for between 12 and 30  minutes, turning the pan around halfway through the bake time to help them bake evenly.  If they are browning too quickly or you are afraid they might burn, turn the oven temperature down  slightly. They are done when the edges are browning slightly, whilst the centre is just turning golden.
Leave to cool in the tin for 25 to 30 minutes before lifting out and cutting into squares.
These were baked to enjoy with some yogurt for a teatime dessert.  I think you need to give them a go.  I think you will find that they are incredibly tasty and invariably moreish!  How's that for a tasty mouthful!  Todd just loves these.
