So i actually make my own concentrated lemonade quite often but the lemon and lime juice that i buy in the store have changed their ingredients and i can absolutely tell by the flavour. So i now decided to learn how to just use lemon fruit directly. I found a recipe by some bartender on youtube on how to get more “juice” out of one fruit by using water and citric acid. I tried it out and oh. oooh wow. it is so good. I gotta write it down in this post so i dont forget, this is my own version of the recipe because i wanted more concentrated juice (in the video it seemed like he used twice as much water than i did):
ingredients:
citric acid (i used 30g)
2 lemons
sugar (optional)
instructions:
peel the lemons (just the outer peel not all the way down to the flesh)
measure the peels on a scale
add peels in a glass jar with citric acid (should be the same weight as the peels) and mix together.
close the lid airtight and let it sit for 2 hours
extract the juice from the lemons you peeled by whatever tools you have at hand
add juice and the peels in a mixer along with 500ml of water and blend it to hell and back
filter it through a strainer. And now you got lemon juice!!
(optional) add 250-300g of sugar and stir it into the juice and let it dissolve overnight in the fridge.

Dinner, 7/18/23:
Main: Saag with tofu
I’ve written about this recipe before I think but it’s always worth revisiting because tbh I think it might be better than saag paneer (made at home) I know that’s controversial but most grocery store paneer tastes so bland to me?? It’s never as tangy as the restaurant ones. The tofu seasoning described in this recipe gets it just right though. I basically follow this recipe exactly but I skip the step with cauliflower and cashew and just stir in some yogurt at the end. I also add 3/4 tsp garam masala with the other spices because it just doesn’t taste right without it, and often a big squeeze of lemon juice to brighten it up. I ran out of lemons making the marinade this time so I used acv and it was fine. I also used 16 oz frozen spinach because I wanted to avoid going to the store today.
Main: this dal recipe from Madhur Jaffrey’s Vegetarian India:
It’s really really good. I just used whatever dal mix we had in the cabinet which included split urad, whole urad, moong dal, red lentils and green lentils so I’m sure any available small legume mix would work. I soaked mine for 4 hours before cooking because the urad and moong dals are a bit tough usually but I’m sure it would have been fine. I also cooked it in half broth because I had some and it tasted AMAZING. I could literally eat a bowl of this for breakfast. You’re going to want to double the crispy fried shallots on top, trust me on this.
Side: basmati rice
which we are running out of. Also plain yogurt, tamarind chutney and a green Indian hot sauce that I definitely need to buy again.
Dessert: lime blueberry loaf
it’s tiny sour perfect wild blueberry season here in the northeast so I bought a pint last weekend at the farmers’ market. And then I made my one and only cake recipe (ok I guess I will eat 4 or 5 others including my lemon Bundt cake, my mom’s carrot cake, my brother’s ginger cake and my other brother’s marble yogurt cake but THATS IT. NO OTHER CAKES I DONT LIKE THEM) which is lemon yogurt anything cake but as stated above I was out of lemons so I used 4 limes. It’s quite unexpected and not overly sweet at all! And truly the texture is so good. Most of my problem with cake is how dry so many of them are, but this one (and my lemon bundt) is soaked in citrus syrup which keeps it very dense and not crumb-y at all. And there’s no frosting. Just fresh citrus juice and powdered sugar, as god intended.

I have come back from writers block with another fun MHA AU (its not really too serious, this is all just for fun :) )
What if MHA characters were Strawberry Shortcake Characters (I would add pics, but Tumblr is being quite stupid so… feel free to google them, but I mostly got their personalities from the 2003 series, and I imagine that thats what their clothes would look like if they were in Strawberry Shortcake)
Deku: Strawberry Shortcake (Pretty Self Explanatory. Main character, One of the sweetest people you will ever meet).
Eri: Apple Dumpling (The little sister and liitle kid of the group. Also kinda self explanatory!)
Sero: Orange Blossom (I love Sero, I love Orange Blossom, perfect fit. Also its cannon that Sero likes Oranges!)
Momo: Peach Blush (“Momo” is the Japanese word for “peach”. In addition, her wiki says that “Peach is a delicate, generally nice and always polite southern bell. She can be a drama-queen sometimes and worries over the really simple things from time to time, even if nobody else has just yet.” Sounds like Momo!)
Bakugou: Pepermint Fizz (Peppermint and Bakugou are literally the same person lmfao. No but seriously, they share so many similarities, like their jealous and aggressive attitudes (especially to the main character), thats why I put them together)
Mic: Cherry Jam (Cherry Jam is the musician of the group, which to me fits Mic’s whole schtick)
Jirou: Ginger Snap (I could have made Jirou Cherry Jam, but she just fits Ginger Snap so much more, since they are the tomboys of their respective groups)
Shirakumo: Blueberry Muffin (Blueberry Muffin’s wiki says “Blueberry always tries to keep her friends in line and is almost always the first to admit her mistakes. Blueberry brings her sense and level-headedness to the group and really cares for her friends. That love for her friends helps her to be humble and modest and tells her that her friends mean more than anything to her.” That reminds me of Shirakumo very much)
Mount Lady: Lime Light (They act the same, and even had the same character development in their respective arcs. They also just look the same lmao).
Kamui Woods: Lime Chiffon (The wiki says she was the bubbly and kinda ditzy one, which kinda fits I think, but I just chose this for Kamui because he and Mount Lady could share the lime motif lmao)
Jeanist: Raspberry Torte (The wiki says Raspberry is “sarcastic and easily annoyed” in the 2003 version, and the 2009 version makes her a fashionista, so it kinda fits!)
Edgeshot: Lemon Meringue (Lemon’s wiki says “She is kind and caring to her friends and she always tries to work as hard as she can to make others happy”. She likes to chat and knows a bit of gossip, but she does never usually trifle with in anything that could hurt the feelings of someone else” which I think fits Edgeshot really well!)
Nighteye: Plum Puddin’ (Wiki says Plum Puddin’ is a prankster and loves to laugh. Need I say more :) )

Raspberry Torte and Lemon Meringue are usually paired together in the series. They debuted together, and in the show they are best friends.
I wanted to share this quote from the wiki: “They used to live somewhere else until they moved to Strawberryland [Referring to Raspberry and Lemon]. They are often seen sitting together, or walking together and holding hands.” If this fact doesn’t fulfill my love for Egdejeanist I dont know what does.

