I can not handle much spicy foods. I know I have White taste buds... but why is ginger so spicy?! Why are cloves also spicy??!! Like yes of course my ancestors definitely deserve shame upon them, but must I be unable to eat shop shitting brought gingerbread!?! Must I be lumbered with making my own gingerbread only for my hand to slip, making the fiery ginger-fucking-not-even-bread-cake-in-a-bloody-mug??!!!

"Sunny, don't try to eat that whole thing."
"What? What the hell do you think I bought it for?"
"That's like eating three pounds of straight sugar!"
"Course it is, how do you think I stay so sweet?" Sunny flashed his friend a toothy smile, batting his long eyelashes. Laurie rolled her eyes.
"Don't come crying to me when you give yourself a bellyache," she said, returning her attention to her book.
"I wouldn't come crying to you if my life depended on it," Sunny retorted. He pried the packaging open with his teeth and tossed it aside, holding up his opponent: a three pound gummy worm. Laurie supposed she should just be glad he hadn't gone for the bear, which apparently was even heavier. Sunny chomped down on the worm--not on the tip, but right in the middle, as though it were an ear of corn. It was so sweet it almost made his teeth ache. With a grunt, he yanked off a rubbery bite.
Laurie was doing her best to ignore Sunny, but he was making a lot of noise. Each bite was punctuated with grunting and slurping and a small cacaphony of other unpleasant eating noises. After sitting uncomfortably through a few bites, she looked up from her book, wrinkling her nose at him in disgust.
"Can't you do this any quieter?"
"Huh?" Sunny looked up at her, mouth full of worm.
"You sound like you're trying to suck the siding off a house! If you have to eat that stupid thing right next to me, do it quietly," she said. Sunny nodded, swallowing his mouthful with a thick gulp, and returned to his worm. He took another bite, this time making an effort to be quiet, and to his credit, he did manage to cut down on the amount of noise. Laurie was a little bit impressed by this; quiet wasn't generally Sunny's strong suit. She could still hear soft sounds of struggle as he worked to pry chunks off of the worm, but she supposed she could deal with that. In fact, she would never say so, but his little vocalizations as he wrestled with his rubbery snack were almost cute.
Sunny had only gotten through a small portion of the worm, but his tummy was already beginning to ache. With the worm being as large as it was, it didn't take much of it to fill up his stomach with dense, gummy sugar. Still, he knew it would take forever to get through it if he didn't push himself a little, and by this point, it was too chewed up and sticky to share with anybody else. He took a breath and pushed on.
Laurie glanced over at Sunny again. He definitely wasn't eating with the same gusto he'd started with. Still, he looked determined. He also looked a little ill. It was hard to judge given the strange way he'd decided to go at it, but she estimated that he must've been about a third of the way through the worm. The thought of a solid pound of gummy candy sitting in his belly made her own stomach ache. She almost opened her mouth to say something when Sunny finally lowered the worm, looking tired. He sat like that for a moment, and then, to Laurie's surprise, he set the worm back down atop its packaging. He leaned back against the couch with a sickly sigh. His tummy bulged out slightly.
"You're in for it now, Sunshine," she said, reaching out and giving his belly a gentle pat. "I don't think even ginger ale can fix that." His stomach let out a sad little gurgle. Feeling sorry for him, Laurie carefully pulled Sunny into her arms, resting her hands on his achy, bloated belly. He tensed up for a moment, then allowed himself to relax.
"I thought you said not to come crying to you," he mumbled, laying his head against her shoulder.
"Well, you're not, are you?" She rubbed his belly softly.
"I guess not." He closed his eyes and tried not to think about how sick he felt. In addition to the massive onslaught of sugar, the sheer quantity of gummy worm he'd eaten was far too much for his tummy. He should've stopped when he first felt full. In fact, he never should have bought the stupid thing in the first place. Not only did Sunny feel sick, he felt foolish and guilty as well.
"You've gotta start being nicer to your poor little tummy," said Laurie, still rubbing his belly in gentle circles. It wasn't the first time she'd said it, and it certainly wouldn't be the last. Sunny knew she was right. Sometimes, however, he just couldn't help himself. He wasn't known for his good impulse control, and he had a bad habit of taking things as a challenge. He was aware of this flaw, but he couldn't seem to shake it, and he was nervously waiting for the day when his friends' sympathy would run out.
"It's hard," he said quietly. It was all he could think to say, but Laurie had a feeling she knew what he meant. Taking care not to squeeze his tummy, she hugged him. Sunny opened his eyes, surprised, and, after a moment of hesitation, returned the hug.

heya! i've got a few kins that, well, drink blood, to put it bluntly. both my main ID (vampire, nonspecific) and my main fictotype (V2 from the game ULTRAKILL) need blood to keep functioning- and while i've been making do with caprisun packets, i'm hoping that maybe you'd know something that would taste similar to blood/iron? i'm not really a fan of autofeeding, since, yknow. [gestures] but if you know anything that someone could reasonably acquire without being looked at all-too-weirdly, please let me know :o
i'm also looking for a way to simulate feeding- sucking the blood out of stuff, yknow- but that's what i have the caprisun for ;P

