250 gm maida
1 tsp salt
4 Tbsp ghee
Oil- for deep frying
For the Filling:
3 Tbsp besan
1 Tbsp black pepper powder
1 tsp chilli powder
1 tsp jeera powder
Salt to taste
2 Tbsp oil
1 tsp haldi powder
1 Tbsp dhania powder
How to Make Stuffed Farsi Puri Super Suvai Tamil recipes super suvai tamil
1.Mix ghee and salt into the flour and bind into a smooth dough after adding enough water. Keep aside.
2.Mix all the filling ingredients well and keep aside.
3.Divide the dough prepared earlier into small balls, make them cup shaped, and place a small amount of the filling in each of the balls.

5.Roll the mixture into small puris.
6.Prick with a fork.

1.Soak a cup of dhuli moong dal for an hour.
2.In a pressure cooker heat ghee and add cloves, black peppercorns and cumin seeds.
3.When they crackle add the soaked moong dal, salt, turmeric powder and red chilli powder and saute well on medium flame for a minute.
4.Now add water to it and pressure cook the dal for 1 whistle.

1.Take 2 cups of Kuttu ka atta in a large deep bowl.
2.Add boiled potato to this flour and mix well with a spatula.
3.Knead a smooth dough by adding sendha namak and required water. Make sure it does not get sticky otherwise pooris would not be rolled properly.
4.Cover the dough with a thin plastic sheet and keep aside for at least half an hour
5.After 30 minutes remove the sheet.
6.Now divide the dough into equal small size balls.
7.Sprinkle flour over the rolling board to avoid stickening of Poori and roll it in a round shape using rolling pin. Don’t make it too thin.
8.Gently slide one poori in the hot oil and deep fry till it puffs up. Fry on both sides till golden and crisp.
9.Repeat the process with rest of the pooris and place on paper towels to remove oil.

2.Mix the semolina, salt and water. Make a batter and keep it aside overnight to ferment.

4.Now add water to it and pressure cook the dal for 1 whistle.

