For the Braised Fried Fish Maw Seafood Treasure Soup, the staff portioned it into ten smaller bowls before serving it to us. Not sure if it is because I am holding a camera, but my bowl came with more chunks of crab meat and fish maw. Basically, a seafood soup thickened with starch so the ingredients seem to be suspended/frozen in the soup. Black vinegar and white pepper accompanied this soup so feel free to add some to it.
Well, the Roasted Crispy Chicken with Prawn Crackers was warm and tender to eat, it however wasn’t crispy at it. And just like everywhere else in Singapore, they referred to this deep-fried chicken as a roasted chicken. Sprinkle a bit of the salt & pepper before putting it into the mouth. A lacklustre dish but thank goodness, the prawn crackers were crispy though.
This Steamed Hybrid Garoupa in Hong Kong Style was cut into sections just before they served it to us. This hybrid grouper is probably a cross between the giant grouper (Epinephelus lanceolatus) and brown-marbled grouper or tiger grouper (Epinephelus fuscoguttatus) and given the Dragon Tiger Grouper (龙虎斑) name. The fish got to be very fresh to be steamed and cooked with just a simple condiment of soya sauce, julienned spring onions and cilantro leaves for garnish. The end result, sweet springy flesh with collagen like skin that is so good to eat.
The Braised Whole 10-Head Abalone with Sea Cucumber and Spinach was up next but the process of waiting for the next dish to be served was a long one as in-between the hosts are showing us video stories of the newly married couple and plus the live singing by the friends and band. Ten pieces each of the abalone and sea cucumber sitting atop a bed of blanched Popeye’s favourite green vegetable. Why 10 you may ask? Because a table usually seat ten people so the food portions are divided equally so each get a piece of everything (for the expensive ingredients that is). The only complaint for this dish is that the spinach is on the bitter side.
Like an overturned basket or nest, spilling out Deep-Fried Prawns with Black Truffle Mayonnaise Sauce. If there is anything to change for the presentation, I would move the red and green coral lettuces from under the eatable nest and placed it in the nest for a more dramatic effect. Anyway, these truffle gratings lend an aromatic and earthy fragrances to the classic mayo prawns topped with orange flying fish roe. My colleague and I detected a mild spicy hint of wasabi in it but another colleague said it is from the truffle and mayo combo. Differences aside, this is one dish I won’t mind having again.
I always love this noodle served at the end of the dinner courses just before dessert. The Braised Ee-Fu Noodles with Yellow Chives and Straw Mushrooms is a usual staple at wedding due to the fact it is also known as longevity noodles (寿面). Normally, I would consume more than a bowl of the yi mein (伊面) but that night I was already quite stuffed from the dishes served and I was leaving room for dessert. :D
By the time the last dish was up and the clock was ticking closer to 11pm. The warm Teochew Yam Paste with Gingko Nut and Coconut Milk with its gooey and smooth yam (taro) paste and whole gingko nuts smothered in thickened coconut milk is bursting with sweetness and a great comfort to many of us Singaporeans. I liked the fact that the chef tuned the sugar level to just sweet enough as I preferred mine not too saccharine. Anyway, I just had to ask for another bowl as it was just too good to pass up.
Dinner is now over and after shaking hands with the groom, bride and their respective parents, it is time to head to the train station to catch the train home.

Xiangling x Reader
When you are brave enough to try Xiangling dishes
(Happy birthday to my girl! This is something a little more platonic, but I hope you like it!)
Chihu Rock was as lively as ever, filled with vendors shouting to attract any newcomers to Liyue. You had been particularly drawn to the delicious smell wafting from Wanmin Restaurant, an aroma so strong and captivating that it made your mouth water before you even crossed the threshold. You hadn't come to Liyue to try its food, but after smelling this, you had no choice: you had to try it.
As you entered, a girl with dark blue hair and bright eyes greeted you with a smile. "Welcome to Wanmin! Feel free to choose any dish you like, I can even make something that's not on the menu!" Xiangling, Liyue's famous chef, stood behind the counter, surrounded by pans, pots, and countless ingredients you didn't even recognize.
You blushed slightly, impressed by her enthusiasm. "Uh… Do you have any special recommendations?"
