Hey!! Do you happen to have a good challah recipe you can share? I bake a lot but have avoided most breads because a) my house is damp, and b) they can smell my fear. I googled it but tbh don't trust the results from goyim 😂 (they can probably make it just fine, I'm just being judgy)
I do! I use the Evelyn Rose recipe :)
Ingredients:
1 1/2 lbs bread flour (you cannot use plain flour for this)
2 oz sugar (sub 2 tbsp honey from rosh hashannah to YK)
1/2 oz salt
1 tbsp instant yeast
3 tbsp neutral oil (vegetable/sunflower)
2 eggs
10-11 floz water (10 if eggs are large, 11 if medium/small)
optional extra egg for egg wash.
Mix all ingredients together and knead until springy (around 10 minutes by hand, 5 minutes in a mixer with a dough hook). Form the dough into a ball shape, place back into the original mixing bowl. Place a plastic bag over the top of the bowl to stop the dough drying out.
Prove until doubled in size - I put it in the airing cupboard and turn on the hot water boiler in there to warm it up and it takes around 3-4 hours in winter but can be as fast as 1-2 hours in summer!
Shape into braids or rounds for the chugim. Place on a lined baking sheet. Cover again (I use a clean drying up cloth and then put it in the turned off oven to prevent any airflow that would dry it out and stop the rise properly) and prove until increased in side but at least 50% (it can double again if the yeast is really going for it).
Preheat the oven to gas mark 6 (200C/400F). Beat the egg for the egg wash and brush it all over the now proved challah. Bake for 24 minutes (turning half way through) for regular challah or 40 minutes (turning half way through) for round challah for RH up to YK.
Once baked, leave to cool for 5 minutes on the tray for the gluten to set a little before removing from the baking sheet and placing on a cooling rack to cool fully.
Eat the entire thing. Eat the entire thing alone. You will certainly not regret eating an entire challah in one sitting.
