Salted caramel and bourbon tart in a sablée crust, served with banana and passion fruit sorbet. Gosh, this came out so much better than I expected. So good. I’ve been trying to up my tart game. I’m just steadily working on getting that pastry exactly how I want it to be. As with everything, I make it and I take away learnings from it. The sablée pastry is from Michel Roux’s desserts book and is my fave sablée recipe thus far. I used a technique for creating the case so it doesn’t need blind-baking, which I saw @nicolaalamb @thedessertlab.co and @spatuladesserts use. Then, the filling is an adaptation of a recipe by Colin McGurran on @gbchefs and so is the banana and passion fruit sorbet.