She rested her elbows on the counter and looked at you thoughtfully. “Special? Mmm… it depends on how brave you are to try something unique.” She put her hand to her chin, clearly thinking something up as she spoke. “I have a secret recipe, a dish that mixes seafood and chili, with a special touch of lucetta. It’s super aromatic! But… not everyone can stand it.” She gave you a mischievous smile, waiting for your reaction.
You took a deep breath. “What if I dare to try it?”
Xiangling giggled in excitement and quickly began preparing the ingredients. As she chopped and added spices with admirable speed, she began to tell you some stories. She told you about how she once destroyed a pan by freezing it with a Mist Flower Corolla and all the times she had experimented with exotic ingredients, like Hilichurls and slimes. “People say my dishes are weird, but I won’t know until I try them!” she said, laughing.
Finally, after a few minutes, she placed a steaming plate in front of you, its aroma so strong that it made you tear up a little. “Here’s my special creation of perch with violetgrass and… a hint of mint for freshness.”
You took a bite, and the taste was like an explosion in your mouth. It was spicy, sweet, and surprisingly smooth. Xiangling watched you expectantly, her eyes shining with excitement. “Well?”
You gave her a smile, nodding. “It’s… surprisingly delicious.”
She let out a laugh, clearly satisfied. “I knew you’d like it! You’re one of the few who dares to try something like this.” She sat down across from you, with Guoba by her side, who was nibbling on a piece of meat she’d taken out of her backpack.
You spent a while chatting about Liyue and the recipes Xiangling still wanted to try, until suddenly, she looked at you seriously. “Would you like to join me someday to gather ingredients? I could use someone brave enough to help me explore the Guyun Stone Forest… they say there are sea monsters, and I want to see what they taste like!”
The proposal surprised you, but her enthusiasm and energy were contagious. You laughed and agreed, thinking of what it would be like to accompany such a passionate chef on her adventures.
“Great!” she shouted excitedly. “We’ll make dishes that no one has ever tried!”
And so, that meeting at Wanmin Restaurant was just the beginning of a friendship filled with unique dishes, adventures, and no doubt, the occasional broken frying pan.
Here is my masterlist, in case you are interested in any more of my work or want to send me a request <3

Enjoying a fine dining experience with finger-licking delicacies is one of the best ways to celebrate life. However, most people believe the gourmet experience is limited to 5-star restaurants, but that’s not true. Here are some scrumptious recipes you can prepare at home to celebrate good food whenever you wish.
Start by filling your breadbasket with rich ingredients, including black bean sauce from Veeba, one of India’s leading food brands. This ancient fermented food, originally from China, brings a delightful twist of flavours—spicy, salty, sweet, and savoury—thanks to its ingredients like spices, ginger, chillies, garlic, soy sauce, and sugar. It's no wonder you're thinking about the amazing magic it can create when you add this mouthwatering combination of flavours to your platters. Let’s have a look!
Stir-Fried Vegetables with Black Bean Sauce
Add a savoury depth to your fried vegetable bowl with black bean sauce. Take your favourite veggies like bell peppers, broccoli, carrots, and snap peas. Now sauté these vegetables until they become crispy, then add a spoonful of this magical sauce with a splash of soy sauce to give it an umami hint. It seems yummy!
Black bean and garlic chicken
Take a bowl of bite-sized chicken pieces dipped in bean sauce and add garlic, sesame oil, and any other spice of your choice. Now, stir fry these marinated ingredients together until the sauce and spices penetrate the chicken, leaving it juicy and flavourful. Garnish with spring onions and sesame seeds to give it an enticing look.
Spicy Black Bean Tofu
Pair this savoury sauce with tofu cubes. First, stir fry these cubes until golden, and then toss them in a mixture of black bean sauce, chilli oil, and garlic. Your spicy black bean tofu is ready to be served with steamed rice with cool drinks.
Black Bean Shrimp
Apart from your love match, there is one more pair made in heaven. That’s Veeba’s black bean sauce online and seafood. Add a generous amount of this sauce in a bowl full of shrimp, onions, and bell peppers, then stir-fry the mixture well to make it delicious from within. The sweet complementing nature of the sauce makes shrimp savoury and delicious.
Black bean noodles
Not to forget the most important noodles when it comes to Chinese delicacies. Stir fry your noodles with the veggies of your choice, add the sauce, and top it with green onions and chilli flakes to make the most of your meal experience.