hello! i’m not too familiar with any of these myself, so i can’t particularly vouch for their similarities to blood taste-wise, but there are a number of juices which are known for their high iron content. i’m wondering if  experimenting with these, and then carrying around the one you decide you like the best in a flask, thermos or even a reusable pouch like the capri-sun ones would work for you? reusable drink pouches - this is literally just the first one i found when i googled it, so if the link doesn’t work for you (location, not wanting to feed the beast that is amazon, etc), try searching elsewhere for “plastic/refillable drink pouches”! to make them less conspicuous, you could even disguise them as capri-sun pouches by opening used capri-suns up with scissors and wrapping the packaging around these reusable pouches like a sleeve. prune juice - i’ve heard that prune juice is particularly high in iron! this article talks about its health benefits, and there is a paragraph at the end which details how to obtain it (or make it yourself, if you prefer). i have not tried prune juice myself, but from what i have heard it has a taste that many find unusual or unpleasant. that seems like it could be a good candidate for something reminiscent of feeding on blood. pumpkin juice - what could be better for this time of year! it’s a little hard to find a good recipe for plain old pumpkin juice since it seems most people want to make it into a sweet, autumnal drink. but pumpkins definitely have that tang you’re craving, and with the quantities of spice and sweetness adjusted to your preference, i think this could be another strong contender (apparently, pumpkin is also a good source of copper, which should help emulate the taste of blood).  beetroot juice - beetroot is iron-rich, and it’s red! the taste of this root vegetable is significantly underestimated by veggie-decriers, but i personally think it’s delicious (though it’s a little strong to drink large quantities of without additional ingredients, so i would advise holding on to the apple and ginger in this recipe). blood orange juice - and of course... blood oranges! i’ve linked a recipe, but depending on where you live, you should be able to find this juice in stores pretty easily. i’d recommend one with “bits”, because i find they’re less sweetened and have more of the bitterness. if you’re making it at home, why not add a little bit of one of the iron-rich fruits or veggies mentioned above, just for that extra kick? i hope that this helps you out! i focused on juice here, but if you’re more interested in some heartier recipes and meals, feel free to send another ask!

Quarantine Shopping and Meal Planning
So I asked about this over on @steve-rogers-new-york​ and there was a positive response, so here we go. Date: 15 March 2020
Before I start, let me be clear that I am not a professional, just someone who deals with stress by planning, and who has some experience with emergency preparedness having lived in New Zealand during the more recent large earthquakes. Feel free to correct me or make positive additions. For clarity, I am currently in Ontario Canada, and cooking for one person, but have made allowances to feed my unprepared housemate in a pinch.
Priorities with this Pandemic Planning
Unlike some other emergency preparedness priorities, power, water, and phone do not appear to be issues. So you have greater flexibility with what you can make and keep. Your priority should be having a comfortable amount of food on hand in case you cannot leave the house. Don’t go nuts, don’t overbuy, and don’t buy thoughtlessly.
Planning What to Get and Make
When thinking about what to buy and what to make, you want to consider a few things:
How many meals do you need to make? That is, how many people are you feeding and for how long? Calculate the number of meals you need in total and make sure you have enough meals planned to cover those. Obviously, if you can prepare for more than that is good, but don’t go too nuts.
How many portions can a recipe make? You don’t want to be making single-serve meals. It’s inefficient and short-sighted. So pick recipes that make large quantities, that can be portioned up in containers to be chilled or frozen.
Am I being efficient with my ingredients? Are the quantities listed in regularly used recipes the most practical for your current ingredient availability? For example, if you’re making a stew with beef, but beef is in short supply, half the amount the recipe asks for, and then bulk up on potatoes, carrots, zucchini, etc.
What ingredients will last best? Don’t JUST get non-perishables! That just sounds miserable. I’ve had no issue so far getting fruit and vegetables, and if you’re smart with your choices and storage fresh foods can be good choices. This when picking items how long they will hold in your fridge or if they’re freezable.
Don’t forget about breakfast and Lunch!
If money is tight and buying ahead is challenging. Think laterally. Make use of dollar stores like Dollarama, Dollar Tree, or whatever your local variant is. They will often have a great range of shelf-stable foods like pasta, rice, canned goods, and other ingredients at really low prices. And from my experience so far, they seem to have passed the attention of many shoppers and are still in good stock-levels. Start there first, hit multiple ones to get a good variety, then shop at supermarkets for whatever you cannot get there. The quality is good, sometimes brand-names, and they can be far superior than supermarket prices.
Do you have a large stockpot, fry pan, and deep baking dish to make these large meals? If not, see about getting them. Large lasagne pans and other kitchen items can be found cheap at many dollar stores.
Don’t have a car? Me neither. Grab a backpack and some good re-usable bags and make multiple trips for heavier items like cans. Also, consider grocery delivery services. They can be hit and miss right now, as it’s harder to adapt to products being unavailable. This being said, they can be a good way to get bulk, heavier items to your house. Also, consider asking friends or family to get you items when they go and drop them off to you.
What Foods Hold Well and Go Far
Non-Perishables that can extend meals
Pasta and Noodles — Pasta is a great item for entending a meal. Be it soups, stir-fry, oven-bake, or just able anything, you can either cook-in, mix-in, or have as a plain side. They bulk up a meal and make it go further.
Rice  — Same as above.
Lentils and Other Legumes — Lentils are great for bulking up and extending soups and stews. Also consider chickpeas, beans, and other legumes.
Potatoes — Potatoes are great! The can be a great base, addition, or side to many many meals. While these will not last indefinitely, if you keep them cool and dark then they will last quite some time.
Non-Perishable Ingredients and Flavouring
Canned Vegetables — Don’t be picky. Yes, get fresh veggies where you can, but also suck it up and get some canned goods as a back-up. Carrots, peas, beans, tomatoes, all that. They’re good, they taste fine, and go well in so many recipes.
Canned Fruit — Many fruits have a shorter shelf-life, so consider some canned alternatives.
Herbs and Spices — Make sure you have a nice spread of these. It’s easy to grab the base ingredients for food, but if you don’t have something to flavour those meals with, you’ll have a miserable time.
Sauces — Same as above.
Canned Tomatoes and Tomato Paste — Yes, I’m listing this separately because of their versatility. With canned tomatoes, you can make soups, spaghetti, lasagne, chilli, curry...so damn much. So grab a good stock of these.
Perishables
Eggs — Eggs are so damn versatile. Get eggs. When kept in the fridge they keep for a good long time.
Vegetables — Think smart. Get items you know last well in your fridge, and avoid items you usually have to throw-out or use-up within a week or two.
Fruit — Same.
Breads — Same. Also, consider freezing loaves if you have the space to do so. It tastes just as good as fresh, honest.
Frozen
If you have the capacity to get things frozen or to freeze them. Do it. Frozen peas, corn, stir-fry veggies, meats...they last well and taste good.
My Grocery List
This is what I have been buying myself. Not all at once but in multiple trips over the last couple of weeks.
Pantry
Top-up herbs and spices: ground cumin, garam masala, oregano, basil.
Spaghetti pasta
Spiral pasta
Lasagne pasta sheets
Large bag of rice
Flour
Canned tomatoes (4 large cans)
Tomato paste
Canned asparagus
Canned coconut milk (2 cans)
Lentils
Potatoes (6 large)
Onions
Fridge
Eggs (12pc)
Milk
Cheese
Zucchinis (3)
Carrots (large bag)
Lemons (2)
Limes (2)
Bag of spinach

