INGREDIENTS 2 cup Dried white peas(Chole) 2 Potato 2 Tomato 2 Onion 2 Tea spoon Green chili paste 1/2 Tea spoon Garam Masala powder 1 Tea spoon Mustard seed 1 Tea spoon Coriander powder 1/2 Tea spoon Red chili powder Little bit hing powder 2 Tablespoon oil Salt to taste, Lemon Juice, Sugar (Jaggery) ****************** For Garnishing Sweet Imli ki Chutney Garlic Red Chutney Green Coriander Chutney Finely chopped onion *********************** Ingredients for Patis 6 Boiled potato 1 Cup Green peas. 1 Tablespoon green chili paste 2 Teaspoon Lemon Juice 1 Tablespoon Green coriander 1/2 cup Bread Crumps Salt to taste Oil / Ghee for Patis Fry METHOD For Ragda , Soak Dried white peas in water for 2-3 hours. Use pressure cooker to cook  till it get soft and not smooshed. Chop tomatoes and onion . Heat 2-3 tbsps of oil and add the onion.Fry till it turns light brown. Then add Green chili paste ,Turmeric Powder,Hing ,Garam Masala powder ,Coriander powder , Salt & Tomato Puree and cook it for 2-3 minutes. Mix this with boiled white pease and water for about 2-3 cups and let it boil. Add Lemon Juice, salt and Sugar to taste. For Patis, Boil pototoes and peel skin. Cook Green peas and then mash it with Pototoes . I cook green peas in eiether pressure cooker for 4-5 minutes or microwave in a plastic bag, with 2-3 tbs. water, for 5 minutes. Add green chili paste,Lemon Juice ,Green coriander ,Bread Crumbs & Salt. Now make round flat patis from this mixture . Put some oil on Tawa pan on high flame and let it cook on both side (brown color)Garnishing Keep patis in serving dish . Add ragda on patis. Then add imli ki chutny,green chutney , red Garlic chutney, chopped onion and fresh green chopped coriander.

Pyaaz ki Kachori Recipe

Authentic Rajasthani cuisine is all about the richness of taste. If you are a food lover, you should taste Rajasthani food some time for sure. When doing so, definitely try the Jodh pur ki Pyaaz ki Kachori, an excellent evening snack that is full of flavours. In this period of lockdown, you can even make these at your home. We have put together the recipe of this delectable dish for you. So go ahead, make your own Pyaaz ki Kachori and enjoy the delicacy.
Ingredients
For Dough
● 2 cups Plain Flour (Maida)
● 4 tbsp melted Ghee
● Salt to taste
For the Onion Filling
● 2 cups finely chopped Onions
● 2 tbsp Oil
● 1 tsp Nigella Seeds (Kalonji)
● 2 tsp Fennel Seeds (Saunf)
● 2 Bay Leaves (Tej Patta)
● 1 ½ tsp finely chopped Green Chillies
● 2 tbsp Chick Pea Flour (Besan)
● 2 tsp Coriander Powder (Dhania)
● 3 tbsp chopped Coriander (Dhania)
● 2 tsp Chilli Powder
● 1 tsp Garam Masala
● Salt to taste
● Oil to deep fry
Method
For Dough
● Add all the ingredients in a deep bowl and knead into a semi-soft dough using enough water
● Knead well for 4 to 5 minutes
● Cover the dough with a wet muslin cloth and keep aside for 15 minutes
For Onion Filling
● Heat the Oil in a broad non-stick pan
● Add Nigella Seeds, Fennel Seeds, Bay Leaves, Green Chillies and Onions
● Sauté on medium flame for 5 minutes
● Add Besan, Coriander Powder, Chilli Powder, Garam Masala and Salt, and mix well
● Cook on medium flame for 2 minutes and stir the mixture occasionally
● Remove mixture from the flame, add Coriander and mix well
● Remove the Bay Leaves from the mixture
● Divide into 12 equal portions and keep aside
The Process Further
● Divide the dough into 12 equal portions
● Roll out each portion of the dough into a 3 inch diameter circle
● Place one portion of the Onion filling in the centre
● Bring together all sides of the circle and seal tightly
● Roll the filled portions into 2 ½ inch diameter circle
● While doing so ensure that the filling doesn’t spill out
● This way make the remaining 11 kachoris
● Heat Oil in a deep non-stick pan and deep fry 4 kachoris at a time, on a slow flame for 10 minutes flipping them occasionally
● Drain the excess Oil on an absorbent paper and keep aside
● Make the rest in same manner
● Your kachoris are ready to be served hot with tea

