Summer has FINALLY reached us poor northern folk. I don't eat icecream, and I've pretty much cut out milk since Christmas. Here's my contribution to summer - coconut/strawberry "icecream". 🍧🍦🍧 #vegan #veganrecipes #summerdessert #vegandessert #healthfood #foodporn #istillcooksometimes #putfoodinme (at Klæbodalen Kafé) Since I hate bananas this is not a traditional "nice cream".

I started to purée frozen raspberries and fresh strawberries in my mixer until it was smooth and lump free. I added a few tsp of stevia to taste to cut down on the slight sourness of the raspberries. I might also suggest adding a cordial/syrup/saft for more concentrated added flavour without added too much liquid. (Water causes more ice and more difficult to scoop out later!) I then added organic coconut milk and cream and blended everything together until it was a thick but smooth texture. I roughly chopped the remaining fresh strawberriess I had and added them to the mix. Freeze overnight or until solid enough. I took frozen cubes of this mixture and blitzed it really quickly with a few spoonfuls of warm water to soften it a bit quicker. Tip: keep the strawberry roughly chopped in slightly larger pieces. They will create a nice texture and end product. I topped this with sliced almonds and freez-dried raspberries. Decadence be thy name. I love coconut. It adds richness to everything.
