Two nights ago my brother and I made our own vegetarian version of JMU’s buffalo mash. We topped mashed potatoes with crispy baked tofu tossed in buffalo sauce, ranch dressing, and celery. We miss you @jamesmadisonuniversity @jmudining !!⠀

Buffalo tofu #dEats : drain and press one block tofu then cut into cubes and baked at 400F for 20 min. After 20 min, flip the cubes and bake for another 10 min. Once done cooking, toss the tofu in buffalo sauce and serve. The buffalo sauce is 6 tbsp Frank’s red hot hot sauce and 3 tbsp melted butter.

Throw back Thursday takes me back to the JMU Dining Hall where myself and my Metal Magic crew took this stair from paper to completion. It is a helical stair with curved channel stringers and curved glass handrail. I made my version of @jmudining ‘s buffalo mash again today. I had this for lunch and paired it with the salad that was on my story. Yesterday was the first day of Maymester, so I spent today doing some reading and watching lecture videos. I don’t mind online learning in the summer, but I still really miss campus and my friends/ classmates 💜💛.⠀

#dEats : @idahoanfoods instant potatoes (bc they’re delicious and I didn’t feel like making mashed potatoes from scratch for this recipe) topped with buffalo tofu, celery, and ranch. To make the buffalo tofu press and cut a block of extra firm tofu then bake at 400F for 30 min, flipping after 20 min. Toss the baked tofu in a sauce that is a 3:1 ratio of @franksredhot to melted butter ⠀