For Matar Kachori Pastry
One cup all-purpose flour, you can also use whole wheat flour or both the flours in a half-half ratio
One tablespoon oil or ghee, I used sunflower oil
Quarter cup lukewarm water
Quarter teaspoon baking powder
Quarter teaspoon salt or add as per taste
For Matar Kachori Stuffing
2 cup peas, fresh or frozen
Quarter teaspoon red chili powder
Quarter teaspoon turmeric powder
Half teaspoon coriander powder
Half teaspoon fennel powder
Half teaspoon chaat masala or add as per taste
Half teaspoon amchur powder (dry mango powder)
Half teaspoon green chili-ginger paste or crushed or minced green chili & ginger - use about ½ inch of ginger and ½ or 2 green chilies and then crush them in a mortar & pestle or mixy if we say in Hindi
Quarter teaspoon cumin seeds
One tablespoon besan (gram flour or chickpea flour)
Two teaspoons oil or ghee (clarified butter)
salt as required
For Frying
3 to 4 cups oil

Instructions
Making Kachori
Sift the flour with salt and respective baking powder. Add oil and form a bread crumb similar mixture.
Now add water and form a tight dough. Cover it with a damp cloth and keep it aside.

Matar Kachori Stuffing
Boil the peas. Mash them coarsely or semi-coarsely both will work.
Heat oil and shallow fry the cumin. Then add the crushed ginger with green chilis.
Fry it for a minute. Now add the dry spice powders with salt.
Stir and add the respective amount of gram flour. Saute it for 3-4 minutes.
Check the seasoning and add some more spice powders and salt, if it seems to be required.
Making Matar Kachori
Make equal-sized 6-7 balls from the dough. Roll into 4-5 inch round on a dusted board.
Add the stuffing to the center. Brush some water on the edges.
Now bring together all the edges and pinch them to the middle. Press the edges downwards below.
Roll into a 5-6 inches kachori. Prepare the rest matar kachoris like these.
Keep them covered it with a wet cloth.
Frying Matar Kachori
Now heat up the oil in a kadhai.
At low-medium flame, fry the kachoris till they become golden brown, flaky, and crisp.
Drain your matar kachori's on paper tissues to let the tissues absorb the excess oil.
Serve matar ki kachori hot with some coriander chutney or tamarind chutney.

Heat water in a pan and add Peas and when it starts boiling, switch off the flame and cover it with lid. When it cools down grind it coarsely in a mixer and remove it in a mixing bowl..
Heat two tea sp cooking oil in a karahi and add coriander seeds, fennel seeds, carrom seeds, asafoetida and sauté for 30 seconds. Now add salt, red chilli powder, garam masala mango powder and mix well. Sauté for 30 seconds. Now add mashed potatoes, coarsely grinded peas and coriander leaves and saute for 1 minutes. Switch off the flame. Filling is ready. Remove it in a plate..
Take a small portion of dough and make a ball and roll it with the help of rolling pin. Keep 1 tb sp prepared mixture over it and roll the edges by bringing them in the centre making like a tikki. Cover it and press this between your palms and make a puree by pressing with your fingers. Like wise make all the kachori..
Heat oil in a karahi and deep fry kachoris till golden brown..
Serve hot with Aaloo sabji and chutney..
