I was once told by a man I met in a grocery store that the best way to pan fry chicken was to: 1) "Let it the hell alone. Once it's in the pan stop fussing with it" 2) "Use a wire rack to drain it. Don't be stupid and use paper towels. You'll have nekkid chicken once it touches that paper towel" So to avoid "nekkid chicken" I double coat it (flour..egg..flour & panko..egg). Put it in a skillet and don't mess with it and drain it on a wire rack. Perfect crispy double crunch chicken.