I made stir fry :D
i dont take foodpics very often so these may or may not do it justice
Recipe under the cut:
The Ingredients:
Yakisoba noodles (the package I used was like 17 ounces)
Thin-cut beef (the one i got was labeled for stir frying) (can be substituted for chicken, or ham, or tofu, or whatever else you want. i used beef though.)
Lemon juice
Lime juice
2-3 medium yellow potatoes, sliced
Minced garlic
Dried chow mein noodles (as a topping/side/garnish)
Fruit, veg, etc (can be adjusted to taste, feel free to add/remove things you think you'll like)
Sweet peas (mine were frozen) (about half a bag, or to taste)
shredded carrot (a handful or two)
1 can (8 ounces) of pineapples
1 can (8 ounces) of water chestnuts
The Sauce
1 cup of soy sauce
4 tablespoons of sugar
6 tablespoons of rice vinegar
6 tablespoons sesame oil
8 tablespoons vegetable oil or canola oil
10 teaspoons of minced garlic (make sure to get some of that juice in)
2 teaspoons of chili sauce
White sesame seeds, to taste (i put enough so that most of the top of the sauce was mostly-almost covered with floating seeds and garlic)
Instructions
(the noodles I bought were already cooked. If your yakisoba noodles need to be cooked/boiled (if theyre still dry and hard) do that first.)
Combine all the ingredients for the sauce in a pitcher or large measuring cup. stir it well, but don't worry too much if (when) it separates. Add the noodles to the sauce and let them soak.
While thats soaking, coat the bottom of a large frying pan in oil, and heat at medium until the oil is hot. When the oil is hot, add your meat in.
Pour in a little bit of sauce from your noodles. Not too much though, just enough for taste.
Stir the meat regularly until its pretty much done. at this point add in your potatoes!
Stir regularly until the potatoes are done.
Once the potatoes are done, add your vegetables and other add-ins (except for the potatoes, of course) to your pot with the noodles and sauce. Make sure to get a little bit of pineapple juice in there! at this step I also added another teaspoon-ish of garlic and a little more sesame seeds.
Also add a couple good squirts of lemon juice - dont be afraid to overdo it - and a good squirt or two of lime juice.
You may need to go back and stir your meat and potatoes a few times while doing this.
Once all your stuff is in your noodles and sauce, give it a little stir, then gently pour it - sauce and all - into the pot with your meat and potatoes.
pull up a chair because this looks like it'll take a while and your feet are still sore from wandering about safeway trying to find steakumms before giving up and getting real, actual, fresh meat
Cook off the sauce, stirring often. You'll want to stir it more as the sauce cooks off more.
dont be afraid to add in more of your veg as it cooks - I added in more pineapple, water chestnuts, and carrots about halfway through
once pretty much all of the sauce has cooked off, its done!
add some chow mein noodles on top, and enjoy!
this served 2 people with plenty of leftovers, so I'd say this serves about 4.

weird craving? i dont think so. when i was pregnant, i had craving, for me it's weird because i usually dont like anything sour but i crave tart yogurt, or anything lemon or lime flavor. i usually dont like beans but i craved bbq baked beans. i ate a loooot of thai food n i refused to eat chinesse food. Fried food smell n sessame smell made me want to throw up. n i bought lemon cake instead of chocolate cake. those were my weird craving. as if right now i dont have it.

Food Discourse
Okay here’s the deal. We’re all reblogging posts and sending each other asks and dms about this so here it is. I’m gonna make a masterpost of the food I’ve seen mentioned and say my opinion on each one and then anyone who wants to can answer once and for all, their opinions on this stuff
Oatmeal: not my favorite. kind of weird, but i’ve eaten it before and i might again
Mustard: great! the only condiment provided at barbecues that i’ll even consider consuming.
Ketchup: SUCKS. the least valid.
ranch: sucks
Barbecue sauce: sucks. second to last in terms of validity
Mayo: gross. gross. tied for second to least valid
Rice and/or pasta cooked in Gatorade: eh. it’s just blue now
Onions: delicious. put em in a sandwich! cook them in butter and drizzle that over your potatoes! slice one up and eat it raw! it’s all good!
Raw vegetables: okay, I guess.
Lettuce and cucumbers: don’t like lettuce and cucumbers are also invalid. sorry. they’re just crunchy water.
Cooked vegetables: fine with seasoning or with rice or in a soup. typically plain is boring and mushy
Olives: gross. smells gross, tastes gross.
Popcorn: fantastic. i make it all the time. along with Cheez-its, i eat it using chopsticks quite often to keep my hands clean
Wendy’s Frosty and fries together: a delicacy. don’t even think about eating those fries plain
Sour cream: a good condiment; typically with mashed potatoes or potato chips or quesadillas.
Yogurt: the act of eating it makes me feel like I’m physically dying. i’d say it’s okay but i feel so bad while eating it, i don’t even know why, it tastes fine and afterwards i’m fine
Tomatoes: gross on their own and i can’t eat them or anything containing them anyway, except for salsa. it’s the literal only exception. any other tomato product makes me feel like im dying for several hours at least. i have to order pizza without marinara sauce
Lemons and limes: good on everything, good on their own, just bite into a lemon, i don’t care. i’m great at making lemonade and if you say my previous opinions make me an unreliable source tell that to the 50 bucks and empty pitcher of lemonade in one day of me selling my hand-sqeezed, sweet and tart lemony goodness in my ghost town of a neighborhood
Pineapple: bad on pizza, good on its own. I’ve bought a fresh one at the store, sliced it up, and eaten the whole thing in one sitting before. a delicious fruit
Pickles: juicy, but with flavor, instead of its watery predecessor. the superior stage of the cucumber.
Cream cheese: i love the stuff. as a kid i used to just eat if off a spoon. eat it on a bagel, mix it into mashed potatoes, sweeten it and throw it on a cake. it’s good - just don’t put it on popcorn.
Plain Cheerios and banana: do not combine these. it’s a regretful mistake that’s haunted me since i was 2 years old
Juice boxes: the ultimate way to hydrate oneself. just suck back five of these and you’re good to go. why is this even under consideration
Milk: i can’t drink it on its own. it physically repulses me to try, even though I’m not actually lactose intolerant. as adults humans aren’t really supposed to drink the stuff anyway - at least, we weren’t.
@what-is-love-babey-dont-hurt-me is the most valid from what i’ve heard so far but why don’t we get @ceciliaspen @d-o-t-s and @voidetrap in on this too since y’all are the ones that come to my mind as the most vocal in all this Phandom Phood Discourse

•Asra came up to (Y/N) and was like

- I thought it was supposed to be a lazy day but shit oh well lmao

"Wait, what? I thought today was just gonna be a.. ya know.. a lazy day. Just for us." (Y/N) grabbed Asra's hand as he reached for his coat.
"Well, yeah, but... I've been wanting to do this with you for ages now. And you know how we barely ever had time in the past because of.. that situation," Asra stated, using exaggerated hand gestures.
"Right. Today does have nice weather, so I'd prefer to go out today, anyway," (Y/N) compromised, a smile forming on her soft, pink lips.
Asra grinned and suddenly enveloped (Y/N) in a warm embrace.
She blinked in confusion. Nevertheless, she returned the gesture with just as much, if not more, warmth.
When Asra pulled away (Y/N) asked, "What was that for?" A slight giggle lacing her voice.
"You deserve it."
She smiled genuinely, love filling her as she grabbed Asra's hand and kissed his plump lips.
Her hands trailed up his arms as his hands found her hips. She cradled his face as their magic energy combined effortlessly and harmoniously.
The kiss lasted a tender moment before Asra pulled back to unlock and release the charms on the door.
The intricate designs on the rosewood door glowed as Asra held out his palms.
(Y/N) reached for the door handle and opened it for Asra.
"After you," she said cheekily, winking at her significant other.
Asra laughed heartily.
"I love you."
"I love you more."