As you see, the black bean sauce available online at Veeba unlocks the world of flavours like any 5-star restaurant. No matter what you're cooking, you'll be able to make memorable dishes that celebrate the joy of good food right in your own kitchen with this sauce.

Elevating Everyday Dishes: How to Add a Gourmet Twist to Simple Recipes
In today's fast-paced world, most of us rely on simple and comforting dishes to keep up with busy schedules. However, there are moments when elevating these everyday meals with a gourmet twist can turn a mundane meal into something special. With a few clever tweaks and select ingredients, you can take traditional recipes to the next level. Let’s explore how you can bring gourmet flair to two classic dishes: Keema Fried Rice and Prawn 65.
1. Keema Fried Rice: From Comfort to Culinary Delight
Keema Fried Rice is a satisfying dish that blends seasoned ground meat with flavorful rice. It’s a quick, one-pot meal that many households rely on for its ease and taste. To elevate this dish and give it a gourmet touch, here’s what you can do:
Use Premium Ingredients: Switch up your standard ground meat with a premium cut. Opt for lamb or Wagyu beef mince to give your keema a rich, luxurious flavor. You can even try mixing in ground turkey for a leaner option that still offers great texture.
Infuse with Exotic Spices: While traditional spices like cumin and coriander are staples in keema, why not add a hint of saffron or cardamom for a sophisticated twist? A dash of star anise or a clove of smoked garlic can also bring depth and complexity to the dish.
Garnish Like a Chef: Garnishing is where you can make your Keema Fried Rice visually stunning. Top the dish with microgreens, finely chopped herbs like parsley or cilantro, or crispy fried onions. Adding pomegranate seeds for a burst of sweetness and color is another gourmet-level touch.
Serve with Style: Presentation matters when aiming for a gourmet touch. Serve your Keema Fried Rice in small bowls, garnished with a soft-boiled egg on top, or place the rice in a ring mold to create a beautifully plated dish.
With just a few tweaks, your humble Keema Fried Rice can be transformed into an indulgent, restaurant-worthy meal.
2. Prawn 65: A Seafood Delight with a Gourmet Twist
Prawn 65, a spicy and crispy fried prawn dish, is already a crowd-pleaser with its tantalizing flavor profile. To elevate it into a gourmet appetizer or main course, here are some ideas:
Experiment with Plating: Instead of the usual heap of fried prawns on a plate, serve Prawn 65 in a minimalist style. Stack the prawns neatly or serve them on skewers for a modern, elegant presentation. You could even plate them on a bed of greens or spiced yogurt for added flavor contrast.
Use Specialty Sauces: While Prawn 65 is typically served with a tangy chutney, you can make your own gourmet dipping sauce. Try an aioli infused with roasted garlic and lemon zest, or a yogurt dip flavored with truffle oil and saffron. These will complement the spicy, crispy prawns beautifully.
Incorporate Molecular Gastronomy: If you want to go full gourmet, incorporating modernist techniques can add that wow factor. For instance, serve Prawn 65 with a coconut foam or a curry-flavored espuma. These foams are light and airy, yet pack a punch of flavor, giving your dish a cutting-edge presentation.
Pair with Wine or Cocktails: Elevate the dish further by pairing it with the right drink. A crisp white wine like Sauvignon Blanc or a sparkling cocktail with notes of citrus can enhance the seafood flavors and provide a refreshing contrast to the spicy heat.
Conclusion
Elevating everyday dishes like Keema Fried Rice and Prawn 65 into gourmet creations doesn’t require a professional kitchen. All it takes is a thoughtful selection of premium ingredients, attention to plating and presentation, and a few chef-approved techniques. The next time you're in the mood to cook at home, try giving your favorite recipes a luxurious upgrade and savor the transformation.

Temperature: Generally, white wines are best served chilled, around 45-55°F (7-13°C) for most varieties. Lighter wines should be on the cooler side, while fuller-bodied ones can be served a bit warmer.
Glassware: Use tulip-shaped glasses for aromatic wines like Riesling and Viognier, which help concentrate the aromas, while standard white wine glasses are perfect for others.
The Art of Food Pairing
One of the joys of white wine lies in its versatility with food. Here are some classic pairings:
Seafood: The acidity in white wine enhances the flavors of shellfish and fish, making it a natural choice.
