Say what you will about Martin's writing style (and I've said plenty) but I do think he's got the White Walkers' mythos worked out for a future book and IT WOULD HAVE BEEN SO NICE IF THE SHOWRUNNERS HAD DONE 1/100TH OF THAT WORK SETTING THEM UP

Spiritually a Saddle Club AU, it centers around the antics in and around a horseback riding school.

A small excerpt...

Adora could only stand stunned as Catra shoved the reins into her hand and then walked out of the stableyard without a glance back. "What the actual FUCK?" Glimmer had her saddle resting on her hip but looked half a second from throwing it to the ground and punching the new girl in the face. "It's not like she just wandered into l! She was in our class! She’s knows you’re not just some groom!" "It's fine!" It wasn't fine and Adora’s face felt like it was going to split from all the fake smiling, but she checked the lesson list for the name of Catra's horse. "'Silver Storm' and I have never gotten to hang out before! I'll take care of him while I do Swifty, it's no problem." Glimmer still looked like she wanted to fight but thankfully took the pleading look in Adora's eyes as a hint to drop it. "I'll help. But for the record? I retract my dibs. You can have her." Adora laughed though she felt like crying. "Gee, thanks."

I like the reverse curse Ford gets, him stuck as a horse most of the years as opposed to what the gift usually does.

How does he take it? Is he just a grumpy horse in the fields, snapping at almost anyone because he doesn’t want their pity or sympathy. Is he, instead of at the stable, sort of in the wild around the property? Or is he still around the barn?

Oh, he's incredibly grumpy and upset and just not happy at all. Particularly the first few years of the gift turning into a curse, Ford takes it really hard.

As for where he stays, well, he doesn't stay with the McGuckets for too long. The McGuckets are concerned that someone will realize that they have a very distinctive stallion that is aging at the same rate as a human and start asking questions or otherwise prying. So when they all realize the reality of the situation, they start looking into places Ford can live where people will mind their own business and won't ask questions or get involved in something odd.

In the meantime, Stan, Lute, and Angie are entering as many competitions as they can, both in horse and human form, to try to earn some prize money to help establish some sort of situation wherever they find for Ford.

Eventually, they settle on the town of Gravity Falls, where odd things happen all the time and the citizens turn a blind eye (heh) to it. So Stan buys land there and arranges for a riding school and stable to be built, along with a house. It's a lot of money, more than they had earned in their competitions, but the McGuckets willingly help him out. Stan insists he'll pay them back. Again.

So Ford lives at the riding school that Stan runs, which (per your suggestion lol) they call Mystery Stables. When asked what the mystery is, Stan says "The mystery is how all of our horses are so good!"

The first few years, Ford refuses to participate in anything at the stable, other than the occasional ride with Stan. But eventually, he starts to accept his situation more and gets bored, and tells Stan that he'd like to be involved in more activities. So, Ford joins the roster of horses used in riding lessons. He's so gentle with the riders that Stan winds up having him be used for the youngest and least experienced riders.

(But some days, Ford isn't in the mood to be ridden, and lets Stan know, so Stan takes him off the list those days.)

Oh, and by this point in the timeline, Stan and Angie are very serious as a couple, possibly engaged, married, and/or parents. So Angie's around, too. ;)

As someone who grew up around horses in my childhood I'm gonna be honest and say that a man is instantly 100x more attractive when he knows how to handle a horse.... And Remy is no exception 😩

(Note!! The horse ended up being traced from a stock photo because I kept failing in drawing a believable horse T___T and then in turn edited to fit the perspective, and my style and such and then rendered alongside everything else! 💕)
