Back in September I tried out a new recipe in my Indian cookbook and it has become my new favorite, it’s just fucking amazing, how did I go SO MANY YEARS and never try that??? so anyway I cooked up another batch a few days ago and then. I started having cravings for naan to go with it.

I looked up a few recipes that don’t require an actual tandoor oven and got turned off because - it’s a yeast bread. That means it requires one or two risings!! Each of which could take an hour or two!! AUUUUUUUUUUUUGH fuck that, too much planning-ahead required.

I seriously did consider a recipe that has you cook it in a cast iron skillet, but the fucking absolutely disastrously-placed Ihateitsomuch overfuckingsenstive smoke detector (1 burning grain of rice??? SCREEE SCREEE SCREEE) would probably object to that because I cannot imagine cooking naan that way and having 0 smoke. (It’s just 3 feet away from being directly over the stove!!! This is ASININE!!!!!)

It’s baked, with a bit of broiling at the end to brown the tops more. And there’s only 1 rise needed. I decided to give it a try, and made half a batch.

Pictured: 3/4 of the results. There’d be less but I’m full now, which is really the only thing preventing the picture showing 1/2 the results.

It may not be proper naan - and it came out a bit too fluffy for my preferences - but it’s really fucking hard to argue with hot fresh very slightly sweet garlicky bread that has been brushed with butter fresh out of the oven.