Salads: Crisp whites cut through the freshness of greens and vinaigrettes, providing a refreshing balance.
Cheese: Soft cheeses, particularly goat and brie, harmonize beautifully with the bright acidity of many white wines.
Conclusion
White wine is a vibrant and varied category that invites exploration. From the crispness of Sauvignon Blanc to the rich textures of Chardonnay, there's a world of flavors waiting to be discovered. Whether you're enjoying a glass on a sunny afternoon or pairing it with a gourmet meal, white wine offers a delightful experience that celebrates the art of winemaking. Cheers!

Exploring Bavarian Beer and Bavarian Drinks: A Journey Through Tradition
When you think of Bavaria, the first image that often comes to mind is a frothy mug of beer held high in celebration. Bavaria, located in the southern part of Germany, is world-renowned for its Bavarian beer culture, with centuries-old brewing traditions that make it a hub for beer enthusiasts. However, while beer is the star, there are also other Bavarian drinks that are deeply rooted in the region’s culture and deserve attention. In this blog, we will explore the significance of Bavarian beer and some other popular Bavarian drinks that complement the region’s culinary and cultural richness.
The Iconic Bavarian Beer
Bavaria is often regarded as the birthplace of some of the world’s most famous beer styles. The brewing tradition here is sacred, governed by the historic Reinheitsgebot, or Beer Purity Law of 1516, which dictates that beer should only be brewed with water, barley, hops, and yeast. This law has ensured that Bavarian beer remains pure and true to its roots.
Popular Types of Bavarian Beer:
Helles A light, pale lager, Helles is one of the most popular Bavarian beers. It’s known for its clean, crisp, and slightly sweet taste, making it a perfect refreshing drink for any occasion. Helles is often enjoyed in beer gardens or during social gatherings, paired with traditional Bavarian snacks like pretzels.
Weißbier Another quintessential Bavarian beer is Weißbier, also known as wheat beer. Characterized by its cloudy appearance and fruity, slightly spicy flavor, it is brewed with a large proportion of wheat in addition to barley. Weißbier is typically served in tall glasses, showcasing its golden hue and thick foam head, making it a visual treat as well.
Dunkel Dunkel, meaning “dark” in German, is a darker variety of Bavarian beer that has a rich, malty flavor with hints of caramel and chocolate. This beer is traditionally enjoyed with hearty Bavarian meals like roasted meats and sausages, and is especially popular during colder months.
Märzen Märzen is the traditional beer served during the famous Oktoberfest celebrations in Munich. Brewed in March (hence the name) and stored until the festival in autumn, this amber-colored lager has a smooth, malty taste and a higher alcohol content, making it ideal for long celebrations.
Beyond Beer: Traditional Bavarian Drinks
While Bavarian beer holds a special place, there are also other traditional Bavarian drinks that have been enjoyed for generations. Whether alcoholic or non-alcoholic, these drinks offer a different perspective on Bavarian beverage culture.
Radler A refreshing mix of beer and lemonade, Radler is a popular Bavarian drink during the warmer months. Light and thirst-quenching, it’s perfect for summer afternoons and offers a low-alcohol alternative for those who want the flavor of beer with a citrus twist.
Weißweinschorle Another favorite Bavarian drink is Weißweinschorle, a spritzer made by mixing white wine with sparkling water. Light, fizzy, and less intense than beer, Weißweinschorle is ideal for those looking for a refreshing drink that pairs well with light meals like salads or seafood.
Apfelschorle For non-alcoholic options, Apfelschorle is a staple in Bavaria. Made by mixing apple juice with sparkling water, this drink is both hydrating and flavorful. It is commonly enjoyed at family gatherings and is a popular choice for those who prefer something sweet but not too sugary.
Glühwein During the colder months and especially at Christmas markets, Glühwein (mulled wine) is a beloved Bavarian drink. This warm, spiced wine is made with red wine, citrus, and spices like cinnamon and cloves, making it perfect for sipping on chilly evenings while enjoying the festive atmosphere.