"oh mY GOD!" (Y/N) wheezed as she lost her footing while walking over the smooth, damp stones covered with algae and other aquatic plants.
Asra's soft, strong hands grabbed her forearms and pulled her flush against his body.
"Be careful," he teased, a wide, beautiful smile painting his stunning features.
"I am, oh, so glad I have you, Asra, as my knight in shining armor. Whatever would I have done without you, my darling?" (Y/N) said, seemingly mocking Ilya in his community plays.
Asra laughed at her and then continued to say, "Seriously. Be careful."
They walked hand-in-hand over to the small boat with carved features of a fox, a(n) (your familiar's species), and a large snake.
"Hm. How accustomed to us," (Y/N) observed, trailing her fingers across the divots in the mahogany wood, exploring every dip and curve on it.
Asra watched her movement and coughed, his face reddening.
His thoughts trailed back to the many passionate, intimate moments he and (Y/N) had shared when she had touched him like that.
"Um.. Y- Yeah. I-I had it custom made.. f-for us."
(Y/N) looked to her significant other, her (E/C) orbs looking over his tanned face.
"You okay, there, love?" She asked, her voice dripping with concern.
"Yeah, no, of course. I'm fine. What- um.. What about you?" He replied, his tone of voice not quite helping his case.
"I've known you for ten years. What's wrong?" She said, motioning for him to get in the boat. Her eyebrows were furrowed as she grabbed his hands and kept them in hers.
"Nothing, really. It's just.. I saw.. You-.. The- the way you, like, ran your hands across the, um, boat made me think.. Of things.." He trailed off, picking at the hem of his top. His face was a deep red, rivaling a juicy beet.
(Y/N) smirked and laughed at him. "My God. You could have just said so."
She leaned forward and placed her hands on his thighs as she kissed Asra deeply.
Asra's right hand tangled in her hair while his left gripped her inner thigh, letting his thumb rub circles into the soft flesh.
(Y/N) let the taller figure take control as he lowered her to the bottom of the boat.
Asra lifted up her shirt, exposing her (F/C) bra.
"Wow. Trying to make it inconvenient for me, now, are we?" He said, his light amethyst gaze boring into (Y/N)'s soft (E/C) eyes.
It was her turn to blush. (Y/N)'s face was similar to that of a searing star; very, very hot. She looked away from his lustful gaze, a small smile spreading across her face.
Asra laughed a bit and unclipped her bra, throwing it to the front of the boat. (Y/N) gasped at the action. It response, Asra only shrugged.
He let his hands roam her chest, fondling with the nibs of her breasts. (Y/N) stifled a moan by biting her fingers.
Asra looked up at her and grabbed her wrists.
"Don't. I want to hear all of your whimpers and moans."
(Y/N)'s face showed evident shock.
"But- But we're still at the docks. What if someone hears?" Her words trailed off, hanging in the air. "Don't Ilya and Pasha come here often?"
Asra smirked. "I don't care. It'll let them know you're mine," he growled close to (Y/N)'s ear.
Those words suddenly set (Y/N) off, seeing this resulted in her moaning slightly.
The noise obviously aroused Asra, since he immediately tore off her shirt completely, as well as his own.
Asra leaned down and attacked (Y/N)'s neck, leaving dsrk red marks dotting her soft skin.
Asra licked and nibbled at the flesh, his mouth working skillfully on her. He landed on her collarbone and bit down gently.
This expelled a slightly louder moan from (Y/N)'s throat, and she gripped his hair, massaging his scalp.
"Mm, Asra.."
The situation only escalated from there..

"Pasha, hurry! The sun is almost-"
I'm cut off by a sharp moan that sounded... oddly familiar?
I skid to a halt, looking back to Pasha for reassurance.
"Y-you heard that, right?" I ask, searching my sister's soft gaze.
"Heard-?"
"Asra~" the person moaned out again.
Wait-...
(Y)-
(Y/N)?
Oh, no. This is.. not okay.
"Pasha, we're leaving. Nope, turn around. Go back. Hurry, run," I demanded.
She had a reddened face as the moaning sounded again, but this time lower and more urgent.
"That s-.. that sounds a lot like A-"
I cut her off by raising my hand.
"That's because it is, and we need to leave."
"O-okay!! Gladly!"

Asra closed the shop door as he and his partner entered their home once again.
"That felt amazing~" Asra commented, snaking his arms around (Y/N)'s waist, sliding his fingers to rest just under the hem of her pants.
"That's seconded~ We should do that more often.." (Y/N) turned around and let her hand rest on the nape of Asra's neck, pulling him down for a warm kiss.
"Definitely."