Crescent Rolls

750g stewing beef
Box stuffed chicken breasts (I love ham and cheese and a good addition to any meal)
500g lamb (for curries)
500g stir-fry beef
Household
ONE pack of toilet paper. Seriously. Just get what you personally need.
A couple of small packs of cheap toilet paper from the dollar store.
Pack paper towels
Any cooking materials like tin-foil, parchment paper, that I use regularly.
3-pack tissues (I have killer allergies so I’ll always need them)
Plastic containers for portioning meals in the fridge or freezer.
Meals I have Planned
These aren’t full recipes, but rather a list of ingredients and volumes for grocery references. I might write-up full recipes later if people are interested. 
Lasagne
This is my fav vegetarian lasagne that also have minced meat. It makes around 6-8 servings (depending on home much you eat and size of baking dish).
Lasagne sheets (dried) or just those baby lasagne pasta if you like them better. 4 cups Milk 250g Cheese Butter Flour Nutmeg Chicken stock 3 Large Carrots 3 Large Zucchini Large bag of fresh spinach leaves 400g Canned Tomatoes Fresh/Jarred Garlic 500g minced beef Light Herbs (oregano, basil, etc to taste, but not too much)
Vegetable Stew
Technically a soup, but I never blend it and just eat it as is. Makes 3-4 servings alone and 5-8 servings when served with cooked rice.
2 cups dried lentils (soaked overnight) 1 Large Can Tomatoes (not pre-herbed, just used plain) 2 cups Chicken or Vegetable Stock 2 Large Carrots cubed 2 Large Zucchinis (quartered then cubed) Fresh/Jarred Garlic 1 Tbsp Cumin 1 tsp Ground Coriander Fresh Coriander (lots) Fresh ground peppercorn
Beef Stew
500g Stewing Beef 3 Large Potatoes cubed 3 Large Carrots cubed 1-2 cups Frozen Peas Fresh/Jarred Garlic 2-3 Tbsp Flour Fresh ground peppercorn 1 Large Onion 3-4 cup Beef Stock 3 Tbsp Tomato Paste Rosemary 2 Tbsp Cornstarch
D.’s Curry
This is just and random mash-up curry I make. It can be cooked with or without lamb and both taste great. It is not spicy. Makes 2-3 servings
2 Large Onions (one minces with spaces, one sliced) Fresh/Jarred Garlic Fresh/Jarred Ginger Ground Cumin Ground Coriander Ground Cardamon Whole Cardamon Seeds Whole Cumin Seeds Garam Masala 300ml Uncooked Rice (then cook it, obviously)
Closing thoughts
Once you have these items, don’t use them. Carry on like normal and don't use these items unless you need them. Now I have my meals planned, I am back to making normal meals with what I can get. Always have that TWO WEEK buffer on hand at all times.
Purchase your groceries gradually. Don’t buy out in one go, be considerate. Take only what you need.
Visit multiple locations, sell-outs are not the same everywhere and while one supermarket may be sold out of something, another may still have a fresh stock.
More stocks WILL come. So if you cannot find something, make alternate plans, find a substitute, and return every now and then to check stocks. Supermarkets are constantly restocking as they can.
Be kind to customer service workers. They are just trying to get through this like you are. They are not paid well, have no control over their employers' stocks or decisions. They have the same stress you do and you being an asshole is just causing them MORE stress they do not deserve. Be. Kind. Be. Understanding.
Support others. Friends, family, neighbours, co-workers. We do this together.
DON’T STRESS OUT! Be prepared. Be aware. But don’t become overwhelmed, it will all be FINE. We just have to adapt and ride it out <3

I do not understand British snack foods
* Going back to the vaults and the time I raided a UK import store for intriguing British snacks. This was when I was still living on the North Shore, so I’m pretty sure it was one of West Vancouver’s many many many UK-themed shops because ex-pats & their descendents have more Britishy Britishness than the original print. (First place for Britishesquity in Canada surely goes to VIctoria, which is basically Britain, but with government workers and totem poles.)
SMITHS FRAZZLES CRISPY BACON FLAVOUR CORN SNACKS

I definitely smell bacon flavour when I open the package - emphasis on bacon flavour. And coffee for some reason, but perhaps that's a phantom association. The pieces look more cornish than bacony, although I see how they went out of their way to artificially colour, in barely visible strips, the cornish pieces so that they faintly resemble bacon. (Maybe peameal bacon that’s extremely heavy on the peameal?) They do taste like bacon . . . very, very salty bacon. I had to drink two cups of water and eat an apple to cleanse my palate afterwards to stave off hypertension. The ingredient list and nutritional information isn't horrible, but it isn't good either. (Saved again by decent sized packaging!) And this bacon snack is suitable for vegetarians! Hooray?
SKIPS TINGLY PRAWN COCKTAIL