Conclusion
Whether you’re raising a glass of Bavarian beer at Oktoberfest or enjoying a refreshing Bavarian drink like Radler in a scenic beer garden, Bavaria offers a rich and diverse drinking culture that appeals to every taste. Colleague invited me and some of my other colleagues to her son’s Wedding Dinner at Goodwood Park Hotel (良木园酒店) last Saturday. The heritage hotel in Singapore is situated in a 6-hectare landscaped garden on Scotts Road. It was first built as the club house for the Teutonic Club serving the expatriate German community in Singapore and later converted into a hotel. The Tower Block of the hotel has been gazetted as a national monument of Singapore.
Have a peek at the Dinner Menu and Wedding Favours which is a heart-shaped condiment bowl or a round bottle opener. My trio of drinks from left - orange crush, Chinese tea and red wine, along with condiments of three types of chilli – pickled green chilli, chilli sauce and red chilli in soya sauce. One of my colleagues was already red-faced and half-drunk even before dinner was officially served.
Let’s start off with the Appetizer Platter comprising of five smaller dishes. From the bottom clockwise, we have the golden brown Suckling Pig Slices with crispy skin. Happy to say that the roasted piglet did not disappoint, after all I expect no less from a 5-star hotel.
Up one dish partition is the Chilled Marinated Baby Abalone with Thai Sweet Chilli. While the spicy and sweet abalones were good, the mountain of raw shallots used to prop up the mollusks were too pungent to eat on its own.
I have never seen unagi as part of the cold dish platter but this Teriyaki Eel was a delight to devour. With hint of charred smokiness, this freshwater eel was sweet and soft. Crispy Sesame Seafood Roll was the next dish I tried and it was still warm and shattering crispy with filling of crunchy prawns and other bits of seafood inside.
Sliced Smoked Duck was served with drizzling of diced mango & spicy plum sauce. The tangy and fruity sweet sauce paired well with the savoury smoked duck breast. Overall to say, this is the best appetizer platter I have ever eaten.

The Ultimate Guide to Paella Spices for Authentic Flavour
When making a delicious paella, one essential component is the right paella spices. These spices give the dish its rich, signature taste that transports you straight to Spain. Whether you’re a seasoned chef or a home cook, using authentic paella spices will ensure your dish is full of flavour. To perfect your paella, it’s important to understand which spices are must-haves.
First on the list is saffron, known for its golden hue and subtle floral notes. It’s an indispensable ingredient in paella and provides the dish with its distinctive yellow colour. Just a pinch of saffron can elevate the taste of your dish. If you’re looking to make your paella stand out, this is one spice you should never skip.
Next is paprika, which adds a smoky and slightly sweet flavour. Spanish paprika, often called pimentón, comes in different varieties: sweet, smoked, and spicy. The smoked version is most commonly used in paella. Its deep, earthy aroma brings depth to the dish and complements other paella spices.
Another important spice is garlic powder. While fresh garlic is often used, garlic powder can be sprinkled for an extra layer of flavour. It adds a robust taste to the rice and blends well with other paella spices.
Bay leaves are another secret ingredient. They release a subtle flavour when simmered with the broth, enhancing the complexity of the paella. The leaves are typically removed before serving, but their essence lingers, giving the dish a mild herbal note.
Lastly, don’t forget parsley and black pepper. Fresh parsley gives a burst of colour and a hint of freshness to contrast the rich flavours of the rice, seafood, or meats used in paella. Black pepper, though simple, enhances the taste of all other paella spices.
For those looking to make the perfect dish, the best place to find authentic paella spices is a specialty store or an online source such as Paella World. Their selection includes high-quality spices that guarantee an authentic paella experience. From saffron to smoked paprika, these spices are sure to give your paella the perfect flavour.
In conclusion, paella is all about balance and the right combination of paella spices. Whether you’re using saffron for colour, paprika for smokiness, or garlic powder for depth, these spices are the foundation of an excellent paella. Explore different varieties and experiment with amounts to create your perfect dish.

Drinks That Elevate Indian Veg and Non-Veg Thali
Diverse tastes, aromatic spices, and bright colours are hallmarks of Indian food. Thalis, traditional Indian meals consisting of multiple courses on a single plate, are among the country's most lauded gastronomic experiences. In traditional Indian cuisine, the "Thali" (meaning "plate" in Hindi) is the centrepiece of a balanced dish that showcases a variety of flavours, textures, and nutrients. The correct beverages can take any Thali to the next level, whether it's a vegetarian version with a choice of lentils, breads, and curries made with vegetables or a non-vegetarian version with meats and seafood. To balance off your Indian vegetarian or non-vegetarian Thai meal, this article discusses the Top Drinks That Elevate Indian Veg and Non-Veg Thali.