Virgil had been going through tics all his life whether or not it was more noticable now he was seventeen was a different story, as a kid he had always had very small and barely motor tics but now he was seventeen they included twitches of the head, arms, the scrunching up of the eyes or the face, rarely he would become paralysed and end up falling somewhere and he would just lay on the ground until he could stand again which usually took around ten minutes but on bad days it was longer, the only good thing about the paralysis one was that he didn’t twitch when it happened, he made involuntary noises and he often said random things but up until this point he had been very alone, no wanted to hand out with him because he didn’t fit into friend groups the only thing that helped him feel better was that when he was sixteen (last year) he had been officially diagnosed with tourette's syndrome, and at first it had been heartbreaking and he had looked at the news as debilitating which it really was but he soon began to look at it in a different light as his dads really encouraged him to embrace it and they didn’t ridicule him or stare and they somehow never seemed embarrassed but one of the most helpful things they did was to do with his coprolalia which made him swear and say inappropriate phrases and they didn’t happen often but when they did he always hated it they happened a lot when he was stressed which was becoming a lot more since exam season was coming up and he was always stressed about his grades. His dads never ever ridiculed him and they even laughed with him and the times Virgil wasn’t laughing, they would comfort him.
Virgil wasn’t on meds because they did nothing for him and he had met some awful people on his way to where he was but now he was joining a new high school as they had just moved to a new town, he didn’t mind they moved often but his dad Patton was certain they would be staying here for as long as they could and his Pa Logan had agreed and Virgil was perfectly content with it as this house was one of the better ones and the town seemed to be too.
He had to get two buses to school though which was a pain, because he wasn’t very good at suppressing his tics and even if he was he didn’t want to because it hurt and when he stopped suppressing them a lot more came out and the silence he had made didn’t compensate for the tics that came out.
It was on a Tuesday that his life changed a bit more that he would’ve thought, he was sat on the bus trying to muffle his vocal tics which was working somewhat, it was fair to say that today wasn't a particularly good tic day but he had had worse, his physical tics however were not doing well, his head kept twitching to the side and his hand and arms kept stretching, he kept kicking his leg out in front of him, luckily no one was sat in front of him. He kept taking deep breaths which worked for about twenty seconds before the slight flailing came back,
Before he could think about how to stop them though someone sat next to him and he immediately panicked and that didn’t help at all and right after the person sat down Virgil’s right arm shot out and punched this person in the arm, but they didn’t say anything, they turned with a smile and held their hand out,
“Greetings! I am Roman, Who might you be?” He seemed to be in the best mood even though he had just been harshly punched for no apparent reason,
“I’m -lemon!- Virgil,” He shook Roman’s hand before looking down but it didn’t last long as his head jerked to the side and his eyes screwed shut before relaxing for a few seconds, then his arms began to flail a bit but this stranger- Roman- didn’t seem to mind at all, in fact, he seemed to be ignoring the tics altogether which, in Virgil’s opinion was brilliant!
“Do you go to Golden Oak?” Roman once again was smiling as he ignored Virgil’s ticing he thought it the nicest thing to do and the boy seemed very self conscious and nervous about his tics so Roman decided not to bring it up,
“Yeah -lemon!- do you?” Virgil’s arms id some weird flinging thing, his leg kicked a couple times and his head jerked right and then left a few times before flinging back and then finally relaxing again,
“I sure do! It is one of the most magnificent schools i have been to! And I absolutely adore that you will be attending it too! Oh! Do you have your schedule yet?” Roman was basically glowing,
“Yeah,” Virgil pulled out his schedule and passed it to Roman who scanned it quickly and then beamed,
“We have every class together except for biology, i do Spanish, and art because I’m in drama!” Virgil was, honestly, relieved because this Roman dude seemed really nice but he supposed it was time to explain himself,
“Cool, I feel -F-fu- that I should ex-fuck- explain myself, I have tourettes -Pancakes!- and i do a lot of -Lemon!- ticking, I don’t think about -Pancakes!- or lemons as much as I say it,” Virgil’s head jerked a little and both his legs swung and kicked, his gloved right hand punched his chest as he squeaked,
“I guessed that was the case! And don’t worry about it! Last year I wrote three different papers on tourettes!” Roman seemed so nice and Virgil couldn’t help but smile back, since being diagnosed he had learned to laugh at life and he would often laugh at his ticks because they were awkward and the best way to dismiss that was by laughing about and sometimes his tics were funny but sometimes they were just exhausting, especially in classes.
Roman and Virgil made small talk until the next stop where they needed to wait for a different bus,
“Lemon! Fuck! Pancakes!” Virgil’s vocal tics could just be let g for now because the only ones getting on this bus were Roman and Virgil and if Virgil was very lucky not many people or none would be on the bus, while they waited Roman began to speak,
“If you don’t mind me asking, and you can totally say no, but would you like to...be friends?” Roman sounded remarkably smaller and a little sacred and Virgil wasn’t going to deny him, in all honesty, Virgil would love to be Roman’s friend,
“Lemons! I would like -f-fu- that,” Virgil suppressed his swearing tics as much as possible but most times he couldn’t stop, plus it hurt to suppress tics. Roman visibly brightened and then without warning hugged Virgil before backing off a little, it was short and sweet, and in all honesty Virgil enjoyed it,
“Do you think -pancakes!- that you could sit -lemons!- sit with-” Virgil stopped being able to talk as his jerked and his arms flailed too much to keep talking as he just couldn’t get the words out, so he waited it out, it lasted five whole minutes but he was fine, Roman seemed worried though,
“Virgil? Are you okay?” He seemed hesitant to ask but his worry outweighed his hesitancy,
“Yeah -cats!- I’m fine,” Virgil breathed deeply as he tried to focus, he kept making noises obviously, he did that most of the time and every now and then his gloved hand would come up and punch his chest or his rams would fly up or out or back,
“What were you going to say?” Roman tried to fix the conversation,
“Could you -Lemons!- sit with me at -lime!- Lunch?” Virgil looked at Roman for a while but his head jerked and he broke eye contact, Roman smiled and nodded very enthusiastically, the truth was Roman didn’t have any real friends sure he had ‘friends’ but a lot of them were toxic and none of them really liked him, they liked the mask he put on but Virgil seemed to like him so far and if he decided he didn’t like the real Roman, the mask could always come back up.
“Of course! I would love to dearest Virgil!” Roman gestured wildly with his hands and Virgil could already tell, he was one of the most extroverted kids, but he didn’t mind because Roman seemed like a true friend, he couldn’t help but let a gummy smile crossed his face as he watched Roman prance around lamenting words of endearment.
The bus pulled up two minutes later it was packed full today and that did not bode well, Roman got on first, leaving Virgil to follow him as his head jerked and his hands made random gestures, Roman choose a seat near the back and thank god that the only four seats that weren’t taken were the two behind and the two in front but there were people sitting across from them and diagonally to them, Roman let Virgil have the window seat so that his ticking didn’t run the risk of hitting anyone except himself and Roman which Roman was absolutely fine with.
Virgil began to talk to Roman, this time he started the conversation,
“What do you -Lemons!- know about tourettes?” He had to admit he was curious, because Roman could be misinformed or he could simply not know the right things for Virgil’s kind of tics or he could simply just not know things but there was also a chance that he did know these things,
“Well, I know about a lot of different types of tics, I know about and vaguely understand coprolalia, I understand what tic attacks are and I know some random bits of information that probably won’t ever be useful but I know them,” Roman seemed really interested inn tourettes and he seemed dedicated to his papers because that was a lot of information to retain and to understand it, even vaguely was impressive,
“I’m surprised most -pancakes! Fuck! Shit! Cunt!-” Virgil’s head jerked wildly again and his legs swung forward, kicking the chair in front quite hard as his arm punched in Roman’s direction hitting him in the shoulder, but he didn’t react, unlike those around them, people were staring with looks of disgust but Virgil had a mantra for times like this,
Those that mind, don’t matter and those that matter, don’t mind.
He repeated it a couple times in his head before speaking again,
“Most people don’t -shit!- don’t understand, even -lemons!- vaguely,” Virgil had an air of confidence but his eyes told a different story, they had an undertone of frustration and anger but a set sadness and fear were buried under that, Roman could see it all but decided not to point it out,
“Well, what can I say?-” Virgil cut him off
“Except you’re welcome!” He had a bright smile plastered on his face at the brilliant reference and Roman covered his mouth ad he gasped quietly,
“You...Like Disney??!!” He seemed very excited and Virgil felt so full of joy in that moment, more joy than he had felt in the last year, sure he had experienced joy but not like this. Virgil nodded causing his head to jerk down five times before he could look back up again,
“Well what about Mulan? Let’s talk” and so the rest of their journey consisted of ignoring the snarls and looks of disgust and the not-so-silent whispers passing around the bus about Virgil, and consequently Roman as the two spoke about every Disney film and the characters and eventually they were talking about Harry potter, the books versus the movies, so far Virgil’s argument for the books seemed to be winning, but before they could continue the bus stopped at the school and Virgil got all anxious again,
“Fuck! Shit! Fuck off!” The people were now just talking about him as he followed Roman to the exit but they didn’t make it that far, they were stopped by someone and Virgil instantly knew what was coming before they even opened their mouth nd it seemed so did Roman,
Virgil held his jacket close as he slung his backpack on his shoulder,
“What is wrong with you?” This was one of the times when Virgil wished this man had some curiosity in his voice but he didn’t, all it held was malice. Roman caught the question before Virgil could answer, as his head was jerking too much, but he managed to control his arms because they were holding his jacket very tightly, his shoulder kept jerking back though, and it would hurt the next day because t always did but that was the least of his problems right now,
“Let me answer that. There is simply nothing wrong with him, he is a fine friend and i don’t believe there is anything wrong with him. Unless you do?” Roman’s voice had an undertone of danger but this dude seemed to miss it,
“Yeah, I do! Look right now, even when we’re talking he can’t focus on us! And he keeps saying weird shit! What’s wrong with him?” The man’s insults weren’t anything that Virgil hadn’t heard before but they still hurt no matter how many times he heard them,
“Like I said, nothing is wrong with him, now excuse us, we have to get going,” Roman pushed past the man and Virgil stuck close, once they were off the bus Roman let out and angry sigh and Virgil thought he was mad at him for being an embarrassment but it didn’t happen,
“I was about to punch that guy,” Roman sounded angry but he wasn’t really, not anymore. Virgil’s head jerked a couple times and there were some weird noises and the word lemons but other than that he seemed to have calmed down a little now that they were off the bus,
“C’mon we’ll be late,” Roman took Virgil by the hand, gently, and led them to their first class, Math.