There are several reasons why I picked this up, the primary one being the curious absence of a qualifying noun: tingly prawn cocktail . . . . what, exactly? The byline reads “flavour” but “Tingly Prawn Cocktail Flavour” isn’t much help. I'm pretty sure it's not JUST prawn cocktail inside this bag. No such elucidation on the back of the package** - just a playful font announcing that "Skips are the fizzy, light and melty tongue tingly snack. Experience the tingle, balance a Skip on your tongue and let it melt in your mouth!" So that's the second reason why I picked this up: all the "tingly" claims. If this is basically prawn Pop Rocks, then Skips gets +100 points for sheer WTF gusto.
When I open the bag, a familiar scent wafts upwards. It smells . . . . like fish. Fried fish, to be more specific. It smells like a fish & chip kitchen. How they even managed to scent these with seafood AND grease is impressive, though probably not what they were looking for.
Looking at the chips, they look very much like a shrimp cracker. They are totally a shrimp cracker, and the tingliness is merely the dry cracker sucking all the moisture off one's tongue as it dissolves into a very, very, very faint shrimp cocktail-flavoured wad of goo in your mouth. One day, ONE DAY, snack bags are going to live up to their hype. I hold on to hope as I scrape off my tongue.
**Afterwards, in very teeny tiny font, I find my answer: "prawn cocktail flavour tapioca snack". Okay. Well. I see why they left that off the front.
SMITHS SCAMPI FLAVOUR FRIES

"Cereal snack with a delicious scampi and lemon taste," announces the bag. I have no idea what scampi is, but I’m pretty sure it doesn’t belong in cereal. I do know it’s an inherently funny word Monty Python used a lot, so I couldn’t resist giving these a try. It tastes of lemon and fish, with a small hint of spice. Surprisingly, they’re quite good. I don’t know how wheat flour and soybean oil can be made to taste like fried fish, but that’s human progress, I suppose. "Scampi" is nowhere in the list of ingredients, but I can ignore my inklings of worry and just enjoy them. At least it’s not tapioca goo.
WALKERS FAMOUSLY WORCESTER SAUCE CHIPS/CRISPS

Fun fact: Britons, in ongoing efforts not to pronounce half the letters in any given place name, have erroneously identified “Worcestershire sauce” as “Worcester sauce”. I can already feel the anger rising and angry comments about to rain down on my ignorant Canadian butt, so I shall direct you the Worcestershireshricesterians themselves. CHECKMATE, BRIT-CHES!
WorcesterSHIRE sauce smells like dirty socks at the bottom of a gym bag, tastes like I don't know because recipes only call for small amounts of it and I'm not sure that I've ever tasted anything else distinctively Worcestershire . . . ian? I suspect this is a sexy sounding flavour to put on a chip/crisp package, but an easy flavour to manufacture in that it's not too far removed from salt & pepper or paprika or roast ox or the like. Expectations: not high. Do they smell like Worcestershire sauce? Thank the heavens, no. They almost smell ketchup chip-y. The taste: it's a lot more complex than I thought it would be. It has a bit of a tang and it's not too salty, It tastes like 3 - 4 different somethings: kind of peppery, kind of vinegary, kind of tomato-y, spicy but not spicy hot. I'd definitely eat these again. Looking at the ingredients, I see these are not flavoured with Worcestershire sauce but with "Worcester(shire) sauce seasoning" which includes: "flavouring" (biggest ingredient . . . and shouldn't that be an adjective and not a noun?), salt, sugar, barley malt vinegar, citric acid, dried onion, dried garlic, fructose, cardamom, ground black pepper, ginger, clove & cocoa powder. Wait. What? These chips could be a half brother to gingersnap cookies.
CALBEE EUROPEAN TASTE BRITISH FISH TARTARE SAUCE FLAVOURED POTATO CHIPS

So. I have notes for these, but no photos. I cannot, for the life of me and after a full day searching on Google, find evidence of their existence (although Calbee DID come out with a line of European Taste chips, some of which I’ve reviewed on this very blog, and I recall being distinctly sad that I didn’t get my hands on the lobster bisque chips). I don’t remember eating these at all and yet, I have notes. Probability that this could have been a hunger-inspired fever dream: 63% These are the notes, verbatim: “I don't know if they're going for the whole fish & chip meal flavour or just "tartare" (tartare or tartar?) flavour. Wait, if this is "fish tartare" isn't that basically sushi? If it's “fish tartar” then I expect a salt & vinegar with a slight mayo-ny flavour. I am hopeful . . . I do like a good tartar sauce, but it's kind of unfeasible to eat it straight out of the jar/bottle with no accompaniment. (Well, I suppose it is, but my life hasn’t become that desperate. Yet.)
There's no tart to the tartar sauce, which is disappointing but not surprising given Calbee's tendency towards timid flavours. They don't taste fishy, even though "fish products" is part of the ingredient list (I’m a little concerned about "fish products"). They do mostly taste like tartar sauce in a roundabout way. Another ingredient is "flavour enhancer" and these chips need more of that -  unless "flavour enhancer" is something that makes tumors far more likely to occur if ingested in large quantities.”
* I feel compelled to note something that I’m sure only I care about. My last entry was full of verb tense flip-flopping and it’s driving me crazy (though not crazy enough to compel me to edit the entry). This is a result of having six-year-old notes written in the present tense (because I wrote them while eating the snacks and not after the fact). I’m picking one tense and sticking with it, and yes, it’s weird to write about something in the past as if it’s happening right the heck now but . . . . no. I don’t have an excuse. You’ll just have to live with it.