Long before Halloween and Thanksgiving became trendy in India and superfoods became buzzwords, the pumpkin was a regular in Indian homes, served as kaddu with puri and often passed off by mothers as potato. Makhana or fox nuts were the unpretentious evening snack and aubergines were simply called baingan, starring in the baingan ka bharta, baghare baingan or begun bhaja that we all knew and relished.
As beloved as they were at home, for decades, eating out meant escaping them. Not any more.
These humble foods have now acquired fashionable status, and staid seems to be trendy, owing to enterprising chefs who have given these ingredients a comeback on kitchen shelves and are using them to jazz up menus.
Diners are lapping it up, owing partly to their health benefits and partly to their intriguing makeovers, in terms of recipe and presentation.
Global trends impact popularity, and chefs unanimously agree. Chef Vineet Manocha, Senior VP – Culinary, Lite Bite Foods says, “Healthy, sustainable and traceable ingredients, is the biggest food trend these days. A successful chef understands his ingredients thoroughly and knows how to create a balance by combining these with other ingredients.”
Anirban Dasgupta, Executive Chef, Hyatt Regency, Pune, elaborates, “Vegetables have by and large come back because we have realised both the importance of eating right, and the imbalance that we are creating to our bodies and the planet by eating way too much meat. And as a chef, vegetables present a wider spectrum of cooking opportunities for me.”
The golden ingredient
Chefs have elevated the status of this rustic, flavour-packed vegetable that was relegated to the background, and pumpkins have finally got their due on menus in India. Roasted pumpkin soup, pumpkin fritters, pumpkin pancakes and pumpkin tarts now stare back at us from several menus, even as gourmands experiment with this vegetable at home.
Stems and leaves of fruits and vegetables have always been a part of our cooking tradition, with a view to curtailing food wastage, as well as imparting unique textures and flavours.
In Bengal, pumpkin skin is fried and used as a side dish, while some restaurants use the skin to add flavour to stock or as crisps to garnish the food.
There are also ingredients that are more surprising. For years, chefs never thought of using the red leaves of choulai or amaranth, grown abundantly across India. Rajgira, the grain of the same plant, is an equal treasure trove, chefs are now tapping. From rajgira puri to rajgira coconut barfi and nachos to rajgira halwa, chefs are exploring the infinite possibilities that this grain presents.
Gouri of Gouri’s Goodies, Mumbai, says, “You’re probably seeing amaranth pop up with increasing frequency, but it has been around for 8,000 years.” She adds, “A source of protein for those who don’t eat meat, it has a great advantage in India with its high vegetarian population. Try roasting or popping it for a bit of crunch, malty sweetness and add it to granola, salads, or even as a crisp coating to meats.”
Augmenting the aubergine
At home, the baingan, termed as aubergine or eggplant on restaurant menus, has acquired star status. Owing to its versatility and texture, it lends itself easily to a lot of cuisines like Middle Eastern and Italian, apart from Indian.
Moringa or drumstick leaves too have been rediscovered by chefs, and from methi moringa ka jhinga to moringa soup, its subtle flavours, now, tease palates. Other ingredients, such as makhanas and millets, have found their rightful place back in kitchens. Rich in protein, with a low glycaemic index, makhanas or lotus seeds, a humble snack or used when one was fasting, is now back in various forms.
Chefs use it to make chaats and chikki and, at home, people snack on peri peri-flavoured makhanas instead of a buttery popcorn.
Chef Vishal Atreya of The Pump House, Bengaluru, acquiesces, “Given the fibre, essential vitamins and antioxidants they provide, these ingredients are indispensable in a kitchen.”
Millets too are seen making a return in an array of dishes. Ragi halwa, is what Chef Atreya proudly serves on his menu. Chef Anirban concurs, “I make a conscious attempt to use ragi, amaranth and jowar at our European Bistro, Zeta, in tacos and sourdough.”
Punjab Grill too, does its share. Chef Vineet lists out, “Amaranth mutton seekh kebab, kathal ke kofte, kali gajar di kanji, bajre di khichadi, ragi te khubani da halwa are some unique dishes we serve using these ingredients, and guests enjoy them.”
Chef Milan Gupta of Taftoon, Mumbai, says chefs have a pivotal role to play in popularising these ingredients. “Although, for years, restaurants and commercial kitchens have stuck to only a few ingredients that they use daily like a formula, things are changing now.”

Bhumi Pednekar also drinks 7 liters of water per day. She said, “I found this thing called detox water. It cleanses and detoxifies your body. Bhumi posted on her Instagram about her breakfast ritual. She said, “I start my mornings with a glass of warm or detox water and thirty minutes later, I eat muesli with skimmed milk and flax or sunflower seeds. Then comes the king-sized breakfast (an hour before gymming) of whole-wheat bread with 2 egg white omelets and a fruit (papaya or apple).” She added, “There is nothing healthier than kick-starting your day with a breakfast like this. Stomach this recommendation for now, next week I will share with you my lunch menu for losing it like me :)”
• Lunch

For lunch, she eats “Simple, home-cooked wholesome food that includes roti, sabzi and dal. I eat everything but a healthy version of it. So my rotis are not made of wheat but of bajra, jowar, nachni, soya, chana or rajgira and topped with a little white butter.”
She also advised on how to make healthy meals. “You can mix all these grains together to make a power-packed multi grain roti or use them individually. My dal has tadka and the sabzi has oil but olive oil used in moderation. “
She consumes homemade curd or buttermilk.
At other times, she loves to consume, “grilled chicken, brown bread vegetable and grilled chicken sandwich (I like using hummus/honey mustard, green chutney or just little olive oil if I want to grill it as a spread instead of butter or any other trans-fat spread), hummus with cucumber and carrots, nutri-nuggets or some homemade chicken gravy cooked in very little oil with a bowl of brown rice.”
• Evening Snacks

