You can get nice tasty Nankhatai from any of the pushcarts at Old Delhi. But its a bit of a hunt as they keep moving from place to place. The word Nankhatai is derived from Persian word Naan meaning bread and Khatai from an Afghan word meaning Biscuit! The recipe below will give about 50 biscuits.  This is so easy and quick to make – you would want to make them. 😋 Serves: 50 Nankhatai’s INGREDIENTS 1 cup or 226 g unsalted butter –at room temperature 1 cup or 125 g powdered sugar 2 cup or 250 g all purpose flour 1/2 tsp baking powder 1/4 tsp salt 1/2 tsp nutmeg powder 1/2 tsp cardamom powder Chopped pistachios for garnish METHOD In a mixing bowl, beat the softened butter until it is light and creamy. Combine powdered sugar and mix until well combined. In a separate bowl, sift all Purpose Flour with baking powder, nutmeg powder, cardamom powder and salt. Combine the flour mixture with the butter mixture to form a soft dough. Do not over mix the dough. You could easily do this by hand to make the dough just until the mixture comes together. Wrap dough in plastic wrap and let it rest for 15-20 minutes. When the dough is 15 minutes through in the fridge; preheat oven to 150 degrees C. Remove from fridge and give the dough a slight knead once again and divide into small equal portions. Roll each portion into a smooth ball with no cracks and place on a cookie sheet lined with parchment paper. Make sure you leave ample space between dough balls. Place chopped pistachios on the top of the cookie dough. Bake on the middle rack for 12-15 minutes. You know these are ready when the base starts browning. So for my first entry here on the blog, I’ll be discussing the famed “Indian Cookies” that my grandmother introduced to me when I was just a little girl. The name of the cookie could be considered a little politically incorrect. But that’s what everyone calls them. If we are going to be polite, one might call them “Native American” cookies instead.  The recipe is simple and quick to put together. It’s also a fairly inexpensive recipe too. I won’t share the recipe online because I feel like this is something precious to be shared in person rather than over the internet for mass-consumption. These cookies go great with a cold glass of milk or hot cup of coffee or tea. At almost any social function involving Natives, you’re bound to find these on a refreshment table.  The first batch I made was from a recipe that I found online. They were decent but I found them a bit too, as my Nan put it, “cakey.” (Though, arguably, the cakey taste might be appealing to some). The ideal Indian Cookie should be round, thick, and soft to bite. Not too sweet but not bland either. The first thing one should taste is the heavenly combination of cinnamon and nutmeg together. They can be made plain or with raisins. I prefer plain! I’m very excited to have made my first batch of Indian Cookies. Almost like a rite of passage for any Six Nations gal who wants to experience how her ancestors baked. Hopefully my next attempt at an Native American recipe will be corn soup.
