With the smooth, sweet vanilla ice cream and the satisfying pop of Pop Rocks candy between two chocolate cookies, these Pop Rocks Ice Cream Sandwiches are a fun take on a classic treat.

Ingredients: 1 pint vanilla ice cream. 1/2 cup Pop Rocks candy. 12 chocolate cookies store-bought or homemade.

Instructions: Allow the vanilla ice cream to soften slightly at room temperature for easier mixing. In a mixing bowl, combine the softened vanilla ice cream with the Pop Rocks candy. Stir gently to evenly distribute the candy throughout the ice cream. Line a baking sheet with parchment paper. Arrange 6 chocolate cookies, flat side up, on the baking sheet. Scoop a generous amount of the Pop Rocks-infused ice cream onto each chocolate cookie, then top with the remaining cookies, flat side down, to create sandwiches. Gently press down on each sandwich to adhere the cookies to the ice cream. Place the baking sheet in the freezer and let the sandwiches freeze for at least 1 hour, or until the ice cream is firm. Once frozen, remove the sandwiches from the freezer and serve immediately, or store them in an airtight container in the freezer for later enjoyment.
