The menu is a tapestry of bold flavors playing between nostalgic Filipino cuisine and classic Spanish dishes.

Starters: House-baked bread, a tasty chilled tomato soup called Salmorejo, and a bowl of game-changing Chicharon del Veedor.

Tapas: Lengua con Salsa de Pimiento Verde (braised beef tongue with green pepper sauce on top of fried potatoes)

Tapas: The dangerously addictive Croquetas de Chorizo (fried potato croquettes with chorizo and served with bechamel)

Tapas: Grilled Foie Gras with Pedro Ximenez over Crostini. It melts in your mouth like luscious butter.

Main Course: Grilled Chicken Majada with Chimichurri and Pollo Ma Brasa con Salsa Masada

Sides: The grilled meats were paired with the best fried rice we’ve ever tasted. The rice was sautéed with garlic and the fat rendered from their Chicharron del Veedor. Yes, it was cooked in chicharron fat because they���re geniuses that way.

Etag is one of the best things in Sagada. Etag is pork slabs cured with salt and then smoked for a few days.