Even wealthy Jews were observed travelling by chauffeur from Fifth Avenue to the Lower East Side to buy odoriferous fermented herring and sauerkraut.
To help immigrants adjust to their new country, Settlement Houses were established. These sometimes included demonstration or model kitchens (often with refrigerators.) These were laboratories of a sort where immigrants might try the newest ideas in household management and nutrition (with controlled conditions and guidance) (Levenstein 1988:104-107; Leavitt 2002:76-82). Not only was the immigrant diet deemed unhealthy and unsanitary but also uneconomical because it was concocted from mixtures of foods purchased from various sources, which ‘required uneconomical expenditures of energy to digest’: ‘one whiff of the pungent air in the tenements or a glance into the stew pots was enough to confirm that the contents must wreak havoc on the human digestive system’ (Levenstein 1988:104). A bland, white-sauced diet with surprisingly large quantities of fresh (presumably chilled) milk was considered superior. What immigrant women living in crowded apartments with no appliances were to do with their new cooking skills was another problem. Many unforeseen consequences resulted from the campaign to sanitize the foods of immigrant Jews. Refrigeration provided the material circumstances for two significant shifts in first- and second-generation American Jewish immigrant eating habits in the first decades of the twentieth century. According to Joselit and Diner, these were the ‘steady irrevocable decline’ of kashrut (observance of the Jewish dietary laws), and the rise of Jewish restaurants and delicatessens and the Jewish predilection for eating-out (oyesessen) (Joselit 1994: 177; Diner 2001: 200). Since neither Joselit nor Diner trace these shifts specifically to refrigeration, it is worth showing how refrigeration in early twentieth-century American food culture shaped American Jewish immigrant food preferences. Refrigeration of meat made it much less expensive and more readily available than it had been in the new immigrants’ countries of origins (Friedberg 2009). For Eastern European Jews, ‘where food was sacred for all, but in which scarcities loomed for most [it] was a rare text – novel, poem, short story, personal memoir – that failed to connect the sanctity of Jewish food to the inequitable distribution of resources’ (Diner 2001: 147). [...] This common conceit of eating holiday foods on weekdays became a reality for new Jewish immigrants that deeply affected their food expectations and preferences. The general accessibility of food outside the home, especially in delicatessens and restaurants, "complicated the meaning of food to people who had once lived with hunger. … By eating foods once the reserve of the Jewish upper classes, they engaged in an act of class reversal. The formerly poor started to eat blintzes, kreplach, kasha-varnitchkes, strudel, noodles, knishes, and most importantly, meat every day. Their once meager cabbage or beet borschts now glistened with fat pieces of meat." (Diner 2001: 179-80) Thus one Romanian Jewish immigrant exclaimed, ‘In New York, every night was Friday, and every day was Saturday, as far as food went’ (Diner 2001: 180). None of this would have been possible without refrigeration in processing, storage and transportation that made meat inexpensive enough to become everyday food. [...] Presumably, it wasn’t the refrigeration per se, but rather the pungent, aromatic spicing of these cold cuts that made them particularly palatable to their Jewish immigrant clientele. While corned beef tended to be flavoured with peppercorns and bay leaves, pastrami possessed a particularly ‘heady mix of spices – including allspice, bay leaves, cinnamon, cloves, coriander, ginger, juniper berries, paprika, pepper, and garlic’ (Marks 210: 450). Jewish immigrants’ taste for these spicy, pickled, smoky flavours typical of deli and restaurant food was noted both in the fond reminiscences of their consumers and in the criticisms of well-intentioned nutritionists who sought to ‘cure’ them of these unhealthy preferences (Diner 2001: 214-19). So on the one hand, we have Alfred Kazin remembering the delicatessen food in his Brownsville neighbourhood as ‘our greatest delight in all seasons ...hot spiced corned beef, pastrami, rolled beef, hard salami, soft salami, chicken salami, bologna, frankfurter “specials” and the thinner wrinkled hot dogs always taken with mustard’ (Diner 2001: 201). On the other hand, we have Jewish nutritionists in the home economics movement, like Mary L. Schapiro, identifying ‘high seasoning’ as one of the major ‘Jewish Dietary Problems’. She observes ‘the limitations of the diet, when unchanged by instruction, are evident. It is inadequately balanced, over-rich, and over-seasoned’ (Schapiro 1919). Yet the fact that Mary Schapiro, S. Etta Sadow and other Jewish women themselves embraced ‘American nutrition culture’ suggests the relations between new Jewish immigrants and the home economics was not as one-sided as it may have first appeared. Indeed Jewish nutritionists like Schapiro and Sadow played an important role explaining Jewish foodways to their Gentile colleagues, and advocated accommodations to Jewish kosher rules (like respecting the prohibitions against pork and mixing milk and meat) and tastes for pickles and highly seasoned food over fresh vegetables, in order to win over their Jewish clients to adopt what contemporary science viewed as more nutritional and hygienic diets (Diner 2001: 214-219). Ultimately, the home economists successfully persuaded many Jewish immigrants to change their diets, ironically at the cost of the very kosher rules for which they urged respect. The ‘steady irrevocable decline’ of kashrut in this period was made possible by the home economics movement and Jewish  deli/restaurant culture, both dependent on refrigeration technology. First, easy access to inexpensive meat enticed many Eastern European Jews to America, and many of those immigrants were already less observant than those who remained (Diner 2001: 158-77). Second, the autonomy of ‘rational consumption’ advocated by the home economists appealed to Jewish women. 'Rational consumption’ that ‘embraced the values of sanitation, health, cleanliness, economy, and efficiency [were] hallmarks of new identity, secure points of reference through which to demonstrate that they belonged to this social group’ of ‘modern American homemakers’ (Goldstein 2012: 13). Kashrut often opposed these values, like making milk part of every meal (especially children’s), storing it next to meat in one’s home refrigerator or purchasing meat economically (Schapiro 1919; Goldstein 2012: 126). Jewish women organized protests against kosher meat’s high cost (Diner 2001: 206-207). Dr Noah Aronstam’s defence of kashrut on microbiological grounds acknowledges the adoption of home economical values by Jewish homemakers. Jewish women’s insecurity about home-cooking may also have weakened attachment to old kosher ways. A running joke in the Jewish community was that Jewish men deserted their wives because of bad cooking (Diner 2001: 215). In any case, home economics culture empowered Jewish women to make decisions about diet traditionally made by male Jewish authorities. Finally the options the new Jewish delicatessen/restaurant culture offered Jews to eat out (oyesessen) resulted in new ways to express their American Jewish identity: ‘selectively treyf’ and ‘selectively kosher’.