It turned out that they weren’t late at all, in fact, they were the first there beside the teacher, who smiled kindly, having already met Virgil she ignored the tics which now were just noises and the scrunching of the eyes and face, which weren’t really that bothersome unless he was reading, good thing they weren’t in English.
“Is there a seating plan?” Roman spun around, Miss Kathleen (she made sure they called her by her first name) was Roman’s favourite teacher, she was by far the most understanding and she was really funny, but she was like a mother to everyone but she wouldn’t tolerate bullying and she could really be strict if the situation called for it. Roman idolised her because she was just so great!
“Oh, well there is but since you are here early and you’re one of my favourites I’ll let you pick your seat and who sits beside you,” She smiled again and Roman beamed back before grabbing Virgil's hand again and leading him to the back, left corner, next to the window, which Virgil was very grateful for, after they had their books out (Virgil getting a completely new set of books to work from) Roman began talking,
“I think this is like one of the only classes with a seating plan so I’ll sit next to you in the other ones!” Roman was radiating happiness,
“Yeah, that would -Lemons! Fuck!- be nice,” Virgil’s head went back to jerking and his legs swung out, as his shoulders jerked back every once and a while and his arms would either come up to hit Roman or to hit himself. Today was going to be a long day.

Five classes and a break later, it was lunchtime, now Virgil didn’t have any complaints about the five classes he had been through, sure he got some weird looks and people who told him to ‘shhh’ but he ignored them because,

He was sat alone at one of the far away lunch tables he waited for Roman despite not being sure he would even turn up, he was wrong though because not even two minutes later Roman bounded over to the table Virgil was sat at, his legs swinging and his eyes scrunching up, as his arm punched his chest, he squeaked too, Virgil thought his tics were the worst thing but Roman thought they made Virgil cute and oddly attractive,
Roman sat down having just come from biology and Spanish the two were talking about what the lesson had been like and Roman was asking Virgil if he had been okay,
“So, did anyone give you trouble?” Roman sounded so protective and Virgil almost wanted to tell him that the biology teacher, despite being a biology teacher, was an ignorant dick, but he decided against and told Roman about his seat,
“I have to sit next to -fuck! Lemon, pancakes- to some kid who -lemon- thinks I’m a -lemon, lemon, lemon- freak and treats me like -fuck! Shit!- an experiment, I've had worse though,” He punched himself in the chest before his arm shot out to the side and the his elbows jerked back, his head jerked left then right then left again and his face scrunched up, all before he started eating,
“I mean, if you want I could take his whole face out?” Roman seemed dead serious and that just made it ten times funnier and Virgil threw his head back in a true, full body laugh, and the best part? It was a tic free moment. Roman joined in but then as they both calmed down someone walked over to their table and they seemed to have such an air of confidence that wasn’t fake at all and that was a little worrying, to say the least,
“Hey Roman, why aren’t you sitting with us today?” This kid wasn’t even acknowledging Virgil, like at all, but that was okay because Virgil didn’t really want to be noticed, so he just continued to eat his lunch,
“Well, I just thought I would sit here for today, y’know for some...Variety? Yes that’s the word!” Roman waved his hands around and smiled brightly though Virgil could see through the smile and it wasn’t like the one he had seen only minutes ago, but he decided to bring it up later,
The girl hummed, “Okay, well, if you don’t want to sit alone, then you can always come join us,” The girl took one last look at Roman before she tried to walk away but Roman butt in,
“What do you mean alone?” His tone was ludicrous but he was always that little bit extra,
“Well, you’re sat by yourself, or at least this kid that your sat with probably doesn’t talk much so it must feel like you’re alone,” She snickered,
“Well for your information, we happen to be having the most wondrous conversations and I like his company more than yours,” Roman seemed mad but Virgil didn’t really believe that Roman was mad,
“Geez, okay dude, no need to be so harsh,”
“Irony,” Virgil couldn’t help himself, he found irony so funny and stupid at the same time, kinda like tumblr humour, not the point!
“What did you say to me?” The kid seemed genuinely curious but there was an underlying tone of danger that, while it went unnoticed by Roman, was not missed by Virgil, and you see Virgil wasn’t a violent person but he would and could fight if he had to and the weird thing was, when he got angry at someone or when someone he loved was being threatened his tics went away and it was amazing but it was also strange and it upset Virgil that it couldn’t be explained, but hey ho what can you do but get on with life,
“Irony,” Virgil repeated himself,
“What do you mean, irony?”
“Your response was ironic,” Virgil stood up from the table and turned to look at the girl who had come over,
“How dare you?!” She was mad but Virgil wasn’t sure if she would start a fight of not, hopefully she wouldn’t but you could never be sure with some people,
“What?” Virgil cocked his head to the side slightly and at this point there was a small crowd growing, Roman was still seated,
“You realise that you can’t speak to me like that?” She took three steps closer to Virgil, he didn’t step back like sh expected, he wasn’t afraid of her,
He held his ground.
They glared at each other for a second before she clenched her right fist and took a swing at Virgil’s face, she hit her target but she left herself wide open and Virgil swung his foot to kick her in the back of the knee, as she tripped, Virgil took a swing at her side just o throw her off balance a little more,
Now Virgil with only a bloody nose and this girl with a sore knee and a sure to bruise side, she tried to tackle him again but he just aimlessly dodged her and after that she was sure she wouldn’t miss again and she was right, she didn’t, she brought her fist up to Virgil’s eye and she hit him right in the left eye, he stumbled back a little but before he could be hit he elbowed her in the back before falling to the ground when something hit him in the back of the head,
He turned to see that it was another boy presumably this girls boyfriend but at this point Virgil’s vision was blurry and his head was throbbing he could only see out of one eye and he could taste his blood on his tongue, but he wasn’t done yet,
He wouldn’t lose this time.
Virgil stood up and stepped into a fighting position his eye already bruising up, the boy looked at him and laughed,
It was funny how he stopped laughing when Virgil brought his leg up in a very straight line and kicked the guy in the nose, he brought his feet back into an apprehensive stance as taekwondo was turning out to be useful he would thank his pa later for suggesting he take classes,
“How dare you?!” The boy recovered faster than the girl did and that surprised Virgil but he liked a challenge,
Virgil smiled a little as he strafed right to avoid the punches that were swung his way and then the boy decided he had had enough of being beaten he began to use brute force never leaving room for Virgil to attack back he was on the defense for the near future and he didn’t like it, his arms had been raised into an x position in front of his chest and his face to avoid a lot of pain but he had no room to attack, his arms become sore, absolutely sure to bruise heavily and he was sure he could keep it up,
Until he heard a snap.
He felt more than heard it but as soon as it happened he felt his arm become limp and it burned with pain he wanted to scream but he knew that wasn’t a good idea so he just let his tears fall silently instead of screaming or saying anything he gritted his teeth and just as the boy pulled away as he thought he had won, Virgil hugged his arm to his chest as he ducked under his arms but before he could do anything else a voice was heard over all the chanting in the crowd,
“What is going on here?!” It sounded like the head teacher but Virgil wasn’t sure, in seconds though he was leaned against the table,
Roman ha moved him.
And he was now sitting in front of Virgil asking him questions but Virgil couldn’t hear him over the blood rushing to his ears and the gasping noises he was making certainly didn’t help, the group started to dissipate but not everyone left a few pairs and the odd trio were still hanging around but Virgil couldn’t focus on anything else apart from the pain he felt,
“Vi….il….infirmary...c’mon….” That was most definitely Roman’s voice and there were shouts and murmurs in the background but as it happened Virgil wasn’t sure what was happening he wasn’t even sure how he was moving or if he was doing it himself, spoiler alert he wasn’t, He felt warmth around him though and that was somewhat comforting he would feel incredibly comfortable right now if it wasn’t for the pain he felt everywhere.

