I answered both these questions for Psy (๐ช , ๐ ) already but I actually wanted to rethink my answers so I guess that's what I'm doing here !!
๐ช - What would be your most popular AU and why?
I am working on like a spiderverse AU atm, and everyone loves a good spidersona, don't they? If we imagine someone in the fandom made it up I think it has potential to gain popularity!
I think a main appeal is first of all obviously that of "weee spider-man" but while a superhero AU still has certain high stakes and is not exactly domestic, it's still I'd say more casual than canon Top Gun? They're no longer military guys, now they're "just" silly vigilantes! Which would also humanize their struggles in a way.
I mean for example take Maverick, he does come across as quite an ass (at least to me) sometimes because he's just so damn reckless, he always wants to go higher and faster than before, and that makes him often lose sight of his actual missions. But as a spider-man? Now he's someone who wants to have fun with his powers, he didn't choose to be a superhero after all!

So last time I said Hangman, because Psy just hates him so much, and that kind of tension always attracts shippers. And while that will probably be forever and always my first answer it's not my only answer.
I think Psy x Bob could be quite popular as well. There's a certain parallel between them. Bob is your sort of standard nerd/loser archetype, something Psy can relate to a lot. But they're also not too similar. Bob is most of the time a fairly passive character, while Psy was always more actively weird (which got him his callsign). And they both have their own little differences in dealing with being 'outcasts'. It's more of a cutesy fluffy ship but I think this little parallel would draw people to the ship.
Idk how far this counts has a whole different ship but I could also see that many fans prefer RoosPsy significantly over PsyMav or the whole RoosPsyMav. Rooster and Psycho from the very beginning have been friends, while Psy and Maverick used to have some tensions there. And when Rooster and Psy met they were both already adults, when Psy and Maverick met Psy was still a teen, and some fans get really hung up on this type of specific in a ship.
On the other hand I think Goose and Psy might be a bit more popular as well. Certainly not a huge ship, because the whole time they knew each other Psy was a kid and Goose an adult, and that usually not the type of ship that makes it HUGE in fandom. But they have a very significant (positive) bond, as opposed to '86 Psy and Mav, who just kinda hate each other for shits and giggles. And Psy's relationship to Goose affects him significantly more than that to Maverick (pre dating) did.