Danny knew his family’s morning ritual was unusual, to say the least.
Jordan was in charge of making the breakfast, which usually consisted of bagels, scrambled eggs, or silver-dollar pancakes— quick meals that could be made in large quantities to feed all of them in a timely manner— while his parents got ready for work. Calvin and Adrian would help Wesley and Lucina get ready for school, and finally himself and Sonja would get everyone’s various bags and backpacks in order.
They would sit down at the large, circular dining table in no particular order, although Lucina usually preferred to be by her youngest. Aside from their parents, Wesley was her favorite, likely because they were closer to the same age.
His mother, Debra Harrison, swooped into the kitchen just in time to hold a thick hand towel over Lucina’s mouth as she burped. The hand towel was charred when she pulled it away and she sighed, throwing it in the trash. “Lulu, darling, try not to burp at the dining table. I don’t want it to catch fire again.”
“Sorry, Mom!” she said before scarfing down her scrambled eggs. Jordan had made Lucina’s toast custom, and it was nearly black, just the way his youngest sibling liked it.
“West, you know you’ll be having to watch out over the next couple days,” his father, Gabriel, said as he looked up from his phone where he was reading about the moon phases. “It says that a full moon is expected on the 22nd.”
“I know, Dad! I’ve been keeping track on my calendar. I know I forgot last time, but I have been!”
“I believe you. I just don’t want you accidentally snapping at your teacher’s arm again when you get an unexpected feral streak.”
Wesley’s dark skin darkened further as he blushed, embarrassed. “It was one time,” he mumbled over his apple juice. “Besides, she’s a werewolf too, she understood why it happened.”
“Danny, did you really have to bring a rabbit foot to the breakfast table?” Sonja said, her lip curling up in disgust as she stared at the small bottle that did, indeed, hold a rabbit’s foot.
He frowned, swiping it closer to his plate. “I have to keep watch on it. I don’t want it to disintegrate. I mixed it with a very powerful—”
“Dude, literally no one understands your witch stuff here.”
“Yeah, and no one understands your rapping either but you still do it.”
“Hey, I do it for a reason!”
“Cause you suck at singing.”
“I’m sure I could charm you into a trance with one of my raps if I tried!”
Danny wrapped his hand around one of the rock pendants that hung on various chains around his neck and felt a stinging sensation in his shoulder where his mom had smacked him.
“No curses at the table. You know that rule.”
“No raps at the table either!” Gabriel said, looking at Sonja. “Honestly, you two are almost the oldest, don’t act younger than the others.”
“Dad you’re forgetting about Jordan again.”
Gabriel looked appalled and glanced over to their adopted daughter who grinned and waved before saying, “I am not forgetting about her! … Jordan, how old are you again?”
Jordan laughed, “I’m 20, Dad. Same as Sonja.”
“Right, right.”
“Um… don’t we have to be leaving?” Wesley said, looking at the clock. It was nearly time for him and Lucina to be at school, and Jordan, Sonja, and Danny had to be at their first morning class right after.
“I’ll take you two,” Adrian volunteered, getting up from the dining table. Her hooves clicked softly on the floor as she began to gather up the plates and bring them to the kitchen. Calvin stood and helped her, both of them disappearing into the kitchen after taking all the plates.
“Alright Lulu, remember—”
“I know, Mom! Don’t breathe too hard on everyone else, try not to cough too much, and be careful with my antlers around my classmates, we’ve been doing this for months!”
Debra smiled and picked Lucina up out of her chair, hugging her close. “I know, it’s just hard to believe my baby’s already growing up. I feel like it was just yesterday you were setting fire to your diapers.” She paused before shuddering at the thought. “Never expected to get a dragon for a child.”
“Should have told Grandma not to be half dragon then!”
“More like should have tried harder to not be human myself. My genetics didn’t expect to have all you supernatural children.”
“That should still be placed on the grandparents,” Danny said. Their grandparents were a mess of hybrids, and although their parents had come out not manifesting any powers, that didn’t mean the same for their children or, in their dad’s case, his siblings.
“Alright, backpacks!” Sonja called out. She had left the kitchen and gone to the door, where hooked held everyone’s respective belongings. “Lulu and West, you’re up first.”
They bounded over, grabbing their backpacks— Wesley’s was blue while Lucina’s was green— and Sonja tossed Danny’s and Jordan’s to them. “Adrian, Calvin, do you need anything today?”
Adrian’s horn showed out of the kitchen first, followed by her pink hair, lighter than Jordan’s was. “I’m okay! I’m just gonna drop them off and come back home.”
“I’m goin’ with Adri, but I’ll be headed out soon after I get back. Have you seen my headband?” Calvin asked. Sonja threw one of his headbands— dark red which he claimed went with his ginger hair— at him which he caught and slid on.
“Don’t lose that one, you’re starting to run out.”
“Can’t blame me if they don’t fit on me as a cat.”
“Yeah, I kinda can, you’re the one who shifts with them on.”
Calvin shrugged and walked out the door with Adrian, Lucina, and Wesley, grabbing the keys on the way.
“Alright, bye Mom, bye Dad!” Jordan called to their parents. “Have a good day at work!”
The trio of Danny, Sonja, and Jordan left and went to their own car to drive to the nearby university.
Yes, there was no question that their morning ritual was a bit unusual and involved a bit more fire and magic than non supernatural families would have. But Danny still knew that he wouldn’t trade it for anything.

