Carbonara is one of my favorite dishes to make, and I finally used actual guanciale (had to order it because it's not around here). Impeccable.

I think I was right when I said that the still of the count on a horse was him meeting Luigi Vampa for the firs time. Clip on X (the 13 second one).

This is not spaghetti all’amatriciana, but it is adjacent to it in that I used the basic ingredients and added things like garlic (sacrilegious to purists) and some crushed red pepper for some heat. It was really tasty and just what I wanted that night for dinner (and lunch for the rest of the week), but I would never present this to a Roman and expect them to be fine with me calling this true amatriciana sauce, and that’s OK!

I love being inspired by a dish and incorporating it into something else, as that’s what’s fun about cooking and how dishes evolve and new combinations emerge. It just bugs me when I see people use terms inaccurately for SEO and/or clout, but I guess that’s a rant for another day.