Drinks That Complement Veg Thali:-
Classic Indian Drinks -
Spiced Chai:
A traditional accompaniment to Veg Thali, this spiced tea combines black tea, milk, and a variety of fragrant spices such as cinnamon, cloves, and cardamom. The bold tastes go well with the spices used to make Thali.
Lassi:
Lassi is a yoghurt-based drink with various flavours, such as mango, salty, and sweet. When eaten with hot curries, the cooling impact of lassi can alleviate some of the heat.
Chaas:
A tart and refreshing beverage, Chaas (or buttermilk) is prepared by combining yoghurt, water, and spices such as coriander and cumin. It complements the savoury Veg Thali and helps with digestion.
Jaljeera:
A combination of water, lemon juice, and jaljeera powder—a spice blend including cumin, ginger, black pepper, mint, and others—makes this acidic and fiery beverage. As a palette cleanser, it works wonders with a Veg Thali and brings out all the different flavours.
Modern and Fusion Drinks -
Aromatic Herbal Teas:
Veg Thali goes well with herbal teas like mint, ginger, or chamomile, which are light and pleasant. These teas balance the spices and cleanse the palette.
Water with Fruit Infusions:
Water infused with slices of lemon, mint, and cucumber is a hydrating and refreshing drink alternative that complements the Thali flavours without dominating them.
Cool Green Tea:
A contemporary spin on traditional green tea—iced with a touch of honey and lemon—goes nicely with the vegetarian entrees and provides a welcome change of pace from the heavy fare.
Alcoholic Beverages -
Light Beers:
To avoid masking the subtle flavours of the vegetarian dishes, try Veg Thali with a light and crisp beer like a lager or pilsner.
White Wine:
To elevate your Veg Thali dining experience, pair it with a dry or semi-dry white wine like Riesling or Sauvignon Blanc.
Sparkling Wine:
Try a glass of sparkling wine, such as Prosecco, which has a natural fizz, to balance out the heavy, flavourful Veg Thali meals.
Drinks That Complement Non-Veg Thali:-
Classic Indian Beverages -
Masala Chai:
The combination of Masala Chai with Non-Veg Thali is similar to that of Veg Thali. The robust tea flavours complement the luscious meat curries.
Lassi:
Non-veg thali pairs well with Mango Lassi because the sweet and tangy flavours cut through the spicy meat.
Chaas:
Perfect for washing down a hearty Non-Veg Thali, this tart drink also helps digestion and cleanses the palate.
Aam Panna:
Aam Panna is a pungent mango drink made from raw mangoes. It is seasoned with mint, black salt, and cumin. Its distinctive taste is a welcome change from heavy meat meals.
Modern and Fusion Drinks -
Iced Lemon Tea:
A delightful interlude between meals, the sharpness of iced lemon tea pairs well with the rich and spicy flavours of Non-Veg Thali.
Coconut Water:
The naturally sweet and nourishing coconut water enhances the spicy and savoury flavours of Non-Veg Thali, giving them a tropical twist.
Lemonade with Spices:
The meaty dishes are balanced by the refreshing and acidic lemonade, which has a hint of spices like cumin and black salt.
Alcoholic Beverages -
Strong Red Wines:
When paired with Non-Vegetarian Thali, particularly red meat, a full-bodied red wine like Shiraz or Cabernet Sauvignon brings out the dish's full-bodied flavours.
Dark Wines:
Stouts and porters, as well as other dark brews, bring out the full flavour of the meat curries and make for a more nuanced meal.
Cocktails using Whisky:
Whisky-based cocktailsWhiskey cocktails, like the traditional Old Fashioned or Whisky Sour, complement the smokiness and heat of Non-Veg Thali.
Conclusion:
No matter your dietary preferences, the Indian Thali is sure to please with its mouth-watering variety of dishes and aromatic spices. Elevate your dining experience by combining spices and rich flavours with the perfect drinks for these dishes. To complement the Thali, try traditional Indian beverages such as Masala Chai, Lassi, Chaas, or Jaljeera. Herbal teas, fruit-infused water, spiced lemonade, iced green tea, and other modern and fusion beverages provide a welcome change of pace and flavour.
