Part IV: How to make coconut milk at home. OK this is the last step in making the coconut milk. Once you have mixed the coconut meat and water together for 2 to 3 minutes on high in your vitamix, you simply strain the coconut mixture into a cheesecloth and strainer together. Then with your hands just strain out the coconut milk. Now one question comes mind: What to do with the desiccated dry coconut pulp that's left at the end? I guess I could just throw it out.I have been told that this contains no nutritional value. However I don't believe that so I actually use this dried up coconut in my everyday cooking - in a myriad of ways: 1. Mix it in oatmeal. 2. Add it to my morning cereal. 3. Add it to your morning juice. 4. Make coconut flour. 5. add it to any dough you are making such for roti or pizza 6. Day 9

We were quick this morning and got outside before 8! We went for a visit to Magic Alambic, a local rum distillery. Contrary to our expectations the staff was quite busy already. Turns out they have brunch on Sundays and it was fully booked so they didn’t have time to show us around.

We tasted the rum alone, which was pretty good and neutral (coming from someone who knows nothing about rum), then with some of their home made brown sugar lemonade, a combination which tasted incredibly good.

At Boy’s Organic Tea & Coffee we then found our first real cups of coffee since we got here. At the neighboring restaurant, the waitress borrowed Adrian for about ten minutes, brought him to meet the whole staff! Moments like this seem common in Thailand and are pure gold for parents with babies as it gives us a chance to eat in peace for once.

On our way back we stopped by the local stands to pick up some fruits, sticky rice, veggies and turmeric. With the powers of Google Translate, Irena asked if they had any fresh coconut milk. An old lady offered to show the way some hundred meters away to a place where it is being locally produced. Irena was amazed at how hygienically and freshly it is produced.

At home we felt ready for the sticky rice. It’s like a thai version of the Swedish ris a la malta or Danish ris a la mande, only made a little differently and with coconut milk instead of whipped cream. On top you put fresh mango. We had tried this dish in restaurants before and were underwhelmed but this one was so good. I (Björn) can honestly say it’s one of my all-time favorite desserts.

As Adrian fell asleep, Björn snuck out for a thai massage. We have now found our go-to masseuse, an older woman with a place right on the beach with quite the view. The massage felt good and his back and shoulder are better.

For dinner Irena cooked the new veggies with some of our now quite rich range of herbs and fresh spices and the fresh coconut milk. The food was very munchy!

Irena caught the sunset with a walk to the local beach while Björn was bathing in the pool with the kids. We put them to bed early and they were asleep around 20.30.

Part III: How to make coconut milk at home. OK so here is the third step in making coconut milk at home and this happens after you have taken out the coconut meat from the fresh coconut. check out my other videos on Instagram to see how to open up a coconut and take out the meet. Take half of the coconut meat and add 2 cups of water. Using the vita mix blend together the water and the coconut meat on high for 1 to 2 minutes.