Bulk wine, according to our hosts, is mass-produced wine that is generally shipped before being bottled. In fact, Geballe explains that bulk wine has important utilities. One is an insurance policy for winemakers amid a difficult growing season, and the other is that these wines are environmentally friendly.
While bulk wine carries a reputation of being inferior in quality to estate-produced wine, our hosts explain this is simply not the case.

A: And this is the “VinePair Podcast.” And now… I was right, I was right, I was right.
Z: Is this a recurring segment we are going to keep doing?
A: I just want everyone to know that I was right. Now, I’m sure that there are predictions that I make on this show that I just don’t ever talk about again because I was wrong.
Z: That’s the key to making predictions.
A: But, I do want to be clear that yet again, I was right. What am I talking about? For those who listened, we talked a lot about how we had predictions for what was going to happen in the world of on-premise after things started to reopen. One of the predictions that was made, by yours truly, was that we felt that if people were going back to drink at cocktail bars and restaurants, it was going to be much more likely that they were going to order drinks more complex than the cocktails they learned to make at home and signature cocktails than be willing to go out and just drink a Negroni, a Martini, or something that they had already perfected at home. With the initial data that’s coming out, we are seeing that that is, in fact, correct. The first data that we have is actually coming from Breakthru Beverage and their CGA survey. That survey found that basically, they’ve seen a large number of requests from bars and restaurant owners who are looking to reopen with refreshed menus featuring new, creative cocktails that are using high-quality craft spirits. For the past year, many consumers have been stuck in their homes mixing classic cocktails like the Old Fashioned, Manhattan, Margarita, like we said they were doing. Restaurateurs are realizing that they need to look for other ways to attract customers back to the bar by adding innovative new cocktail recipes using brands typically not found on the consumer’s home bar. The same CGA report found that three in five cocktail drinkers look at the cocktail menu every single time they go out and that two in five of those drinkers likely choose a signature cocktail. Yep, it’s all coming. It’s all coming as we said it would.
Z: I thought this was going to be another Cosmo brag.
A: No, that’ll come later when that’s also proven correct. It really reinforces to those of you out there listening. There’s a reason you listen to myself, Joanna, and Zach, and we appreciate it. Also, I just really like when I make a random prediction and it actually comes to be true.
Z: I would say that one was an informed prediction. Not random.
A: Yes, it was very informed. It’s interesting to see that actually what we thought would happen has happened. I definitely see it a lot when I’ve been out there. There are a lot more signature cocktails, and what I see people ordering definitely are cocktails that are unique to a place as opposed to going out and seeing a lot of people with Negronis on their table, etc. Even when I see a lot of Margaritas, I still don’t feel that I see as much of it unless you’re at a restaurant known for them.
J: I definitely think this is true for me. Is it true for both of you?
A: Oh, for sure.
Z: Yeah, I think so. No matter what level of competence and confidence you had as a home bartender, I think it was put to the test during Covid, during quarantine. As we talked about over the year-plus on the podcast, some people got really ambitious and decided to start doing some really elaborate things. Yet, most people probably went up one level from their previous home bartending familiarity and added a couple of recipes. That includes me, frankly. I made some drinks that I didn’t make very often or had made at home. There is still something about the realities that a bar or restaurant has in its favor of being able to carry ingredients that the average person is just not going to want to have on their bars because they’re just going to use them once a year. Or create custom elements, whether it’s syrup infusions or even garnishes. This is a thing that’s fascinating to me, too, and maybe we’ll talk about another episode. There was this whole pushback, pre-Covid, on garnishes because they were seen as wasteful. This whole idea that, should we really be putting all this produce often into a drink purely for the visual appeal? There’s a line of argumentation there that I don’t totally disagree with, but I do think there’s also this thing of whatever form of the presentation it is, in addition to just the complexity of the drink, that is what people are looking for right now. They want to be 1,000 percent sure they are not in their home, and that includes me.
A: Now that we have gotten out of the way, what have you both been drinking recently? Joanna?
J: Well, it’s been pretty low key for me, actually, since we’ve gotten back from our trip. However, on Friday night, we made some Martinis with Wheatley Vodka, which I was very curious to try after we published Aaron Goldfarb’s piece on Wheatley Vodka recently. It was surprisingly flavorful, as promised — for vodka, I guess.
A: What was your recipe?
J: Oh, just a very dry vodka Martini. Maybe a rinse of vermouth.
A: Interesting, and then olive?
J: Yes, olive.
A: Nice. Zach, what about you?
Z: Well, I was inspired by a previous podcast a couple of weeks ago about the modern classics. I have been making myself a Paper Plane from time to time. I prefer mine with rye, some aperol, Amaro Nonino, and some lemon juice. It’s a tasty cocktail. I think the other thing that I’ve had recently that I’ve been really enjoying for whatever set of reasons, and I’m not totally sure what they are, is there have been a lot of local breweries here in the Seattle area that have really decided to create their own versions of what they’re calling a Mexican lager. I think there’s something there about what exactly defines that category. This spring and summer so far, I’ve seen a real proliferation of them. There are a couple of breweries here that have made ones that I’ve given a try to. It’s getting to be relatively nice here and there is something about that style of beer in the sunshine that is just very enjoyable. I mean, with all lagers, lighter-style pilsners, that there’s something about that general category that obviously fits really well with the summertime. However, it’s interesting to see a craft mentality applied to a category that we usually associate with very large-scale production. What have you been having, Adam?
A: I had my first Tommy’s Margarita of the summer. That was the best thing that I’ve had this last week. I made a batch, went to the beach for the weekend, and they were just absolutely delicious. I had it with a really interesting new tequila called DE-NADA. It’s another tequila that I think is really interesting, positioning itself in terms of what is not in it as opposed to what is. The idea of nothing added besides pure agave, no-additives-type positioning is really where I think a lot of premium tequila is trying to stake their claim. Obviously, we’ve been doing much with Patrón here at VinePair, and they obviously don’t add any additives to their tequilas. And there are a bunch of others. It’s interesting to see that it is becoming this pivot point between tequilas. There are the people that just use pure agave and harvest it when it’s correct. Then, there are the other people who are trying to keep up with demand and they may not be harvesting agave when it’s the right time. Also, they could be adding a lot of other things to mask the fact that’s what happened, but it was tasty. Again, I think when the tequila is really good and it has a lot of flavor on its own, that’s all you really need besides the lime juice and the agave. You taste all of those amazing, herbaceous notes from the tequila. I definitely find myself preferring that style of Margarita to the Margaritas that we classically think of that have the triple sec or things like that in them. But I’ve waxed on and off about the Tommy’s Margarita before, so we don’t need to hear that anymore. Let’s just get into today’s subject. Today, we want to talk a little bit about bulk wine. Joanna, you could kick this conversation off because we published a piece about bulk wine on the site recently, which created a lot of debate, which is why we wanted to have this conversation in the first place. So, do you want to kick us off?
J: Yeah, sure. I think the impetus for the piece originally came from the idea that Spain is actually the world’s largest producer of bulk wine. We were talking about this on the editorial team, and it got us thinking, how many people actually know about bulk wine? I certainly didn’t, so this was a piece that was written for us, exploring just that. Why isn’t anybody talking about bulk wine? Actually in working with this writer, she mentioned along in reporting the piece, that there was a lot of reluctance on behalf of winemakers to talk about bulk wine or go on the record about bulk wine, which I think is really interesting because I think it offers a lot. It’s a huge part of the wine industry. Basically, this piece is exploring how it is such a huge part of the wine industry that nobody really talks about.
Z: And I think it’s important for the sake of listeners who aren’t familiar or weren’t familiar with the term, what we are generally talking about here — and technical definitions can vary a little bit from country to country — but essentially, the idea of bulk wine is wine that is produced and then generally shipped before being bottled. It might be shipped in very large bladders. It might be shipped in other kinds of containers. It’s a commodity, which is another way to think about it. Bulk wine can be very, very generic. It can be just wine, literally as generic as that, all the way down to relatively specific. You can buy “bulk wine” that’s from a sub-AVA of Napa Valley. Obviously, the two are going to come at very different prices, but the idea is that essentially it doesn’t have a recognizable winery attached to it. It’s not estate-bottled, and what that means is a lot of different things. I think we’ll get into that over the course of the conversation. However, I think it’s important to note that one of the reasons why people don’t like to talk about bulk wine is we think of it as being inferior. Some of it is very, very cheap, mass-produced, innocuous wine, whether it’s made in the Central Valley of California, whether it’s made in the south of France, in parts of Spain, Italy, etc. All over the world where wine is made, there’s bulk wine. Again, it can vary wildly in terms of quality and in terms of complexity. Oftentimes, there are very positive things about the bulk wine market, too. Adam, from your perspective and yours, too, Joanna, do you have a sense for that when you see wines on store shelves? Can you identify when a wine is made from bulk juice?
