A tasty and healthier substitute for classic fried pastries are these Paleo almond-filled pastries. Paleo enthusiasts will love these because they are fried to a golden perfection and filled with a sweet almond mixture.

Ingredients: 2 cups almond flour. 1/4 cup coconut flour. 1/4 cup coconut oil, melted. 2 tablespoons honey optional. 1 teaspoon vanilla extract. 1/4 teaspoon salt. 1/2 cup almond butter. 1/4 cup finely chopped almonds. 1/4 cup unsweetened shredded coconut. 1/4 teaspoon cinnamon. Coconut oil for frying.

Instructions: In a mixing bowl, combine almond flour, coconut flour, melted coconut oil, honey if using, vanilla extract, and salt. Mix until a dough forms. Divide the dough into small portions and roll each portion into a ball. Place the balls on a parchment-lined tray and flatten them into small circles about 1/4 inch thick. In a separate bowl, mix almond butter, chopped almonds, shredded coconut, and cinnamon to create the filling. Place a spoonful of the almond filling onto half of the dough circles, leaving some space around the edges. Fold the other half of the dough circle over the filling to create a half-moon shape. Seal the edges by pressing them with a fork. Heat coconut oil in a skillet over medium-high heat for frying. Carefully place the pastries in the hot oil and fry until they are golden brown on both sides, about 2-3 minutes per side. Remove the pastries from the oil and place them on a paper towel-lined plate to drain excess oil. Let them cool slightly before serving. Enjoy your Paleo Almond-Filled Pastries!
