OMG YUM! Was craving Tex Mex tonight and made @mindovermunch's Nacho Casserole. Delicious! Made a few substitutions: lean ground turkey for beef and baked blue corn tortilla for regular chips. Nonfat Greek yogurt (per the recipe) adds a nice bit of coolness to the heat of the dish.
