Well dear anon I think the answer to this is probably all of them.
Genesis: Gen is extremely sensitive and emotional insomuch as he is sensitive to rejection and easily triggered by feelings of inadequacy. I think Gen probably gets triggered emotionally by quite a lot. Anytime his intellect or physical ability is called into question Genesis immediately takes a defensive position.
This mostly comes from being such an emotionally disregulated child. His parents were only ever interested in what Genesis could provide for them in terms of his inventions (which I believe there probably more than just the Apple juice, it’s just that, that is what he’s most famous for.) they didn’t really have time for his outburst and I think that even if Genesis’s Nanny’s were precious too him he still craved his mother and fathers attention.
As an adult he has lost interest in trying to get them to pay attention to him as a person, but his sensitivity to being ignored or rejected rears it’s ugly head in a reminder that he will always be that lonely little boy, who talked too much yet still couldn’t get his mama to look at him.
Angeal: I think Angeal used to be quite a sensitive kiddie. He was certainly the most likely to cry over kittens and movies. The difference is, Angeal was taught how to regulate his emotions. The times when Angeal found himself overwhelmed I believe his father would talk him through it. Angeals father is too big of a crux in Angeals story for me to believe he wasn’t an emotionally open man. I think Angeal learned a lot about being emotionally open and empathetic from his father.
The trouble comes, however, when his father dies. I think Angeal relied a lot on his father to coach him through his more disregulated moments. I think none of the firsts actually have a natural ability to regulate themselves because of the mako and Angeal relied upon his father to be his regulation.
Angeal knows it’s okay to cry, he knows fondness is an okay emotion; that love is what drives us. But his fathers death makes Angeal close off to what he’s been taught because it hurts. In the end Angeals sensitivity and emotional intelligence is what kills him.
He feels too much. Too much honour, too much guilt, too much anger and sorrow.
Sephiroth: arguably Sephiroth is the MOST sensitive of the three. You don’t burn down an entire village and commit mass genocide after finding out you’ve been lied too your entire life because your not emotional. Sephiroth has always been sensitive, he just has a screwy way of showing it.
He’s closed of and snappish. He locks himself away and stops eating. He shuts down. Refuses to verbally respond. Sephiroth emotional is the worst version of himself. And -like Genesis- it’s absolutely his parents fault. Hojo is a bastard of the highest order. In fact bastard isn’t a strong enough word but I don’t wish to be shadow banned. The man abused Sephiroth his entire life, he tortured him into subservience and the people Seph learned how to emote from are not exactly masters in their field.
We know something’s about to go down with Glen. Genesis seems to think hitting people with fire spells is an acceptable way to show affection and Angeals so busy obsessing over honour he confuses friendship with command. Sephiroth has zero healthy remodels for this kind of thing.
The man has abandonment issues, he’s isolated and afraid. Sephiroth is absolutely emotionally unstable and I’d argue he has always been so. I believe it is Shirley Jackson who said “no living organism can continue for long to exist sanely under conditions of absolute reality.” And when your reality is like Sephiroth’s it’s a wonder you haven’t gone mad sooner.

Gaia never mentioned she intended to have Cloud keep Jenova's telepathic connection to those with J-Cells when she sent him back in time.
Three things he learnt fast before he was able to control it.
Angeal has a far dirtier mind then his outward behaviour suggests.
Genesis actually loves a great range of books and poetry, he just loves constantly quoting Loveless specifically to bring out THAT tic in both Angeal and Sephiroth's jawline.
And Sephiroth has a rolling cinema of his favourite Hojo Death Fantasies to get him through the stacks of paperwork Lazard makes him do.

After it all falls apart and they realize the truth, the three winged 1st class SOLDIER's are separated from the Lifestream by Gaia and safely stored in Crystalized Mako awaiting the day they can redeem themselves if the new planet comes under threat when the Lifestream finds a new home.
Thousands of years later, a much younger, injured Zack pulls his little brother Cloud with him to take shelter in the forbidden caves when their home comes under attack from unknown forces.
He doesn't expect the crystal he's standing next to to crack open, nor does he understand the grief-filled eyes that are turned towards him.
but the other dark-haired man takes down what had followed him in, and protects him and his brother until they stop coming.
Now they're watching him break two men free of the other crystals.
Zack's new life has taken a turn for the strange... yet oddly familiar.

Sephiroth had more in common with Jenova than people thought.
His own cells, his own reunion, adapted from Jenova by his human parents DNA.
The parts of Sephiroth that was still sane, that still cared for his SOLDIER's... For Angeal... Zack... even for Genesis in his own insane state found a home...In the one person who had adapted to his S-Cells so easily.
Cloud Strife.
Now if only Jenova's Mad Son would stop trying to kill them.

Why people think Genesis decided Angeal and he needed to make friends with Sephiroth: Deep, unbridled pride.
Why Genesis says he actually made friends with Sephiroth: "The kid literally ate a wax replica of a Banora Apple, and the labs food service he usually had was so tasteless, he thought it was the real thing and bloody finished it...As the son of a Banora Apple Orchid owner... I refused to let that lie."

Angeal and Zack walk in to the amusing image of both men sulking while Genesis sits smugly between them, The Loveless Musical soundtrack blaring.

An old post of mine.
But recently watching replays of Final Fantasy 7 including Crisis Core.
Just...
Angeal and Genesis don't run off.
Zack is watching his mentor as he's trying to dry the damn wings off after a shower.
And Angeal is trying SO hard to be dignified, but he's just going... spinneyspinneyspinney because he can't FUCKING reach.
Meanwhile Genesis is just dramatically laying facedown on the floor... DEMANDING somebody run a hair dryer over his wing FOR him.
Cloud has tried to assist him a few times, but Zack keeps snitching the dryer out of the timid little cadets hands

Person A: *Has recently grown a pair of wings*
Person B: “You look majestic.”
Person A: “I just got out of the shower, then spent nearly an hour spinning in one place, trying to pat the damn things dry with a towel. I looked like a dog chasing it’s tail.”