A: The thing about bulk wine that is really interesting is that, first of all, you actually know it when you see it in a lot of cases. A lot of ways you can identify bulk wine is when it’s in brands that may have a bunch of different offerings from different places. You see this a lot recently in these wine startups. Brands are being created and they’re either in cans, boxed, or some in bottles, but you can grab a Malbec from Argentina, and then you can also get a Sauvignon Blanc from New Zealand. Very often, all of that was bulk wine that was bought on a market. You can actually search on an online site. It’s pretty easy to find actually for bulk wines and check their prices. Let’s say someone who worked at McKinsey or BCG had an idea for a wine startup. How did they figure out how to source wine in the first place? Because they probably went to this site, in all honesty. Then, they flew down and met the winemaker potentially. As you said, Zach, it comes over in a massive shipping container inside a massive plastic bag. It’s like a box of boxed wine, even bigger, and goes into one of these facilities, goes into a tank, and then gets bottled in their cans or their bottles. Again, a lot of these ones are good, right? I’m not saying that because it’s run by someone who didn’t have wine experience, that makes it bad. I think that’s what makes it so much more interesting. This is how people who didn’t go to viticulture school or weren’t in the industry to begin with but are huge wine lovers and have really great entrepreneurial instincts are able to start wine brands, because this market does exist. The other way that bulk wine has been really interesting is to make wines better. A lot of times you also have bulk wine that gets shipped in and then is mixed in where it’s allowed in other parts of the country. It may mean that now those wines can’t carry certain designations, but oftentimes, we drink wines here in the U.S. that we assume are made 100 percent in California, but maybe it doesn’t say California on the label. It’s very possible that it’s been mixed in with wines from other countries where the cost of growing those grapes and making the wine is cheaper. You can still get a higher quality wine that way, so it allows for wineries to deliver a more consistent and delicious product — we’re talking about the supermarket shelf, etc. — than they would be able to if they were only relying on grapes grown in certain areas of the U.S., because it’s gotten really expensive to grow wine in certain areas of the U.S. As that has gotten more expensive, that means that that raises the cost of the wine on the shelf, and no one wants that. Those are the two ways that you can think about bulk wine or how you really know when you see it. The main way, though, really, is in a lot of these négociant-style brands, unless you’re a négociant as we’ve talked about in the past, someone like Mary Taylor who is literally going over and she’s buying wine from winemakers and putting their names on the bottle and things like that. She’s not going over and saying, “This is my Bordeaux.” And then that’s it. She’s letting you know where it was made, etc.
Z: You see it not just in some of these newfangled startups, but Kirkland Signature, Costco’s brands.
J: Trader Joe’s.
Z: Actually, I’ll say this and then Joanna, I have a question for you. It’s also important to recognize that, despite the attempts to sometimes demonize bulk wine, it actually has a couple of other really important utilities. One of them is as an insurance policy for growers and winemakers because, as we’ve seen here on the West Coast over the last few years, you can have really difficult growing conditions. You can have drought years, you have fire years, you can have both. You can have all kinds of instability, and the existence of a robust bulk wine market, both here and overseas as well, for a lot of growers, it’s not their intention when they set out with a vintage to make bulk wine. It may be that for a set of circumstances, some even in unfortunate cases, all of their wine doesn’t fit or it’s not the style that they’re looking for that their customer base expects. It’s not quite the quality that they want, and in the bulk market, that might matter less because either people are looking to do different things with it or it could be used, as we point out, for vermouth. It’s important for growers and winemakers to know that it’s not the most profitable way to turn your wine in, but it’s better to get something for that than to literally dump it all down the drain, which would be the other option without a robust bulk wine market. The other piece of this is in the same way that the bag-in-box is a lot more environmentally friendly than glass bottles, so is shipping wine across the world in enormous bags-in-boxes or bags and containers, as opposed to shipping a bunch of glass bottles. While all of us to some extent have a romanticism — myself very much included — of the estate-bottled wine that then rests in some mushroomy cellar in Europe for five years, then is shipped over in a refrigerated container and all that. That’s all great, but that’s pretty bougie. It’s also not realistic for most wines. It’s unnecessary for most wines. Frankly, I think a big part of the problem here potentially is, to use your Mary Taylor example, I think Mary would be thrilled if she could bottle in the U.S. It would save a lot of money and be a lot more environmentally friendly, but the E.U. does not allow you to use AOC or other controlled denominations if the wine is not bottled within that appellation, let alone outside of the EU. Look, they have reasons for that, and I understand they’re protecting their longstanding traditions and their financial interest in keeping those industries in those places, not just the winemaking, but, of course, the attendant commerce that goes with it. But it does mean that if you want to have wine from a lot of other places, you have to bring in intact bottles or other vessels. Again, that’s much less environmentally friendly than shipping just the wine. Bulk wine, as we said at the beginning, gets a bad rap. There is certainly bad wine made from both wines out there. Frankly, there’s bad estate wine out there, too. I’ve had it. So I don’t know. Joanna, I have a question I want to ask you about. With these wines that Adam was describing that are from these négociants, startups, or things like that, what do you think about those wines? Do you reject them out of hand? Are you interested in what they are? How do they connect to you?
J: I don’t think that I’m not interested in any of these. Wow, that was all jumbled. Maybe I can just say that yes, I’m interested. I don’t think one way or the other about them, and maybe that’s just where I’m at in my wine journey. I don’t necessarily have a preference when I see something like that. I’m willing to try it.
A: Yeah, bulk wine is just so interesting because it is this thing that everyone knows exists but doesn’t want to talk about. As you said, it is this thing that not only is this great insurance policy, but it actually can make wine better in a lot of ways. If we were able to do away with some of these requirements of AOC, etc., we could maybe utilize what we learned in that to bottle wines in another country in order to bring down carbon emissions, etc., which would be awesome. It is this thing that really is what a majority of consumers come in contact with when they first come in contact with wine in a lot of ways. If your first experience in wine is buying wine at Costco under the Kirkland brand or Trader Joe’s or a bunch of different grocery stores across the country — especially if you’re looking at under the $10 price point, etc. — you’re probably experiencing bulk wine. Those wines are still really great, and they get more people into wine. That’s why I thought it was so interesting when Joanna said that it was hard to get people to talk about the piece, because it’s so integral to wine as a whole. It is part of the world of wine, so I don’t see why we’re so reluctant to chat about it.
Z: Well, I think here’s a big piece of it. Again, there is a certain romanticism that’s connected to wine. I’m guilty of this from time to time, and certainly, lots of other people are, too. Thinking only about wine in this one way, which is the way to reflect the terroir — that’s fine, and that’s maybe my own personal and professional biases showing. I have a certain affinity for that type of wine, but I think it’s also disingenuous to think about wine only in that way. For so many people, that is not how they experience any wine or most wine in their life. The wine in their life is, as we talked about — whether it’s from these private labels, relatively big producers, big retailers, or in the U.S. or abroad — it’s bulk wine in one form or another. To say to all those people, “What you’re drinking is not really wine” is a very, very bad habit of the wine industry, and it’s not exclusive to the wine industry. You see this in other beverage alcohol categories, but far more severely in wine than in any other. Most beer professionals look down a tiny bit at Bud Light? Maybe. But I think they also probably drink Bud Light from time to time. It’s not seen as, you can’t possibly enjoy craft beer if you have ever once enjoyed essentially the equivalent of bulk wine in the beer space, or in vodka, gin, or whatever. Yet, I do think it is important with all that being said to make one point here on the flip side. One of the few downsides, in my opinion, to the bulk wine market is that it does, unfortunately, allow for hiding of either inferior product or sometimes product that seems to be made unethically. Whether that’s incredible amounts of fertilizer and pesticides in certain places, whether that’s exploiting labor in certain places. Not that those things don’t exist in estate wines; they do for sure. But I think that there is sometimes a disconnect — and it happens more with bulk wine than estate wine, although not exclusively in either category — where, because wine comes often in a fancy finished package, we don’t think a lot about what it takes to get it from the Earth to there. I think with bulk wine and wines made from it, those unsavory practices are just easier to hide because there’s so little transparency about where the starting point of the wine was.
A: Yeah, I agree. I think that is the one issue you can get into with anything that’s bulk, right? There’s always a tendency in that regard to try to produce as much as possible. When you try to do that, you definitely run into the problem of potentially using things that allow for much larger production more easily. We deal with that with the production of fruits, with anything, really.
Z: Of course.
A: And that does suck about it. You would hope that there could be a push to say, “Look, bulk wine’s fine. We’re all OK with it, but it’d be ideal that bulk wine was organic and good for the environment.” I think that is a lot of the reason that I’m really OK with people having an issue with bulk wine. I just wish that’s what people would say. That is totally valid, right? That argument of not being a huge fan of bulk wine because you think that too much of it is produced in ways that are not great for the environment is totally valid.
J: Versus that it’s not quality wine.
A: Right. That it’s not quality, it’s not cool. The people making bulk wine are still very talented winemakers. When the snobbery comes out, that’s when I get annoyed. If you can articulate why you don’t like something besides what you just said, Joanna, then I totally hear you, and I actually agree with you. If you can’t articulate that and instead it’s about that it is not real wine? Uh, It is, actually.
Z: Yeah, it’s all fermented grape juice in one sense.

