Ingredients: 2 cups heavy cream. 1 cup mascarpone cheese. 1 cup powdered sugar. 1/2 cup brewed espresso, cooled. 1/4 cup coffee liqueur. 1/2 cup cocoa powder. 1 teaspoon vanilla extract. 1 cup chocolate shavings. 24 ladyfinger cookies.
Instructions: In a large bowl, whip the heavy cream until stiff peaks form. In another bowl, combine mascarpone cheese, powdered sugar, espresso, coffee liqueur, cocoa powder, and vanilla extract. Mix until smooth. Gently fold the whipped cream into the mascarpone mixture until well combined. Layer the bottom of serving glasses with ladyfinger cookies. Spoon a layer of the mascarpone mixture over the cookies. Repeat the layers until the glasses are filled, finishing with a layer of mascarpone mixture on top. Sprinkle chocolate shavings over each parfait. Cover the glasses with plastic wrap and freeze for at least 4 hours or overnight. Before serving, let the parfaits sit at room temperature for a few minutes to soften slightly. Garnish with additional chocolate shavings if desired. Whisk constantly until the mixture thickens and doubles in volume, about 5-7 minutes. Remove from heat and let cool to room temperature. In a separate bowl, whip the heavy cream until soft peaks form. Fold the whipped cream into the cooled egg mixture until well combined. Fold in the chopped toasted pecans and vanilla extract.
