When the pattern design is complete, the color dye is mixed, and the cloth is submerged into the mixture. The coloring process may be repeated many times until the desired color is reached. Ghanaian cuisine shares many of the same ingredients as Togolese food, but traditional dishes are still unique. In Cape Coast we took a cooking class with Essi, a woman from Global Mamas, to learn how to make two classic Ghanaian dishes: red red (fried plantains in palm oil and with beans) and palava (local greens and ground melon seed) sauce with boiled yams. We spent about three hours with Essi, cooking and eating and learning a little Fante. I’ve decided to plan all future travel around learning how to cook new dishes - I’m thinking Thailand next...

For a Peace Corps volunteer in Togo, vacation in Ghana means taking advantage of a lot of great food we can’t get in Togo. In Accra we had mango lassis and garlic naan at an amazing Indian restaurant, pistachio gelato (yes, really), as well as yellow curry at a great Thai place in Osu (downtown area). The Indian place was so good that on our way back from Cape Coast, we took a cab there for lunch before hopping in a bus to head back to Togo.  The vegan Baobab Cafe in Cape Coast was also a treat - whole wheat crepes with fruit and a fresh tofu salad.

The Indian and Thai were amazing, but the Ghanaian food we had was just as delicious! Street food in Ghana is often fried rice with lots of vegetables and shito, a fish and pepper sauce. (I bought a jar to bring back to Togo...). Plantain fufu with palm nut sauce might have been my favorite meal of the trip, washed down with Ruut, a Ghanaian cassava beer that tasted almost hoppy...

When I’m back in November, expect a “thank-you-for-all-your-support-and-emails-and-care-packages” party with my favorite dishes from Togo - red red and palava sauce just might have to make a guest appearance...