Not counting the limes, how sour do 3x-4x peels stay? I'm assuming that navel & blood orange peels won't have that problem. Also with oranges, are hand peeled peels still viable for candying or do they lose too much pith? Could straight frozen peels work (fully thawed)?
It depends on how often you blanch them and for how long :)
If you want them to stay bitter I’d only blanch twice, but you could totally test them as you go along in between blanching them to see how bitter they are and use your own judgement after that. If I want something fairly sharp I will only blanch twice before the syrup immersion stage. If I want it more candylike and sweet, I will blanch them a few extra times and test them when I dunk them in cold water in between boils.
By hand peel I assume you mean when you are peeling them to eat, I mean, I guess that could work? I’ve never actually tried it that way because there’s never enough pith left to make strips. You could however chop all that up really fine and sprinkle it in to cake mixes if you wanted to.
And yes, you can freeze peels and have them work just fine. Cooks and bakers who use a lot of lemon juice but don’t necessarily need the skin right away will often zest it and put it in a freezer safe container to take out whenever they want to add to cakes or other baked goods. Just make sure it’s washed and allowed to air dry thoroughly before you freeze it, otherwise it might be watery and mushy. You can also freeze whole lemons, but the insides will only be good for juicing after thawed cause it goes splat. The skin should be fine though. I personally like to freeze lemon wedges to throw into drinks. Which also makes them easier for getting peel for candying too and then I dont have to deal with scooping out the mushy insides if I want to make peel.