Snacking is very important. But you must choose the healthier versions. Here’s what she does. “At around 4-4.30pm, I eat half a papaya or an apple/pear/guava. After an hour or so, I have a cup of green tea with few almonds or walnuts.” So, swap your crackers, samosas, and cappuccino with fruits, nuts, and green tea.
She keeps her dinner simple and light. She says, “Around 7:00 pm, I have a big bowl of salad with all salad greens, maybe add an apple, and some walnuts or some dried berries if seasonal ones are unavailable – dressed with olive oil and balsamic vinegar or some olive chilli oil with garlic and mustard, or some apple cider vinegar.”
To keep dinner fun, Bhumi says, “at times I add grilled chicken or feta cheese. By 8.30pm, I have my dinner which is usually grilled fish or chicken (there are a lot of easy-to-make recipes available on the internet. Keep experimenting!).”
And when she’s in the mood for a vegetarian dinner, she eats, “fresh, grilled or slightly pan cooked paneer/tofu, stir fried or steamed vegetables (seasoned as you like) with a small cup of brown rice or a thin multigrain roti. I try eating as less carbs as possible at night.”
Apart from eating right, she also believes in working out and moving around to lose flab and build lean muscle mass. Here’s her workout plan.

Bhumi alternates between cardio and weights at the gym. Doing cardio at least thrice a week will help burn the calories and shed the fat. Going for weight training twice a week will improve your muscle mass, tone your body, and improve muscle strength and power.
She also emphasizes the importance of moving around a lot instead of sitting at one place for too long. She says, “Just basic things like taking the stairs up instead of the lift or walking shorter distances or just getting up for a glass of water every time you’re thirsty instead of keeping a bottle next to you.”

When asked about weight loss in an interview, she said, “Love your body type. I have always been content with my body type and that comes from self-acceptance. Self-acceptance and healthy eating habits are the tricks to feel good and look even better. Don’t judge others by weight. Stop telling your sisters, friends, and mothers that they need to lose weight. You’re not doing them a favour. If it’s someone you care about, by all means make sure she’s eating healthy but never let it take on the connotations of fat-shaming.”

Kuttu Ki Poori Recipe Super Suvai Tamil
Specially made during fasting days, this Kuttu ki poori is so tasty and healthy apart from being gluten free. It can be made with or without boiled potatoes. In fasting days, Kuttu ka atta or buckwheat flour can be replaced by Rajgira or Singhare ka Atta as well. These pooris recipes super suvai tamil are extremely crisp and taste as good as regular pooris.

How to Make Kuttu Ki Poori recipes super suvai tamil
1.Take 2 cups of Kuttu ka atta in a large deep bowl.
2.Add boiled potato to this flour and mix well with a spatula.
3.Knead a smooth dough by adding sendha namak and required water. Make sure it does not get sticky otherwise pooris would not be rolled properly.
4.Cover the dough with a thin plastic sheet and keep aside for at least half an hour
5.After 30 minutes remove the sheet.
6.Now divide the dough into equal small size balls.
7.Sprinkle flour over the rolling board to avoid stickening of Poori and roll it in a round shape using rolling pin. Don’t make it too thin.
8.Gently slide one poori in the hot oil and deep fry till it puffs up. Fry on both sides till golden and crisp.
9.Repeat the process with rest of the pooris and place on paper towels to remove oil.

How to Make Mysore Masala Dosa recipes super suvai tamil
1.Soak all the ingredients except semolina for about four hours.
2.Mix the semolina, salt and water. Make a batter and keep it aside overnight to ferment.
Prepare dosa masala:
1.Boil and peel the potatoes and mash them.
2.Grind the garlic, ginger, coriander leaves, green chillies and onions to make a paste.
3.Heat oil in a pan and add the mustard seeds to it.
4.Saute the remaining onions in it.
5.Add the paste and fry for some time.
6.Add the tomatoes, potatoes, salt and curry leaves.
Prepare red chutney:
1.Roast the chana dal, until slightly browned.