January/February 2020 – The Great British Chefs Cookbook Club
As if I don’t have enough to do, I’ve recently allowed myself to be sucked into a rather fun group on Facebook (I know, I know…), the Great British Chefs Cookbook Club. The idea of this is that every month a cookbook by a British chef is chosen as the book of the month, then everyone who wants to buys/borrows a copy and sets about cooking whatever takes their fancy from the book, before posting about the recipe, usually with photos.
There have now (not including March 2020) been 24 books, but I only started to join in in January this year, so I have no opinions on 22 of them as yet. There is a throwback Thursday where you can cook from/post about previous books, but I’m not going to buy them just for that, and I may well not buy every book on the grounds that a) I have more than enough cookbooks, and b) I’m not a baker! The two I have used are Wok On by Ching-He Huang, and Fire Islands by Eleanor Ford. So how did that go? Well, it was a somewhat mixed bag, it’s fair to say.
I’ll take “Wok On” first. It was a winner for the UK in the World Gourmand Cookbook Awards 2020 in the Easy Recipes category and does what it says on the tin. And what it says on the tin is: “Perfect for sautéing, braising, frying and steaming, cooking with a wok is a way of life all over Asia. In Wok On, bestselling author Ching-He Huang celebrates the huge versatility of this magical 2,000-year-old cooking pot with a modern collection of recipes that are simple enough for every day as well as every cook.
Featuring dishes from across Asia, including Taiwan, Hong Kong, Malaysia and Macau, almost every recipe can be made in 30 minutes or less and has been created with nutrition, taste and affordability in mind. Many are suitable for those with gluten and dairy allergies, and because Asian food typically includes lots of vegetables, many are also vegetarian or vegan too.”
So what did I make of it? On the plus side, it has some incredibly easy recipes that can be flung together in double quick time with minimal prep and one pan, usually a wok, but on the negative side, you may need to make quite drastic cuts to the amount of soy sauce used, unless that is you want to only be able to taste salt. It’s an award winning book and there are certainly some very appealing recipes in there that I have still to try, but I will be cautious about the seasoning after my initial experiences.
I discovered this issue with the first thing I tried to cook, which was Macanese Rice (with Portuguese Chouriço, Baby Scallops and Coriander). I went for that because, as some of you will know, I have a history with Macau going back to 2001, and the idea of this dish was too much to resist. I couldn’t get the correct chourico and had to settle for a Spanish chorizo instead, which I find to be slightly less intense and definitely less meaty than the Portuguese variety, but beggars can’t be choosers and out here in the sticks you sometime have to settle for what you can get. With the correct seasoning, it would have been very tasty indeed, but instead it left us in need of water, lots of water… I suggest reducing the amount of soy sauce used by half.
Another dish that suffered from too much soy was the Boozy Drunken Prawns, and again, it would probably have been fine with less soy.
By the third dish I’d decided the fault was either with the book or the brand of soy sauce I was using and not with me! As a result, the Chunky Black Pepper Honey Beef (which became venison because that was what I had to hand) was fabulous, because I only used half the soy sauce that the recipe suggested. The result had just the right amount of saltiness but you could also taste the other ingredients!
Chunky Black Pepper Honey Beef
Serves: 4 Time: 15 minutes preparation. 5 minutes cooking
Ingredients:
500g sirloin steak, cut into 5mm thick cubes
Pinch of salt
Pinch of cracked black pepper
1 tablespoon tamari or low sodium soy sauce (I recommend the low sodium variety use half the quantity)
Small handful of coriander leaves for garnish
For the stir fry:
1 tablespoon rapeseed oil
1 garlic clove, whole, peeled and crushed
2 large white onions, cut into 5mm chunks
1 tablespoon Shaoshing rice wine (or dry sherry)
2 red peppers, deseeded and cut into 5mm chunks
For the sauce:
100 mls cold chicken stock
1 tablespoon oyster sauce
1 tablespoon tamari or low sodium light soy sauce
1 teaspoon dark soy sauce
4 tablespoons runny honey
1/2 teaspoon cracked black pepper
1 tablespoon cornflour
Method:
Put the beef in a bowl with the salt, black pepper and soy sauce and mix well.
Put all the ingredients for the sauce into a small jug or bowl and mix well.
Heat your wok over a high heat until smoking then add the rapeseed oil and swirl it around. Add the garlic and cook for a few seconds, then add the onions and stir fry them until they are translucent.
Add the beef and sear on one side for 20 seconds, then turn them over and cook to your liking (medium is probably best). Season with the rice wine or sherry.
Add the red peppers and toss for 30 seconds or until slightly softened.
Remove the beef, onions and peppers from the wok and set aside on a plate.
Add the sauce to the wok and cook it until it reduces and becomes sticky.
Return the beef, peppers and onions to the wok and toss it with the sauce.
Garnish with coriander and serve it with jasmine rice and Garlic Wok Tossed Baby Pak Choi.
