imo Lucy is likely being truthful to Mina here.

She is still in Whitby, in this letter. After Dracula had left. Remember, Mina left her while Lucy was getting visibly better and better, because Dracula and his boxes had left for London days before.

She even tells Mina that the air here (Whitby) would be beneficial for Jonathan.

The issue is that Stoker most likely mislabeled the date, like he's done before this month with Seward's missing week. It should have been sent to Mina earlier, before Lucy left Whitby, which she has since her last journal entry stating her declining health and asking her mother to sleep with her.

And yes the "getting fat" comment is positive. It's not unusual either, actually! Mina has called Lucy fatter before to indicate her looking better.