10 pieces of white bread
2 liters milk
4 ordinary barfis
Badam and pistachio for garnishing
A pinch of saffron
Chandi ka vark
Rose petals
1 cup sugar
4 Tbsp desi ghee
How to Make Bread Rasmalai Super Suvai Tamil
1.With a small katori or with a tart mould cut out small rounds from the bread pieces, keep it aside.
2.Take half cup sugar and boil till a thin syrup is formed.
3.Boil milk and while thickening add the powdered barfi and the rest of the sugar.

5.Take a tava and heat it, on this heated tava saute the round bread pieces slightly brown on both sides.
6.Dip this sauteed bread pieces into the sugar syrup and simultaneously into the rasmalai dip; pour the remaining sugar syrup into the rasmalai mix now add the saffron strings and nuts (badam and pista cut into small pieces)
7.Transfer this into a serving dish and decorate with silver vark and with a few rose petals chill the rasmalai in a refrigerator before serving.

1.Soak all the ingredients except semolina for about four hours.
2.Mix the semolina, salt and water. Make a batter and keep it aside overnight to ferment.
Prepare dosa masala:
1.Boil and peel the potatoes and mash them.
2.Grind the garlic, ginger, coriander leaves, green chillies and onions to make a paste.
3.Heat oil in a pan and add the mustard seeds to it.

2 liters milk
4 ordinary barfis
Badam and pistachio for garnishing
A pinch of saffron
Chandi ka vark
Rose petals
1 cup sugar
4 Tbsp desi ghee
How to Make Bread Rasmalai Super Suvai Tamil
1.With a small katori or with a tart mould cut out small rounds from the bread pieces, keep it aside.
2.Take half cup sugar and boil till a thin syrup is formed.
3.Boil milk and while thickening add the powdered barfi and the rest of the sugar.

Specially made during fasting days, this Kuttu ki poori is so tasty and healthy apart from being gluten free. It can be made with or without boiled potatoes. In fasting days, Kuttu ka atta or buckwheat flour can be replaced by Rajgira or Singhare ka Atta as well. How to Make Kuttu Ki Poori recipes super suvai tamil
1.Take 2 cups of Kuttu ka atta in a large deep bowl.
2.Add boiled potato to this flour and mix well with a spatula.
3.Knead a smooth dough by adding sendha namak and required water. Make sure it does not get sticky otherwise pooris would not be rolled properly.
4.Cover the dough with a thin plastic sheet and keep aside for at least half an hour
5.After 30 minutes remove the sheet.
6.Now divide the dough into equal small size balls.
7.Sprinkle flour over the rolling board to avoid stickening of Poori and roll it in a round shape using rolling pin. Don’t make it too thin.
8.Gently slide one poori in the hot oil and deep fry till it puffs up. Fry on both sides till golden and crisp.
9.Repeat the process with rest of the pooris and place on paper towels to remove oil.

How to Make Dal Parantha Super Suvai Tamil recipes
For Preparing Dal Stuffing:
1.Soak a cup of dhuli moong dal for an hour.
2.In a pressure cooker heat ghee and add cloves, black peppercorns and cumin seeds.
3.When they crackle add the soaked moong dal, salt, turmeric powder and red chilli powder and saute well on medium flame for a minute.
4.Now add water to it and pressure cook the dal for 1 whistle.
5.Mash the dal completely and allow it to cool. Try these recipes
For Preparing Dal Parantha:
1.Put a cup of atta in a medium size deep bowl
2.In this combine the ingredients such as salt, kalonji, ajwain, ghee and water. Mix well and knead into a soft dough.
3.Cover the dough bowl with a plastic sheet and keep aside for an hour.
4.After 1 hour divide the dough in equal portions for making the parantha.
5.Sprinkle flour over the rolling board and roll a portion of dough to make parantha.
6.Now place a portion of the dal stuffing in the center and seal tightly.
7.Roll it again into a round shape using a rolling pin.
8.Now heat non- stick tawa and cook the parantha on both sides using generous amount of ghee.
9.Serve the hot and crispy Dal paranthas immediately pouring extra ghee over it.