Far more successful was the fabulous “Fire Islands”, which has a catch-all description of “recipes from Indonesia”, and which became an even better experience when it became clear that the author, Eleanor Ford, was happy to get involved and comment on what people had done, and how it had gone. She even agreed to a live Q&A session on Facebook where she proved most engaging. As a result I intend to lay hands on her other book, “Samarkand”, as well, especially as there is a plov recipe in it! As for “Fire Islands”, it’s already won two Gourmand World Cookbook Awards in 2020 (in the categories International and Spices), plus it won in its category (Food and Travel) in the Edward Stanford Travel Writing Awards for 2020 as I type this. I think those awards are thoroughly well deserved.
But first, the blurb: “Steep verdant rice terraces, ancient rainforest and fire-breathing volcanoes create the landscape of the world’s largest archipelago. Indonesia is a travellers’ paradise, with cuisine as vibrant and thrilling as its scenery. For these are the original spice islands, whose fertile volcanic soil grows ingredients that once changed the flavour of food across the world. On today’s noisy streets, chilli-spiked sambals are served with rich noodle broths, and salty peanut sauce sweetens chargrilled sate sticks. In homes, shared feasts of creamy coconut curries, stir-fries and spiced rice are fragrant with ginger, tamarind, lemongrass and lime. The air hangs with the tang of chilli and burnt sugar, citrus and spice. Eleanor Ford gives a personal, intimate portrait of a country and its cooking, the recipes exotic yet achievable, and the food brought to life by stunning photography.”
This time I got started early in the month, when I’d planned a few of the dishes for Sunday dinner (and the leftovers to be used up during the following week). An unexpected visitor meant it turned into a late-ish lunch instead. I had realised that I had all sorts of things that were suitable for use with these recipes, and thus we ended up with a veritable feast.
There was an excellent, tangy Sweet and Spicy Mushroom Tongseng, the luxuriously creamy Potato Tuturuga, a melting Sumatran Lamb Korma, with Golden Lace Pancakes, and portions of Spice Rice to mop it all up with. Our guest went back in for seconds of everything so I’m taking that as a vote of confidence! There certainly weren’t as many leftovers as I’d been counting on once we all slumped on the sofas to nurse our food babies. The only thing I didn’t succeed with were the pancakes, and that was because people were getting very hungry so I didn’t have time to mess about making them thin and lacy. I just needed to get food in front of them as soon as possible.
Sweet & Spicy Mushroom Tongseng
Serves: 4 Time: 20 minutes
Ingredients
2 lime leaves
1 lemongrass stick, trimmed and bruised
2 cm galangal, skin scrubbed, bruised
1 tablespoon oil
500 g (1 lb 2 oz) oyster mushrooms
3 tablespoons thick coconut milk
1 1/2 teaspoons dark palm sugar (gula jawa), shaved
2 teaspoons kecap manis
1 1/2 large red chillies, seeded and sliced
1 ripe tomato, cut in wedges
For the Bumbu spice paste:
1/2 teaspoon coriander seeds
4 peppercorns
1 small red Asian shallot, roughly chopped
2 garlic cloves, roughly chopped
1 candlenut or 2 blanched almonds
1 cm ginger, peeled
1 cm turmeric, peeled, or 1/4 teaspoon ground turmeric
Method:
Start by making the bumbu spice paste. For this small quantity I find this easiest to do with a pestle and mortar. Start with the coriander seeds and peppercorns, then add all the other ingredients and grind to a paste.
Put the bumbu in a large frying pan with the lime leaves, lemongrass and galangal. Drizzle in the oil and stir-fry until fragrant. Loosen the paste with a ladleful of water.
Add the mushrooms and turn to coat in the spices. Add the coconut milk, palm sugar and a good pinch of salt. Cook for 5–10 minutes. The mushrooms will release liquid as they fry. Towards the end of cooking, stir through the kecap manis, sliced chillies and tomato. Taste for seasoning.
Another night saw me tackle the equally delicious Javanese Sea Bream and Spinach, which became Monkfish, Water Chestnuts and Spinach because there was stuff which needed using up before I could even consider shopping for new ingredients. The Sweetcorn Rice went with it brilliantly and my version of Vegetable Urap with Dessicated Coconut was good too with all sorts of things (sausages, steak) as well as the fabulous fish dish. Again, I made changes to the recipe, and used yellow peppers and leeks in place of the edible fern tips or seasonal greens, the fine green beans and the beansprouts because that’s what I had to hand.
Vegetable Urap with Fresh Spiced Coconut
Serves: 2-4
Time: Varies according to your choice of vegetables!
Ingredients:
140 g (5 oz) edible fern tips or seasonal greens, roughly chopped
100 g (3. oz) fine green beans, cut in thirds
100 g (3. oz) beansprouts
1 tablespoon coconut oil
6 small red Asian shallots, sliced
4 garlic cloves, sliced
1 large red chilli, seeded and sliced
100 g (3. oz) grated fresh coconut or 80 g (1 cup) desiccated coconut
100 g (3. oz) cooked black-eyed beans (optional)
juice of a kaffir lime or lime
1 tablespoon crisp-fried shallots
Method:
Bring a large pan of salted water to the boil and add the fern tips and green beans. Cook for 2 minutes or until just tender. Add the beansprouts for the last 20 seconds of cooking. Drain and leave to cool. If you have used greens that retain a lot of water, gently squeeze them dry.
Set a wok or frying pan over a medium heat and add the coconut oil followed by the shallot and garlic. Cook, stirring frequently, until pale golden, then add the chilli and cook to just softened. Lower the heat and add the coconut along with a good pinch of salt. If using desiccated coconut, also add a splash of water to soften and help the flavours meld. Cook just for a minute, then remove from the heat and leave to cool.
Toss the vegetables and black-eyed beans (if using) with the spiced coconut and lime juice and taste for seasoning. Scatter over the crisp-fried shallots.
